Super-easy and refreshing summer accompaniment to spicy or grilled foods. Fruit can be chopped smaller to be used as a relish/condiment or left bite-sized to be a salad/side. Also great for a change of pace on the brunch buffet!

4 cups cubed honeydew
½ lime, juiced
¼ cup chopped fresh mint leaves
3 tablespoons chopped fresh cilantro
1 pinch white sugar, or to taste

Steps:

  • Gently combine honeydew, lime juice, mint, cilantro, and sugar together in a bowl. Refrigerate at least 2 hours before serving.

3 cups 1-inch cubes honeydew melon (about 1/2 melon)
2 tablespoons fresh lime juice
1 tablespoon fresh opal basil leaves or chopped fresh basil leaves
1 tablespoon chopped fresh mint leaves
sugar to taste if desired

  • In a bowl combine all ingredients and chill.

HONEYDEW AND MINT GRANITA

Number Of Ingredients 4

1/2 cup sugar
10 sprigs mint, plus leaves for topping
3 cups chopped honeydew melon
1/4 cup fresh lime juice (from 2 to 3 limes)

Steps:

  • Bring the sugar and 3/4 cup water to a simmer in a small saucepan over medium heat, stirring until the sugar is dissolved. Remove from the heat and add the mint, pressing with a wooden spoon to submerge. Let cool completely, then remove the mint with a slotted spoon and discard.
  • Combine the mint syrup, honeydew and lime juice in a blender and puree until smooth. Pour into a 7-by-11-inch or 8-inch square metal baking dish.
  • Freeze the honeydew-mint mixture until ice crystals begin to form around the edges, about 45 minutes. Scrape the crystals toward the center of the pan with a fork, breaking apart any large chunks. Continue freezing, scraping every 30 minutes or so, until all of the granita has been scraped into flakes, 3 to 4 hours. Spoon into chilled bowls and top with mint leaves.

3-pound honeydew melon
1 1/2 cups superfine granulated sugar
1 3/4 cups fresh lime juice
3 tablespoons chopped fresh mint leaves
3 cups cold water
1 cup ice cubes

Steps:

  • Remove rind from melon, discarding it, and cut enough fruit into 1-inch pieces to measure 6 cups. In a blender, purée melon in batches with sugar, lime juice, and mint until completely smooth and pour into a thermos or other container with water and ice. Shake or stir limeade before serving.

Honeydew, Cucumber, and Mint Soda image

Spa water-aka water infused with cucumber and mint-gets a bit of natural sweetness from ripe honeydew melon. The salt in the drink helps with rehydration, while lime juice and club soda balance it out.

Number Of Ingredients 6

1 (2½-pound) honeydew, cut into 1-inch pieces (about 6 cups)
2 medium Persian cucumbers or 1 English hothouse cucumber, peeled, coarsely chopped
⅓ cup (packed) mint leaves, plus more for serving
Pinch of kosher salt
3 tablespoons fresh lime juice
Club soda (for serving)

Steps:

  • Purée honeydew, cucumbers, mint, and salt in a blender until smooth. Strain through a fine-mesh sieve into a large bowl (do not press on solids, which would make mixture cloudy). Stir in lime juice and chill 1 hour.
  • Divide honeydew purée among ice-filled glasses. Top off with club soda and garnish with mint sprigs.
  • Honeydew purée can be made 1 day ahead. Cover and chill.

ICED HONEYDEW MINT TEA

4 cups water
24 fresh mint leaves
8 green tea bags
2/3 cup sugar
5 cups diced honeydew melon
3 cups ice cubes
Additional ice cubes

Steps:

  • In a large saucepan, bring water to a boil; remove from heat. Add mint leaves and tea bags; steep, covered, 3-5 minutes according to taste, stirring occasionally. Discard mint and tea bags. Stir in sugar., Place 2-1/2 cups honeydew, 2 cups tea and 1-1/2 cups ice in a blender; cover and process until blended. Serve over additional ice. Repeat with remaining ingredients.
