MINCEMEAT QUICK BREAD



Mincemeat Quick Bread image

This is great served on a cold, wintry day. Use any kind of mincemeat, purchased or homemade, and serve with butter or cream cheese.

Number Of Ingredients 10

2 cups all-purpose flour
½ cup white sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
¼ cup vegetable oil
1 tablespoon orange zest
2 tablespoons orange juice
2 cups prepared mincemeat pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 x 3 inch loaf pan.
  • Mix together the egg, oil, orange peel, juice, and mincemeat, blending well. Combine flour, sugar, baking powder, baking soda, and salt; add gradually to the egg mixture. Mix just until moist. Pour into prepared pan.
  • Bake for 1 hour. Remove the loaf from the oven, and cool on a wire rack.

4 teaspoons baking powder
1 teaspoon salt
1/2 cup brown sugar, packed
3 tablespoons shortening, melted
1 cup mincemeat
1 egg, beaten
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees F, & grease a 9 1/2" loaf pan.
  • Whisk together flour, baking powder & salt.
  • In another bowl, mix together sugar, melted shortening, mincemeat, egg & milk.
  • Add to flour mixture, stirring only until dry ingredients are moistened.
  • Bake 1 hour.
  • Let stand for 24 hours before cutting!

Another recipe cut from a newspaper years ago. Time to put it in a safer place. "Mince Easter Bread is ideal for serving on a brunch buffet, or gaily wrapped and nestled in an Easter basket for giving. The bread is quickly prepared with ready-to-use mince meat. It adds moistness and flavor. Not too sweet, the bread takes well to a simple, smooth white glaze. A coconut nest of colorful jelly bean eggs decorates the top."

1 1/2 cups sifted all-purpose flour
1 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
3 tablespoons butter, softened
1 teaspoon vanilla extract
1 1/3 cups prepared mince meat
1/2 chopped walnuts (or pecans)
1 cup sifted powdered sugar (for glaze)
1 tablespoon milk (for glaze)
tinted coconut
jelly beans

Steps:

  • In a large bowl, sift flour, sugar, baking powder and salt. In a medium bowl, combine eggs, butter and vanilla.
  • Stir mince meat and nuts into egg mixture. Then pour into dry ingredients.
  • Stir only enough to moisten flour. Spoon batter into a greased 9 x 5 inch baking pan.
  • Bake at 350* F for 1 hour or until wooden pick inserted near center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
  • In a small bowl, combine powdered sugar and milk. If necessary, add additional milk to obtain spreading consistency.
  • Pour glaze over top of loaf. If desired, decorate top of loaf with little nests of tinted coconut. Fill with jelly beans. (To tint coconut, put the desired amount of coconut in a small jar, add a drop of green food coloring, cover with a lid and shake-shake-shake to disperse the green color.).

Number Of Ingredients 13

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
4 large eggs
6 large egg yolks
1 cup sugar
3/4 cup butter, melted
2 teaspoons salt
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 tablespoons grated lemon zest
2 cups warm milk (110° to 115°)
9-3/4 to 10-1/4 cups all-purpose flour
1 cup golden raisins

Steps:

  • In a small bowl, dissolve yeast in water; set aside. In a large bowl, beat eggs and yolks until lemon-colored; gradually add sugar. Add the butter, salt, vanilla, lemon juice and zest; beat well. Add milk and yeast mixture. Gradually add 6 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 10 minutes. Sprinkle with raisins; knead for 5 minutes longer. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into thirds. Cover and let rest 10 minutes. Shape each portion into a loaf and place in greased 8x4-in. loaf pans. Cover and let rise in a warm place until almost doubled, about 30 minutes. , Bake at 325° for 45 minutes or until golden brown. Remove from pans to cool on wire racks.
