1/2 cup sugar
Juice of 1 lemon

Steps:

  • Combine all ingredients in a food processor. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups.

9 cups (about 2 1/2 pounds) seeded, cubed watermelon
1/3 cup fresh lime juice
1 cup mint, finely chopped, plus more for garnish
1/3 cup sugar

Steps:

  • Working in 2 batches, puree watermelon in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon. Discard solids. Combine the watermelon puree, lime juice, mint and sugar in a 9 by 13-inch metal pan. Place mixture in the freezer, scraping thoroughly with a fork every 20 to 30 minutes for about 2 1/2 hours, or until the granita resembles coarse crystals. Scrape 1 last time and spoon into parfait glasses or bowls. Top with a mint sprig.

1 pound watermelon
2 tablespoons sugar
2 tablespoons lemon juice

Steps:

  • Cut about 1 pound watermelon into small chunks (discarding the rind), and freeze them. When they're frozen, put them in a blender with 2 tablespoons sugar and 2 tablespoons lemon juice, and blend until the mixture liquefies. Pour the mixture into a shallow glass or ceramic pan, and freeze for about 2 hours, breaking up the ice crystals with a fork every 30 minutes or so. It should be slushy and crunchy.

1/3 cup sugar
1/2 cup water
1/4 cup mint-flavored apple jelly
4 cups seeded watermelon cubes
2 tablespoons fresh lemon juice

Steps:

  • In small saucepan, combine sugar, water and jelly; mix well. Cook over medium-high heat about 4 minutes or until sugar is completely dissolved and jelly is melted, stirring occasionally. Cool 5 minutes.
  • Meanwhile, place watermelon in blender container or food processor bowl with metal blade. Cover; blend until smooth. Add cooled syrup and lemon juice; blend until mixed. Pour into 13x9-inch (3-quart) baking dish. Freeze at least 1 hour or until icy around edges.
  • Stir and mash with fork to break up ice crystals. Freeze about 2 hours or until all liquid is frozen, breaking up mixture with fork every 30 minutes. Serve immediately or let stand at room temperature 5 to 15 minutes before serving. To serve, stir with fork; spoon into 6 individual dessert dishes.

1/3 cup sugar
1/3 cup watermelon juice (cut watermelon into chunks and leave in a bowl, juice will collect in bowl)
5 cups watermelon, seeded and cut into chunks
1/4 cup lime juice
1/2 teaspoon peppermint extract
2 teaspoons of fresh mint, chopped

Steps:

  • Combine sugar and watermelon juice in a small saucepan; bring to a boil.
  • Cook, stirring constantly, until sugar dissolves; remove from heat.
  • Place watermelon cubes, lime juice and peppermint extract in a blender; cover and process until smooth, stopping once to scrape down sides.
  • Add sugar mixture to blender; cover and process until blended.
  • Pour mixture into a 9x13-inch pan, cover and freeze at least 8 hours or until firm.
  • Remove mixture from freezer and scrape with a fork until fluffy.
  • Garnish with mint and serve immediately.

2 cups water
1 cup sugar
of fresh mint, stems on, to taste
1 watermelon
3 tablespoons lime juice
simple syrup
fresh mint leaves, to taste

Steps:

  • In a medium saucepan add the water, sugar and mint leaves and bring to a boil. Once the sugar has dissolved, turn off the heat and let the simple syrup cool.
  • Remove the rind from the watermelong and cut the watermelon into chunks.
  • In a blender add the watermelon, lime juice, mint leaves and cooled simple syrup. Puree it all together.
  • Pour the mixture into a baking dish and freeze for at least 8 hours.
  • Once frozen, take a fork and scrape the frozen mixture to create the granita texture.
  • Serve and enjoy!
