8 mangoes - peeled, seeded, and sliced
2 cups water
½ cup white sugar
2 cups white sugar
½ cup butter, softened
2 cups all-purpose flour
4 teaspoons baking powder
¼ teaspoon salt
1 cup milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine mangoes, water, and 1/2 cup white sugar in a saucepan over medium heat; simmer until sugar is dissolved, 5 to 6 minutes. Drain syrup from mangoes, reserving syrup.
  • Beat 2 cups sugar and butter together in a bowl using an electric mixer until smooth and creamy. Whisk flour, baking powder, and salt together in a separate bowl until combined. Slowly mix flour mixture, alternating with milk, into creamed butter mixture, beating well after each addition. Stir vanilla extract into batter; pour into a 9x13-inch baking dish.
  • Arrange mangoes on top of the batter and pour 2 cups reserved syrup over mangoes.
  • Bake in the preheated oven until a toothpick inserted in the center of the cobbler comes out clean, 40 to 45 minutes.

3 cups diced mango, or more to taste
3 tablespoons white sugar, divided
⅛ cup bourbon
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1 teaspoon orange zest
½ cup all-purpose flour
¾ teaspoon baking powder
1 pinch salt
4 tablespoons unsalted butter, divided
1 large egg, lightly beaten
⅛ cup milk

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine mango, 2 tablespoons sugar, bourbon, cornstarch, cinnamon, and orange zest in a large bowl. Mix well to coat the mango evenly. Set aside.
  • Combine flour, remaining 1 tablespoon sugar, baking powder, and salt in a separate bowl. Cut in 2 tablespoons butter using a pastry cutter, or the tips of your fingers, until the mixture resembles coarse crumbs. Combine egg and milk in a small bowl; add all at once to the flour mixture. Stir until batter is just moistened.
  • Melt remaining 2 tablespoons butter in an oven-safe skillet over medium heat. Add mango mixture and cook gently until heated through, about 5 minutes. Drop batter in spoonfuls over the fruit. Transfer skillet to a baking sheet.
  • Bake in the preheated oven until top is browned and fruit is bubbling, 20 to 30 minutes.

Cobblers are an easy way to get a "pretend pie". They are easy to make and soooo good. It makes a dinner end with a real treat. You can make them with the wild blueberries which have tons of flavor, or you can use the frozen ones. This may be doubled and put in a 9"x13" baking dish.

4 cups blueberries (fresh or frozen)
1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 1/2 cups flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda (scant)
4 1/2 tablespoons cold butter
3/4 cup buttermilk, plus 1 tablespoon

Steps:

  • BLUEBERRIES:.
  • In a large bowl combine all the ingredients.
  • Put into a 2 quart baking dish which has been sprayed with cooking spray.
  • Bake at 375 degrees for 10 minutes while you make the Cobbler.
  • COBBLER:.
  • In a small bowl combine the first five ingredients; mix well.
  • Cut in the cold butter till mixture resembles coarse crumbs.
  • Stir in the buttermilk just till moistened.
  • Drop by tablespoons onto blueberry mixture.
  • Sprinkle some sugar over the top of the dough.
  • Bake uncovered at 375 degrees for about 25-30 minutes or till golden.
  • Serve warm with vanilla ice cream or whipped cream.

Bourbon Peach Cobbler image

This recipe is a tribute to my Southern grandmother Catherene, who taught me to bake starting at the tender age of three. Part of her family hailed from Georgia and the others from Kentucky. The peaches are for Georgia, and the bourbon is, of course, for Kentucky!

Yield makes 8 servings

Number Of Ingredients 9

6 ripe peaches, blanched, peeled, and cut into 12 slices each (see page 138 for blanching tips)
2 tablespoons bourbon
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup firmly packed light brown sugar
2 tablespoons Basic Gluten-Free Flour Mix (page 19)
1 recipe Cobbler Biscuit Dough (page 149)
1 tablespoon dairy-free, soy-free vegetable shortening, for dotting top
1 tablespoon light brown sugar mixed with 1/8 teaspoon ground cinnamon, for sprinkling

Steps:

  • Preheat the oven to 375°F. Grease an 11 by 7-inch or 8 by 8-inch baking dish.
  • In a large bowl, combine the peaches, bourbon, vanilla, cinnamon, sugar, and flour mix. Stir to coat the peaches evenly.
  • Prepare the Cobbler Biscuit Dough.
  • Pour the peaches into the baking dish. Dot the top of the peaches with the shortening.
  • Use a tablespoon to scoop out the dough onto the fruit. You can also use your fingers to just break it up. Sprinkle the top with the light brown sugar/cinnamon mixture.
  • Bake for 40 to 45 minutes, or until the fruit is bubbling up and the top is golden brown. Let rest for about 30 minutes before serving.
