RUSTIC NUT BARS

My friends love crunching into these chewy, gooey bars that have a crust like shortbread and a wildly nutty topping. -Barbara Driscoll, West Allis, Wisconsin

Number Of Ingredients 16

1 tablespoon plus 3/4 cup cold butter, divided
2-1/3 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
TOPPING:
2/3 cup honey
1/2 cup packed brown sugar
1/4 teaspoon salt
6 tablespoons butter, cubed
2 tablespoons heavy whipping cream
1 cup chopped hazelnuts, toasted
1 cup salted cashews
1 cup pistachios
1 cup salted roasted almonds

Steps:

  • Preheat oven to 375°. Line a 13x9-in. baking pan with foil, letting ends extend over sides by 1 in. Grease foil with 1 tablespoon butter., In a large bowl, whisk flour, sugar, baking powder and salt. Cut in the remaining butter until mixture resembles coarse crumbs. Stir in egg until blended (mixture will be dry). Press firmly onto bottom of prepared pan. , Bake 18-20 minutes or until edges are golden brown. Cool on a wire rack., In a large heavy saucepan, combine honey, brown sugar and salt; bring to a boil over medium heat, stirring frequently to dissolve sugar. Boil 2 minutes without stirring. Stir in butter and cream; return to a boil. Cook and stir 1 minute or until smooth. Remove from heat; stir in nuts. Spread over crust., Bake 15-20 minutes or until topping is bubbly. Cool completely in pan on a wire rack. Lifting with foil, remove from pan. Discard foil; cut into bars.

1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup packed brown sugar
1/4 teaspoon salt
1/2 cup butter or margarine, softened
2 cups salted mixed nuts or peanuts
1 cup butterscotch chips
1/2 cup light corn syrup
2 tablespoons butter or margarine

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, brown sugar and salt. Cut in 1/2 cup butter, using pastry blender or crisscrossing 2 knives, until evenly mixed. Press evenly in bottom of ungreased rectangular pan, 13x9x2 inches. Bake 15 minutes; cool slightly.
  • Cut up any large nuts. Sprinkle nuts evenly over crust. In 1-quart saucepan, heat all remaining ingredients over low heat, stirring occasionally, just until chips are melted. Drizzle butterscotch mixture evenly over nuts. Bake 5 minutes. For bars, cut into 8 rows by 4 rows while warm for easiest cutting.

3/4 cup butter or margarine, softened
1/2 cup packed brown sugar
1/2 teaspoon almond extract
1 1/2 cups Gold Medal™ all-purpose flour
1 cup butter or margarine
1 1/2 cups packed brown sugar
1/4 cup honey
1/4 cup light corn syrup
1/2 teaspoon vanilla
1 cup walnut pieces
1 cup unblanched or blanched whole almonds
1 cup pecan halves

Steps:

  • Heat oven to 350°F. In medium bowl, beat 3/4 cup butter, 1/2 cup brown sugar and the almond extract with electric mixer on medium-low speed until blended. On low speed, beat in flour until soft dough forms. Press dough in bottom of ungreased 13x9-inch pan. Bake 17 to 20 minutes or until golden brown.
  • Meanwhile, in 2-quart saucepan, cook 1 cup butter, 1 1/2 cups brown sugar, the honey, corn syrup and vanilla over medium-high heat 12 to 15 minutes, stirring frequently, until mixture comes to a full rolling boil. Boil 1 to 2 minutes, stirring frequently. Remove from heat.
  • Sprinkle walnuts, almonds and pecans over crust. Pour brown sugar mixture over nuts. Bake 13 to 15 minutes longer or until top of mixture is bubbly. Cool completely, about 1 hour. For bars, cut into 6 rows by 6 rows.

3/4 cup sugar
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine
1 cup butterscotch chips
1/2 cup light corn syrup
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon water
1 (12 ounce) can mixed nuts

Steps:

  • Heat oven to 350. Grease a 9 x 13" pan. Combine flour, sugar and salt; cut in ½ cup butter. Press into prepared pan. Bake at 350 for 10 minutes. Combine butterscotch chips, corn syrup, 2 T butter and water in a medium saucepan; heat and stir over medium heat until mixture is smooth. (I usually just do this in the microwave!) Spread mixture over crust and top with nuts. Bake at 350 for 10 minutes or until bars are bubbling. Cool slightly; cut into bars.

1 (11 ounce) package pie crust mix
3/4 cup packed light brown sugar
3/4 cup dark corn syrup
3 eggs
1/4 cup all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
1 (11 1/2 ounce) can lightly salted roasted mixed nuts
canned vanilla frosting (optional)

Steps:

  • Preheat oven to 450 degrees.
  • Line a 9-inch-square baking pan with enough foil to overhang all sides by 2 inches; coat with cooking spray.
  • Prepare crust mix according to package directions for 2-crust pie.
  • On lightly floured surface roll out dough into 12-inch square. Fit into pan. Bake 10 minutes or until just golden.
  • Reduce oven temperature to 350 degrees.
  • Meanwhile, combine sugar, syrup, eggs, flour, vanilla and salt; stir in nuts. Pour into crust. Bake 30 minutes or until set. Cool on rack 10 minutes. Use foil to lift bars from pan. Cool completely on rack.
  • Refrigerate until cold, about 2 hours.
  • If desired, melt frosting in glass measuring cup in microwave on High (100%) power in 10-second intervals until pourable; drizzle over bars.
  • Cut into squares.

9 ounces butterscotch chips
1/2 cup white corn syrup
1 teaspoon water
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Mix first four ingredients like pie crust.
  • Press into bottom of 9x13 inch pan.
  • Bake at 350 degrees for 10 minutes.
  • Evenly spread mixed nuts over baked crust.
  • Mix together last four ingredients in a saucepan.
  • Heat until mixture melts, stirring constantly.
  • Pour cooked syrup over nuts.
  • Bake 10 more minutes at 350 degrees.

  • In medium bowl, mix flour, brown sugar and salt. Cut in the 1/2 cup butter until evenly mixed. Press evenly in bottom of an ungreased 13" x 9" baking pan. Bake at 350 for 15 minutes; allow to cool slightly.
  • Sprinkle nuts evenly over semi-cooled crust.
  • In 1-quart saucepan, heat all remaining ingredients over low heat, stirring occasionally, just until chips are melted. Drizzle the melted butterscotch mixture evenly over nuts. Bake at 350 for about 5 minutes.
  • For best results, cut into bars while they are still warm.
