Ingredients

8 oz cream cheese, softened
1 c cocktail sauce, you may want to use more
4-6 oz mini shrimp, frozen and defrosted (canned is ok)

Steps:

1. Place softened cream cheese on a serving dish.
2. Top with the cocktail sauce.
3. Sprinkle mini shrimp on top of cocktail sauce.
4. Serve with Ritz crackers, or crackers of your choice. Enjoy!

1 package (8 ounces) cream cheese, softened
1-1/2 teaspoons Worcestershire sauce
1 to 2 teaspoons grated onion
1 teaspoon garlic salt
1/8 teaspoon lemon juice
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
1/2 cup seafood cocktail sauce
30 peeled and deveined cooked shrimp (31-40 per pound), tails removed
Optional: Minced fresh parsley and lemon wedges

Steps:

Beat the first 5 ingredients until blended. Place tart shells on a serving plate. Fill with cream cheese mixture; top with cocktail sauce and shrimp., Refrigerate until serving. If desired, sprinkle with parsley and serve with lemon wedges.

16 crackers (I have used Ritz & Cobblestone Wheat Crackers)
1/3 cup whipped cream cheese spread
1/3 cup seafood cocktail sauce
16 large fresh shrimp, cooked (or pre-cooked frozen shrimp that has been thawed)
1/3 cup finely chopped green onion (optional)

Steps:

Spread each cracker with 1 tsp of the cream cheese spread.
Top evenly with the cocktail sauce and one shrimp.
Sprinkle some of the finely chopped onions on top (if you desire).

In a saucepan over medium-high heat, add the water and salt and bring to a boil. Remove the saucepan from the heat and add the shrimp and allow to poach until barely pink, about 4-5 minutes. Pour the water and shrimp into a colander to drain, then immediately plunge the drained shrimp into the prepared bowl of ice water to stop the cooking process. Allow to cool in the ice water, then drain and place on a double thickness of paper towels, patting them dry with additional paper towels.
While the shrimp are cooling, add 2 tablespoons of cocktail sauce to each miniature container and hang a cooled shrimp over the side. Garnish with a feathery snip of fresh dill, arrange the appetizers on a tray and serve.
