The pecans give this brittle a whole new flavor. I am begged for this recipe all of the time. I hope all enjoy.

Steps:
- Butter a baking sheet.
- Combine pecans, sugar, corn syrup, and salt in a glass 4-cup measuring cup.
- Heat in microwave for 3 1/2 minutes; stir and heat for 3 1/2 more minutes. Stir butter into pecan mixture and heat in microwave for 2 more minutes.
- Stir baking soda and vanilla extract into pecan mixture until foamy; pour onto the prepared baking sheet. Allow to cool completely before breaking brittle into pieces. Store in an airtight container.

OMG! Two ingredients! How easy is this? I found this recipe on the www.recipe4living.com website. It is listed as one of their Top 10 Recipes to use up those leftover candy canes! - Line a large jellyroll pan with heavy-duty foil.
- Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5-6 minutes. Stir occasionally, until chocolate is melted and smooth.
- Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks.
- Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour.
- Break into pieces by slamming pan on counter.

- Combine melted butter, flour and salt in a medium bowl.
- Gradually add milk and stir until smooth.
- Cook, stirring occasionally, at MEDIUM heat in a microwave for 6 to 7 minutes, or until the sauce is thickened.
- For Cheese Sauce: Stir in 1/2 to 3/4 cup grated cheddar cheese.
- Cook at HIGH for 1 to 2 minutes, if necessary, to completely melt cheese.
- For Curry Sauce: Stir in 1 to 2 teaspoons curry powder.
- For Horseradish Sauce: Add 1 teaspoon prepared horseradish.
- For Mustard Sauce: Add 2 tablespoons prepared mustard and a dash of Worcestershire sauce.

- Preheat the oven to 325°F
- In a sifter, combine the flour, baking powder, and salt.
- Sift onto a large piece of wax paper and set aside until needed.
- Heat 1 inch of water in the bottom half of a double boiler over medium heat.
- With the heat on, place the white chocolate in the top half of the double boiler.
- Use a rubber spatula to stir the chocolate until completely melted and smooth, about 4 minutes.
- Transfer the melted white chocolate to a 1-quart bowl and set aside until needed.
- Place the granulated sugar and butter in the bowl of an electric mixer fitted with a paddle.
- Beat on medium for 4 minutes until smooth.
- Use a rubber spatula to scrape down the sides of the bowl, then continue to beat on medium for 2 more minutes until very smooth.
- Add the egg and the vanilla extract and beat on medium for 1 minute until combined.
- Scrape down the bowl.
- Add the melted chocolate and beat on medium for 1 minute until combined.
- Scrape down the bowl.
- Add the sifted dry ingredients and mix on low until incorporated, about 30 seconds.
- Add the chopped peppermint candy and mix on low until incorporated, about 30 seconds.
- Remove the bowl from the mixer and use a rubber spatula to finish mixing the dough until thoroughly combined.
- Using a heaping tablespoon of dough for each cookie (approximately 1/2 ounce), portion 12 cookies, evenly spaced, onto each of 3 nonstick baking sheets.
- Place the baking sheets on the top and center rack of the preheated oven and bake for 9 minutes until lightly golden brown around the edges, rotating the sheets from top to center halfway through the the baking time (at that time also turn each sheet 180 degrees).
- Remove the cookies from the oven and cool to room temperature for 30 minutes.

- In a large mixing bowl, beat butter, sugar and eggs on med. speed for 1 minute.
- Add vanilla, espresso coffee and peppermint extract ( or oil ). Beat until combined.
- Add chocolate chips.
- Stir in combined flour, salt and baking powder.
- Shape the dough in a 16-inch long log on a parchment paper lined cookie sheet.
- Flatten the log until about 2-inches thick.
- Bake the log for 25 minutes in a 350°F preheated oven.
- Cool for 20 minutes.
- Transfer the log to a cutting board and using a serrated knife, cut into 1-inch thick slices.
- Bake slices in a 325°F oven for 15 minutes ( I usually turn off the oven and let them cool in ).
- Transfer to wire rack and drizzle melted milk chocolate over them, if desired.
- Store in an airtight container at room temperature for up to 4 weeks.

- Combine sugar and corn syrup in a microwave-safe bowl. Heat in a microwave at 70%, or 700W, power for 4 minutes. Remove and stir. Microwave again at 70% power for 4 minutes. Add pecans, butter, and vanilla extract.
- Microwave at 100%, or 1000W, power for 3 minutes. Add baking soda and stir until frothy.
- Pour out onto a parchment paper-lined cookie sheet and let cool for 15 minutes.

- Place almonds and pecans on a baking tray and bake at 180 degrees C for 5 minutes or until golden. Set aside to cool.
- Place sugar, brown sugar, golden syrup and water in a heavy-based sauce pan and cook over medium heat, stirring until sugar dissolves.
