AUNT KATHY'S OVEN BURGERS
Gooey melted cheese, savory special sauce... what could be better?!

- 1. Combine ground sirloin and montreal steak seasoning in large bowl, fold lightly. Do not overwork meat. **optional additions 1 large clove garlic minced 3T bacon bits
- 2. Fry burgers on stovetop or grill until they are light pink in the middle not quite fully cooked. they will continue to cook in the oven.
- 3. Add sauce to top and bottom of burger buns, add a slice of american cheese on one side of bun and a slice of swiss cheese on the other side then place cooked sirloin burger on bun and top with a slice of onion & jalepeno (optional).
- 4. Wrap each burger in foil and bake in oven at 350 degrees for 12-15 minutes. Just to melt cheese & cook onion slightly. I serve these with a cold potato salad or pasta salad and veggies or chips.
BLACKSTONE CLASSIC SMASH BURGERS
The appeal of a smash burger is the way the craggy edges crisp and how quickly it cooks. For our double-patty version made on a Blackstone ® flat-top style grill, we tried several different techniques. While we loved pressing the patties into onions on the griddle, it left less surface area for the meat to caramelize. Our fix was to split the difference by pressing one patty into golden onions and cook one patty plain for maximum browning and crispiness. The result is the best of both worlds: a burger loaded with flavor and texture. We would not want it any other way.

- Set 2 burners to high and 2 burners to medium on a 36-inch Blackstone® Griddle Cooking Station and preheat for 10 minutes.
- Meanwhile, stir the ketchup, mayonnaise, mustard and chopped pickle in a small bowl and set aside. Stir the garlic powder, onion powder, 2 teaspoons salt and 1/4 teaspoon pepper in a separate small bowl. Set aside.
- Loosely form the beef into 8 balls; set aside. Working in batches, lightly brush butter onto the medium-heat side of the griddle and toast the buns cut-side down until lightly browned, about 5 minutes. Flip and keep warm while you cook the burgers.
- Brush butter onto the high-heat side of the griddle and add the onions. Cook, tossing with a metal spatula occasionally, until starting to brown slightly, about 3 minutes. Divide the onions into 4 equal piles, spacing them a couple inches apart. Top each pile with 1 ball of beef. Smash each ball with the back of a spatula or a burger press until the patty is about 1/4 inch thick. Repeat with the remining 4 beef balls directly on the griddle. Season the patties with half the seasoning mixture and continue cooking, undisturbed, until well browned, 1 1/2 to 2 minutes. Flip the patties, sprinkle with the remaining seasoning mixture and top each plain patty with 1 cheese slice. Continue cooking until the cheese is melted around the edges and the bottoms of the patties are browned, about 1 more minute.
- Spread the ketchup mixture on the bun tops. Fill each bun with 1 onion patty, 1 plain patty, 1 tomato slice, 1 lettuce leaf and some of the onions, if any, that were left on the griddle.
MOP SAUSAGE BURGERS

- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Saute mushrooms, onions and peppers until tender, 7 to 8 minutes then season with salt and pepper. Deglaze the pan with stock.
- Combine the sausage and sirloin with grill seasoning, garlic and parsley. Mix and form 4 patties thinner at the center and thicker at the edges for even cooking and to keep burgers from bulging. Heat cast iron or nonstick skillet with 1 tablespoon olive oil over medium-high heat, cook patties 12 minutes turning once and top with mushrooms, onions and peppers and 2 slices of cheese. Turn heat off and cover pan with foil to melt cheese, 2 minutes. Pile on buns and serve.

- Preheat a grill or a griddle. Divide the ground beef to 4 (4-ounce) patties. Each portion of the beef should be hand patted. Cook on the grill or griddle until the meat is done to your liking. JUICYBURGER
There was a drive-in restaurant in my hometown of Moberly MO in the 50's and 60's. It was called Pig n Bun. They were best known for Juicyburgers which were created by the owner, Albert Patrick. You'll find them similar to Sloppy Joes. This is my mother's copycat recipe that she created. From the kitchen of Wanda Cupp Thornburg, Moberly MO.

Steps:
- Combine first 5 ingredients in skillet. Cover and steam cook on medium heat. Stir frequently so that meat is broken up into small loose pieces. Cook until the meat is no longer pink. Do not overcook the ground beef.
- Drain grease and return meat mixture to skillet. Add catsup and stir well. Simmer on low heat until serving time.
- You can also transfer the meat to a Crock Pot for parties or picnics.
