MISS AIMEE B'S CHOCOLATE STRAWBERRY PIE
This is an easy, wonderful tasting pie that has excellent presentation. Everyone raves when I make this pie! Miss Aimee B's is a local tea room that serves delicious desserts and this recipe came from one of their cook books. I am posting the recipe as given to me by a friend. I don't make the crust as it describes. Instead, I purchase a ready made oreo pie crust and then there's no baking involved. And it is much easier that way. But this is a delicious pie!!! Just remember that you must chill the filling in the pie crust for at least 8 hours. Just make it the night before, add strawberries and you're done!

Steps:
- Preheat oven to 325 degrees.
- To make crust: combine cookie crumbs, 3 T sugar and melted butter.
- Press onto bottom and sides of a lightly greased 9 inch deep dish pie pan.
- Bake in oven for 10 minutes, cool.
- To make filling: Melt chocolate chips in the top of a double boiler, cool slightly.
- Beat cream cheese until light and fluffy with electric mixer.
- Add brown sugar and vanilla, mixing well.
- Add chocolate to cream cheese mixture, mixing well.
- Fold in the cool whip and mix again.
- Spoon filling into cooled crust (or ready made chocolate crust) and smooth out top.
- Cover tightly and chill at least 8 hours.
- To finish the pie, wash strawberries, pat dry, and cut lenghtwise into 1/8 inch slices.
- Arrange around the outside edge of pie, make a second row, overlapping.
- Continue in this fashion until the entire pie has been covered.
- Heat the 1/4 cup chocolate chips with the paraffin (or without paraffin).
- Drizzle over the strawberries.
- Chill and serve the same day.
1970'S FRENCH STRAWBERRY PIE
My mom used to make this for our family back in '72. I totally loved it then as I do now! Very quick and easy to make! Chill time is 2 hours. My mom used to make homemade pie crust but I always have trouble with mine and I recently found these Keebler Ready Made pie crusts.

Steps:
- Spread cream cheese which has been softened with a little cream on bottom of pie shell.
- Place cut up strawberries on top of cream cheese.
- Place left over fresh strawberries in sauce pan and mash.
- Add sugar and cornstarch.
- Cook for 10 minutes on medium until really thick.
- Cool strawberry mixture. (Make sure its cooled).
- Pour over pie.
- Chill pie for 2 hours.
- Whip whipping cream (I add a couple tablespoons of sugar and some vanilla for extra flavor).
- Spread over top of cooled pie.
- EAT and ENJOY!

MISS AIMEE B'S LEMONADE
This is from a local tea room. This recipe appeared in a newspaper a few years ago. I know it sounds strange but it really is good. I tried it initially because I was intrigued and thought it would be a good summer drink. I was not disappointed. It took some coaxing to get my boyfriend to even try it but he was glad he did.

Steps:
- Wash lemons, cut off ends and quarter. Squeeze juice into a glass bowl.
- In blender, coarsely chop lemons (do not puree). Add chopped lemons to juice. Add sugar, stir well and let sit 30 minutes. Add milk; stir well. Cover; refrigerate several hours (I thought it would curdle and it doesn't).
- Strain mixture. In a glass, combine 1/2 cup lemonade mixture, 1/2 cup club soda and ice. Stir well. Add vodka or gin.

Steps:
- Using an electric mixer on medium speed, beat together chocolate chips, cream cheese, honey and vanilla until fluffy.
- Spread mixture in crumb crust.
- Cover and refrigerate until firm, about 1 to 2 hours.
- Lightly press halved strawberries, cut side down, into top of cream cheese mixture after refrigeration.
- Melt semi-sweet chocolate squares and drizzle before serving.
- Refrigerate pie for up to 4 hours.
- cooking time does not include chilling time.

SECRET CHOCOLATE STRAWBERRY PIE

Steps:
- Reserve 2 cups sliced strawberries. Mash remaining 1 cup sliced strawberries; add enough water to make 2 cups. Stir together sugar and cornstarch in medium saucepan; stir in mashed strawberries. Cook over medium heat, stirring constantly, until mixture comes to a boil; cook and stir 2 minutes. Remove from heat.
- Add gelatin, butter and lemon juice; stir until gelatin is dissolved. Strain mixture; discard seeds,. Refrigerate until partially set.
- Meanwhile, place chocolate chips and 3 tablespoons whipping cream in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir.
- If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Spread chocolate mixture onto bottom of prepared crust; refrigerate 30 minutes or until firm.
- Beat cream cheese and remaining 1 tablespoon whipping cream in small bowl until smooth; spread over chocolate layer. Refrigerate filled crust while gelatin mixture is cooling. When gelatin mixture is partially set, fold in reserved sliced strawberries; spoon mixture over cream cheese layer.
- Cover; refrigerate several hours or until firm. Just before serving, garnish with sweetened whipped cream and whole strawberries, if desired. Cover; refrigerate leftover pie. 8 servings.
