MIMI'S LASAGNE CHILI SOUP
I don't know why it is called "Chili" Soup but that is the name. I got this from my daughter and it is soooo easy and soooo delicious. Great for the long and cold winter evenings. Just have some crusty garlic bread or my Recipe #329435 to put it into. It calls for spaghetti sauce in a jar and I use Paul Newman's Sockaroonie. Yummmm!

Steps:
- Coarsely chop zucchini and set aside.
- Coarsely chop onion and put into pot with turkey sausage which has been crumbled up as best you can.
- Heat pan to medium and cook till sausage is done continuing to break up sausage, adding the garlic while it is cooking; drain.
- Add spaghetti sauce, broth, and water; bring to a boil.
- Stir in pasta; reduce heat cook covered for about 7 minutes.
- Stir in zucchini and cook for 2-4 more minutes or till zucchini is done.
- Stir in basil.
- Ladle soup into bowls and enjoy.

Steps:
- Chop the onions and peppers and fry with the olive oil. Once soft add the mince and fry until brown. Drain off excess fat if required.
- Add to the mince the tomoatoes, kidney beans, oxo cubes, garlic, tomatoe puree, worchestershire sauce, salt, celery salt, chillies, cumin and slowly bring to the boil, stiring every few minutes.
- Drop the heat and simmer for at least 20 minutes, the longer you simmer for the thicker the sauce will become, stirring every few minutes. Taste the mixture and decide if you would like to add more seasoning. Then remove from the heat. Preheat the oven to 180C.
- Prepare the cheese sauce.
- Using a large and deep lasagne bowl layer the bottom with lasagne sheets, spoon on half the mince mixture to cover the sheets, then pour a thin layer of the cheese sauce.
- Add another layer of lasagne sheets, then the remainder of the mince mixture and another thin layer of cheese sauce.
- Add a top layer of lasagne sheets and cover with the remainder of the cheese sauce. Cover then with a full layer of grated cheese then spread the jalapenos across the top.
- Place into the pre heated over for approximately 40 minutes or until the cheese starts to turn golden brown.
MIMI'S VEGETABLE SOUP
This is one of my all time favorites - my mom's (Mimi's) recipe for vegetable soup. What I like about this recipe is you can add a variety of fresh seasonal vegetables in addition to the "standards". And you can use canned or frozen vegetables as well. Personnally, I like fresh organic vegetables in this soup, but I've also used the canned for convenience, and the added liquid from the canned veggies adds some more flavor. I've tried this in my crock pot, but I like cooking it better on the stove - no sticking to the bottom that way. This recipe makes a pretty big pot of soup, so eat some now and freeze some for later. Add additional liquid as necessary to get the consistency you like for your soup. Enjoy!

- In a large stock pot, add 2 cups liquid (water or broth) and stew beef. Bring to a boil and remove any foam from the water. Cook 5-10 minutes.
- Add onion, celery, salt, pepper, and parsley.
- Add tomato soup. Fill soup can with water and add to pot.
- Cook on medium heat for approximately 30 minutes.
- Add the raw vegetables next - turnips, potatoes, carrots, etc., and bring pot to boil.
- Cook over medium low heat until raw vegetables are tender, about 45 - 60 minutes. Stir occasionally and test doneness of vegetables with fork.
- Add other canned or frozen vegetables last; cook until thoroughly heated.
- Serve with grilled cheese or a green salad.

BEST LASAGNA SOUP
Steps:
- In a large saucepan, cook beef, green pepper and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking up beef into crumbles. Add garlic; cook 1 minute longer. Drain., Stir in tomatoes, broth, tomato sauce, corn, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender. Sprinkle with cheese.
