1 pint maine wild blueberries
1/3 cup water
1 cup white sugar
1 teaspoon grated lemon rind
1 cup flour
1/4 cup brown sugar
1 teaspoon baking powder
1 1/2 tablespoons cinnamon
1/3 cup butter

Steps:

  • Preheat oven to 350 degrees. Combine Maine wild blueberries, 3/4 cup white sugar, water, and lemon rind in a baking dish. Bring to boil and simmer for 2 minutes. Meanwhile, combine reserved 1/4 cup white sugar with brown sugar, flour baking powder, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle crumbs over blueberry mixture. Bake approximately 25 minutes or until top is brown. Serve warm with heavy cream or vanilla ice cream.

Cobblers are an easy way to get a "pretend pie". They are easy to make and soooo good. It makes a dinner end with a real treat. You can make them with the wild blueberries which have tons of flavor, or you can use the frozen ones. This may be doubled and put in a 9"x13" baking dish.

4 cups blueberries (fresh or frozen)
1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 1/2 cups flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda (scant)
4 1/2 tablespoons cold butter
3/4 cup buttermilk, plus 1 tablespoon

Steps:

  • BLUEBERRIES:.
  • In a large bowl combine all the ingredients.
  • Put into a 2 quart baking dish which has been sprayed with cooking spray.
  • Bake at 375 degrees for 10 minutes while you make the Cobbler.
  • COBBLER:.
  • In a small bowl combine the first five ingredients; mix well.
  • Cut in the cold butter till mixture resembles coarse crumbs.
  • Stir in the buttermilk just till moistened.
  • Drop by tablespoons onto blueberry mixture.
  • Sprinkle some sugar over the top of the dough.
  • Bake uncovered at 375 degrees for about 25-30 minutes or till golden.
  • Serve warm with vanilla ice cream or whipped cream.

I got this recipe from a very old eagle brand advertising recipe (out of granny's recipe book). I am a sucker for cobbler and love this recipe!

1 pint blueberries (fresh or frozen)
1 (14 ounce) can sweetened condensed milk (I prefer Eagle Brand)
2 teaspoons grated lemons, rind of
3/4 cup butter or 3/4 cup margarine (cold)
2 tablespoons butter or 2 tablespoons margarine (cold, in addition to above)
2 cups biscuit mix, divided (I prefer Jiffy)
1/2 cup brown sugar
1/2 cup chopped nuts (any will do, I prefer almonds)
vanilla ice cream (for topping) (optional)
blueberry sauce (for topping) (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Combine blueberries, condensed milk, and lemon peel in bowl.
  • In large bowl, cut 3/4 cup butter into 1 1/2 cups biscut mix until crumbly; add blueberry mixture.
  • Spread in greased 9-inch square baking pan.
  • In small bowl, combine remaining biscuit mix and brown sugar; cut in remaining butter until crumbly.
  • Add nuts, sprinkle over cobbler.
  • Bake 1 hour or until golden brown.
  • Serve warm with ice cream and blueberry sauce.

WILD BLUEBERRY COBBLER

Of coarse you can substitute regular blueberries for this recipe. This makes a large amount of cobbler, serve warm with vanilla ice cream!

8 cups wild blueberries
1 orange, zest of
1 orange, juice of
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon cinnamon (can use more)
1/4 teaspoon ginger powder (optional)
3 cups flour
3/4 teaspoon salt
1 tablespoon baking powder
3/4 teaspoon baking soda
3 tablespoons sugar
5 tablespoons cold butter (cut into small pieces)
3 tablespoons cold Crisco shortening
1 1/2 cups buttermilk
1/4 cup sugar
1/2 teaspoon cinnamon
vanilla ice cream

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a large bowl combine blueberries, orange zest, the juice of one orange, 3/4 cup sugar, cornstarch, cinnamon and ginger (if using) toss to combine.
  • Pour the mixture into the prepared baking dish.
  • Place the dish on a baking sheet to catch and spills.
  • Bake for 20 minutes.
  • While the blueberries are baking, prepare the cobbler topping.
  • In a small bowl mix together 1/4 cup sugar with 1/2 teaspoon cinnamon; set aside.
  • In a food processor combine flour, salt, baking powder, baking soda and 3 tablespoons sugar; pulse to combine.
  • Add in the cold butter and cold shortening; pulse to combine until the mixture forms crumbs; dump the mixture into a bowl.
  • Add in the buttermilk; mix JUST until combined.
  • When the blueberry mixture is cooked for 20 minutes, remove and sprinkle about 4-inch portions of the cobbler over the berry mixture.
  • Sprinkle 1/4 cup sugar/cinnamon mixture over the cobbler dough.
  • Return to the oven to bake for about 30 minutes, or until the dough is golden brown and the top is baked.

This pie is the perfect end to a summer meal! I adapted it slightly from a recipe in Coastal New England Summertime Cooking by Sherri Eldridge. I prefer it the second day, after the flavors have had time to meld together. Yum! Cook time includes time for blueberry mixture to sit. You can also dot the top with a small amount of margarine or butter before adding the second crust for a slightly richer texture and flavor.

1 pastry for double-crust pie (either storebought or your own recipe)
4 cups wild blueberries (I used regular)
1/3 cup sugar
1/3 cup brown sugar
1 tablespoon quick dry tapioca
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon lemon juice
1 tablespoon milk or 1 tablespoon soymilk
1 tablespoon sugar

Steps:

  • Preheat oven to 400°F Spray 9-inch pie plate with non-stick spray. Place bottom crust in pie plate.
  • Clean fresh blueberries (if canned or frozen set to drain) and put in bowl. In a separate bowl, mix sugars, tapioca, cinnamon, and nutmeg.
  • Sprinkle lemon juice on blueberries, then gently fold into sugar mixture. Let sit 45 minutes, then gently stir again. Pour into pie shell.
  • Cover with second crust. Crimp edges with fingers and flute. Make 5 small slits on top. Brush top with milk and sprinkle with sugar.
  • Bake 10 minutes at 400. Reduce heat to 350 and bake 25 minutes more.
