MIMI'S CORNMEAL SCONES
This is a savory scone. Serve them warm with butter and Recipe #212646 or honey. They are good with chili, or any bean dish, or just by themselves with the jelly.

Steps:
- Mix first 5 ingredients in a medium bowl.
- Cut in the butter using pastry blended till it looks like fine crumbs.
- Stir in buttermilk so dough leaves sides of bowl and forms a ball.
- Turn dough onto lightly floured surface and knead lightly about 10 times.
- Pat or roll into a 7-inch circle on ungreased cookie sheet that has been sprinkled with cornmeal.
- Score into 8 wedges, cutting down halfway to the bottom.
- Bake in 400 degree oven for 20-25 minutes or till light brown.
- Immediately remove from sheet and carefully separate wedges.
- Serve warm.
- NOTE: If the dough is too dry, stir in an additional 1-2 tablespoons of buttermilk; sometimes I will add an extra tablespoon while mixing, but you try it for the first time.
MIMI'S VALENTINE RASPBERRY SCONES
A delicious treat on Valentine's Day or for a tea party. Each scone is two layers with a raspberry jam filling and sprinkled lightly with white sugar and then with red sugar crystals. Any other red jam would be fine--strawberry or cherry. They are beautiful on a tray or serve in a pretty basket lined with a napkin. If you are doing these for a tea party just use a smaller heart cookie cutter but it will make many more, or you could make a few small ones for the party and the rest larger ones for yourselves.

Steps:
- In a large bowl combine flour, granulated sugar, baking powder, and salt.
- With a pastry blender cut in butter till mixture resembles coarse crumbs.
- In a small bowl combine the cream, beaten egg, and vanilla; mix well.
- Add this to the flour mixture and stir till just combined; do not overmix.
- Turn onto a lightly floured board and knead about 5-6 times.
- Roll out to about 1/2" thickness and cut with a 4" heart-sharped cookie cutter; lightly press trimmings together and reroll to cut more scones--you should have 12.
- Place 6 hearts on a greased baking sheet (the rerolled ones are best for the bottom).
- Top each one with 1 tablespoon of jam; moisten edge of dough with water from your finger and place a second heart on top.
- Press along edges to seal.
- Sprinkle tops lightly with granulated sugar and then with the red sugar crystals.
- Bake 400 degree oven for 15-18 minutes; don't let them get too brown.
- Serve in a basket with a pretty napkin.

Steps:
- Whisk the egg, milk, and cream together and set aside.
- Combine the flours, cornmeal, sugar, baking powder and salt.
- Add the butter, coarsely chopped. Work the butter into the flour mixture leaving some clumps slightly larger others.
- Slowly add the milk mixture until the dry mixture is just wet. The dough should be rough and sticky, but hold together in a ball when lightly kneaded. If it is too wet, add a bit more all purpose flour.
- Turn the dough out onto a lightly floured surface and shape it so it is about 3/4 inch thick. Cut the dough into equal sized pieces and form the scones.
- Place on a parchment lined baking sheet, and refrigerate until ready to bake.
- Preheat the oven to 425F Brush the tops of each scone with a bit of milk, and sprinkle with a bit of raw sugar if desired.
- Bake for 12 to 15 minutes, or until the tops are golden brown. Cool on a wire rack, and serve immediately.

- In a large bowl whisk together the flour, sugar, baking powder, and salt.
- With a pastry blended cut the butter in to look like coarse crumbs.
- Gently fold the berries into the flour mixture.
- In a small bowl combine the cream, beaten egg, and vanilla; mix well.
- Add this to the flour mixture and stir till just combined; do not overmix.
- Knead dough gently on a lightly floured board being careful of the berries.
- Roll or pat into a circle that is about 7" round and about 1 1/2" thick.
- Cut the circle in half and each half into four pie-shaped wedges.
- Place on a baking sheet; brush the tops with egg wash.
- Bake in a 400-425 degree oven on the middle rack; to prevent browning on the bottom, place the cookie sheet on top of another cookie sheet; bake for about 20 minutes or till nicely browned.
- Best eaten the day they are made.

- Preheat oven to 425 degrees F. In large bowl whisk together flour, cornmeal.
- Add shredded butter to flour mixture; toss to distribute. (Or cut cubed butter into flour mixture with pastry blender until it resembles coarse crumbs). Make well in center of flour-butter mixture. Add 1 cup buttermilk; stir with spoon until moistened. Do not overmix. (If dough appears dry, add 1 to 2 tablespoons additional buttermilk.).
- Turn dough out onto floured surface. Gently knead by lifting and folding dough, 4 or 5 times, giving a quarter turn after each knead. Roll into 8-inch square, 3/4 inch thick. Cut into 1-1/2- to 2-inch squares. Place squares 1 inch apart on ungreased or parchment-lined baking sheet. Brush with buttermilk; sprinkle coarse sugar. Bake 12 to 15 minutes or until lightly browned; cool scones on a rack. Serve warm.
- Shredding Butter: Freeze butter for 15 minutes. Using a grater, coarsely shred the cold butter. Toss into flour mixture or refrigerate, loosely covered, until needed.

CHICKEN CORNMEAL SCONES
Scones made with chicken bouillion and cornmeal...actually made this by mistake...was trying to make homemade dog biscuits for my pooch...they literally turned out like scone biscuits...and taste sooooo good! I'm even thinking of adding cheese next time!

- Preheat oven for 400 degrees farenheit.
- Mix all of the ingredients in large bowl, except for the 1 cup flour and 1 cup self rising corn meal mix at the end - set these aside, and blend until a soft dough forms.
- slowly add in more flour from the flour that has been set aside, and knead into the soft dough until a firmer dough forms and pulls away from the sides of the bowl.
- fold out onto corn meal mix dusted surface (use from the cup of mix that was set aside) and sprinkle with more of the corn meal mix.
- roll out to 1/2" thickness sprinkling more of the corn meal mix onto the dough surface as needed to prevent your rolling pin from sticking.
- use biscuit cutter or coffe cup and cut out your biscuits and put them onto a cookie sheet dusted with corn meal mix and bake until golden brown and then enjoy.
- you can also add cranberries, onions, or cheese to this too and can omit the bouillion if you want to make it sweet, add 1 cup of sugar and 2Tbs.vanilla extract instead and add your other ingredients you want to use -- i.e. chocolate chips, fruit, etc --.
- the serving size and yields are approximate depending on what size biscuit cutter or shape you use -- .
- And if you want to make a biscuit for your pooch - get regular corn meal and replace the self-rising corn meal mix with this and roll out very thin and cut the biscuits out with bone,star or, round shaped small cutters and bake until very light brown and let cool overnight to make them hard -- or you can then put them back into the oven after coating them with egg whites and baking it on for a few minutes on a lower temp until glossy if you want but it's not necessary -- p.s. my dog loved these too -- .
