MILLER MEATLOAF
Steps:
- Preheat oven to 350 degrees F. Mix ingredients into a large plastic freezer bag (easy on clean-up) mix all ingredients well in bag, add seasoning salt last.
- Form into a half basketball shape and place in a non sprayed Pyrex metal pan or roaster pan. Add 2 tablespoons of barbeque sauce to the top of the meatloaf and sprinkle seasoning salt over the barbeque sauce. Then add about 1/4-inch water to pan but not over the meatloaf (so you do not wash everything off the meatloaf and take the flavoring off the top).
- Place in oven. Check water level in about an hour to an hour and a half (especially if you add potatoes, or stuffing with your meatloaf). You want the meatloaf to be cooked so look for the top to be darker. If you choose your meat well done, leave in until the top of meatloaf is darker and crusty. Again make sure there is enough water in pan to keep from burning or getting stuck to the bottom of your pan. You can bump oven temp up to 375°F to get top crusty.

AUNT MILLIE'S MEATLOAF
This is the simplest meatloaf recipe that made me a meatloaf lover! There is nothing fancy in the mix, but the flavor is wonderful. The mix will seem so wet that you will think you will not be able to form it, but you will. It also makes good meatballs, just add a little oregano and garlic and bake them at 350°F for about 15 minutes. Hope you like it as much as I do! We call it Aunt Millie's but Aunt Honey swears it's hers (so we give them both credit)!

- Spray baking pan with a little cooking spray.
- Place mixture in pan and shape into loaf.
- Bake at 375°F for 1 hour.

MILLET LOAF

Steps:
- Rinse millet and put it in a medium saucepan with the water and 1/2 tsp salt. Cook, lid ajar slightly, over medium heat for about 20 minutes, or until soft; the millet should absorb all the water.
- Saute the carrots, celery, onions and garlic in sesame oil until onions are translucent. Add the seasonings.
- Mix the cooked millet and the veggies together, along with the sunflower seeds, if you wish.
- Add 3 tbsp flour to the millet mixture, blending well.
- Lightly oil (and flour, optional) 2 loaf pans. Press the millet mixture into the pan, and bake at 400 F for one hour (45 minutes if the millet is still warm when you put it into the pan).
- Allow the loaf to cool for about 10 minutes before turning it out onto a platter and slicing.
- Serve with mashed potatoes, green beans and lots of brown gravy. (Recipe #4855 Vegetarian Gravy II makes a good accompaniment).
MILLIONAIRE'S MEATLOAF
This is a meatloaf piled high with spicy shrimp. The chef David Burke created the dish for the Stadium Grill.

- For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.
- In a large mixing bowl, combine ground beef, eggs and milk. Mix well by hand, and add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onions and garlic. Mix again, and add the parsley, salt, pepper and thyme. Mix well until thoroughly combined.
- Spread the croutons across a shallow 8-inch-square baking dish. Top with the meatloaf mix, patting the surface so it is level. Bake until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned, about 1 hour. Toward the end of baking, prepare the chili shrimp.
- For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
- To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.
