MINTY LIME FREEZE
A cool cocktail translated into a refreshingly zesty dessert. This silken treat has mojito flavors but no alcohol, so it's really more mocktail than cocktail.

Steps:
- Line 9-inch round pan with large sheet of plastic wrap, with ends of wrap extending over side. Beat Neufchatel and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, lime zest and juice; mix well.
- Whisk in COOL WHIP and mint; pour into prepared pan. Combine pretzel crumbs, butter and remaining sugar; sprinkle over dessert. Use ends of plastic wrap to gently press crumb mixture into top of dessert.
- Freeze 3 hours or until firm. Invert dessert onto plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.

MINT LIMEADE

- Muddle 2 lime wedges and some mint leaves in each glass and add ice. Mix 2 cups simple syrup, 2 cups water, 1 1/2cups fresh lime juice and 1/2 cup fresh lemon juice in a pitcher; pour into the glasses.
- Simple Syrup: To make 2 cups simple syrup, bring 1 1/2cups each sugar and water to a boil, stirring until dissolved. Let cool.
MINT LIME FROZEN POPS
Steps:
- Stir together the Simple Syrup, lime juice and 4 ounces water in a large measuring cup. Add a couple of mint leaves to each of 4 frozen pop mold cavities. Divide the mixture evenly among each frozen pop cavity, then add the sticks and freeze until solid, about 5 hours.
- Unmold the pops and place each in a glass. Top with the seltzer and serve immediately.
- Add the sugar, mint leaves and 1 cup water to a small saucepot. Bring to a boil, then turn off the heat. Cover and let cool to room temperature. Strain the mint leaves from the syrup and refrigerate until ready to use.

- Place soda, ice, sherbet & limeade in blender.
- Blend at high speed till mixture is slushy, stopping blender 2-3 times to push mixture down.
- Pour into frosted tumblers & serve.
LIME FREEZE
Just three ingredients, soymilk, frozen limeade and honey, whip up into a refreshing dessert.

Steps:
- In large bowl, mix soymilk, limeade concentrate and honey with wire whisk until smooth. Pour into 8-inch square glass baking dish.
- Freeze uncovered 30 minutes. When ice crystals begin to form at edges of dish, stir mixture with fork. Freeze about 1 hour 30 minutes longer, stirring every 30 minutes, until firm.
- To serve, spoon into individual dessert bowls. Garnish with lime slices and blueberries.
