Number Of Ingredients 7

1 cup orzo (Greek pasta)
2 tablespoons unsalted butter
1 shallot, minced (about 2 tablespoons)
Zest of 1 lemon
1 pound fresh peas, shelled, or 2 cups frozen peas
Coarse salt and freshly ground pepper
2 tablespoons freshly chopped mint

Steps:

  • Cook the orzo according to package directions. Melt the butter in a medium saucepan over medium heat. Add the shallot and lemon zest, and sauté until translucent.
  • Add the peas, and cook until bright green and tender, adding a little water if the shallots brown before peas are tender.
  • Add the cooked orzo, season with salt and pepper, and toss to combine. Remove from heat, and stir in the mint.

1 cup fresh mint leaves
1/2 cup fresh parsley leaves
1 small shallot, finely chopped
2 tablespoons pine nuts, toasted
2 tablespoons freshly grated Romano cheese
1 teaspoon lemon zest
1 cup olive oil
Salt and freshly ground pepper
1 pound orzo pasta, cooked al dente
1/2 cup Mint pesto
1/2 pound fresh peas, blanched
Finely chopped fresh parsley

Steps:

  • Combine first 6 ingredients in a food processor and pulse until almost smooth. With the machine running, slowly add the olive oil until emulsified. Season with salt and pepper to taste.
  • Place the orzo in a large bowl and combine with the pesto. Fold in the peas and season with salt and pepper to taste. Garnish with fresh parsley.

  • Bring a medium pot of water to a boil and salt generously with sea salt. Drop pasta and cook according to the package directions. When the pasta is almost done, add peas to the boiling water and blanch for the last couple of minutes with the pasta. Drain everything and set it aside.
  • Combine the first four ingredients in the bowl of a food processor and pulse to finely chop. stream in the olive oil while the machine is running. Just enough to form a thick paste. Taste and season with salt and pepper as you see fit.
  • Toss the mint pesto with the pasta and peas until everything is well coated. Taste and add additional seasoning if necessary.
