1/2 lb american cheese
1/2 c butter or margarine
1 bag(s) (16 oz.) frozen vegetable blend containing broccoli, cauliflower and carrots, thawed and drained
1 c (about 30) crushed butter crackers

Steps:

  • 1. Cut cheese into chunks.
  • 2. Place in a microsafe 1-quart casserole dish with 1/4 cup butter.
  • 3. Microwave at MEDIUM HIGH power (roast) for about 4 minutes or until melted.
  • 4. Stir every 1 1/2 minutes.
  • 5. Add vegetables to casserole.
  • 6. Mix well.
  • 7. Melt remaining butter in a bowl at HIGH power for 30 seconds.
  • 8. Stir in cracker crumbs.
  • 9. Sprinkle buttered crumbs over casserole.
  • 10. Microwave at MEDIUM HIGH power (roast), uncovered, for about 10 minutes, rotating 1/2 turn after 5 minutes.
  • 11. Let stand 2 to 3 minutes before serving.

8 ounces medium egg noodles
1 cup water
1 1/2 cups chicken broth
16 ounces frozen broccoli cauliflower red sweet pepper mix, thawed
1 onion, chopped
2 cups chopped cooked chicken
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded swiss cheese

Steps:

  • In 3 quart microwave safe casserole dish, mix noodles, water and chicken broth.
  • Cover with lid and microwave on high for 6 minutes, stirring once during cooking.
  • Add vegetables, onion, chicken and seasonings.
  • Cover and microwave on high for 7-9 minutes, stirring once during cooking, until vegetables are hot,crisp and tender and noodles are tender.
  • Stir in half of cheese and mix well.
  • Sprinkle casserole with remaining cheese.
  • Cook, uncovered, on high for 2-3 minutes until cheese is melted.
  • To freeze casserole, do not thaw vegetables.
  • Cook noodles as directed above and then cool in refrigerator until cold. Add vegetables, onion, chicken, seasonings, and half of cheese; sprinkle with remaining cheese, wrap well, label, and freeze up to 3 months.
  • To thaw and reheat, thaw casserole overnight in refrigerator. Microwave on medium for 3-5 minutes, stirring once. Then microwave on high for 1-3 minutes until noodles and vegetables are tender and casserole is thoroughly heated.

1/2 cup onion, chopped
3 stalks celery
1/2 teaspoon poultry seasoning
1/2 cup margarine
2 cups chicken, chopped
1 cup cashews
1 (10 3/4 ounce) can cream of mushroom soup
3 cups chow mein noodles

Steps:

  • Freezing: Saute onion, celery, and poultry seasoning in butter.
  • Mix in the chicken and cream of mushroom soup.
  • Bag the mixture in a gallon bag.
  • Bag the cashews.
  • Bag the chow mein noodles.
  • Put all in a produce bag.
  • Preparation: Thaw.
  • Spray the bottom of a casserole pan with a non-stick spray.
  • Next, mix the chicken mixture and cashews together, then spread in the bottom of the greased casserole pan.
  • Top with chow mein noodles.
  • Bake in a 350° oven for 30 minutes, or until bubbly.

Another Once a month meal that's sure to please. My little girl likes these because they pick up easily in her hands! *I revised this recipe based on several folks pointing out that I had made a mistake on the amount of cream cheese. Thank you so much for the input!

2 cups chopped cooked chicken
1 (6 -8 ounce) package cream cheese, softened
1 tablespoon chives, chopped
2 tablespoons milk
salt
1/2 cup seasoned croutons, crushed to crumbs
2 (8 ounce) packages refrigerated crescent dinner rolls
1/4 cup melted margarine

Steps:

  • Mix chicken, cream cheese, chives, milk, and salt in a medium bowl (mixing with hands works best) to make filling, and store in a 1 qt freezer bag.
  • Put crouton crumbs in another 1 qt bag, attach it to bag of chicken filling, and freeze.
  • Refrigerate crescent rolls.
  • To prepare for serving, thaw chicken mixture.
  • Preheat oven to 350°F.
  • Unroll crescent rolls.
  • Each tube will contain 4 rectangles of dough with a diagonal perforation.
  • Press dough along each perforation so the rectangle halves will not separate.
  • Place about 1/4 cup of the chicken mixture into the center of each rectangle.
  • Fold dough over the filling, and pinch the edges to seal tightly.
  • Dip each packet in melted margarine, and coat with crouton crumbs.
  • Place packets on a baking sheet.
  • Bake for 20 minutes or until golden brown.
  • Packets are good either hot or cold.

1 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
3/4 cup water
1/2 teaspoon dried Italian seasoning
2 cups elbow macaroni
8 ounces cream cheese, cubed
3/4 cup milk
1/3 cup sour cream
3/4 cup grated parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees. Brown ground beef, onion and pepper in saucepan. Cook until beef is done. Drain well.
  • Add tomato paste, tomato sauce, water, and dried Italian seasoning and stir well to blend.
  • Let simmer for 10 minutes.
  • Meanwhile, cook elbow macaroni as directed on package. While macaroni is cooking, combine cream cheese and milk in medium bowl. Cook in microwave on medium power for 2-3 minutes, stirring once halfway through cooking. Remove from microwave and stir with wire whisk until sauce is smooth.
  • Drain noodles and add to cream cheese sauce along with sour cream and 1/2 cup Parmesan cheese; stir.
  • In 2 quart casserole dish, place all of cream cheese mixture. Top with all of the ground beef mixture and sprinkle with remaining 1/4 cup Parmesan cheese.
  • Bake at 350 degrees for 20-30 minutes until casserole is bubbly.
  • To freeze, add 1 tablespoons cornstarch to the cream cheese sauce. Prepare casserole as directed, except instead of baking, chill in refrigerator. Wrap well and freeze up to 3 months.
  • To thaw and reheat, thaw casserole overnight in refrigerator.
  • Bake, covered, for 25-35 minutes 5 minutes longer until bubbly.

1 (8 ounce) package wide egg noodles
3 (4.5 ounce) cans chunk chicken, drained
8 ounces cooked ham, diced
8 ounces shredded Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
½ cup 2% milk
½ cup sour cream
2 tablespoons butter
⅓ cup seasoned bread crumbs
¼ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Add egg noodles and cook at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Combine drained noodles, chicken, ham, and Swiss cheese in a large mixing bowl; mix until well combined.
  • Stir together cream of chicken soup, milk, and sour cream in a separate bowl until smooth. Pour sauce over noodles and mix until sauce is well distributed. Transfer mixture to a large microwave-safe casserole dish.
  • Place butter in a microwave-safe bowl. Cook on high until melted, about 30 to 45 seconds. Add bread crumbs and Parmesan cheese. Mix until well blended and crumbly and sprinkle on top of casserole.

3/4 cup shredded monterey jack cheese
3/4 cup shredded cheddar cheese

1/4 cup sliced green onion
6 beaten eggs or 1 1/2 cups frozen fat-free liquid egg product
1 (12 ounce) can evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Grease a 2 quart square baking dish.
  • arrange potatoes evenly on bottom of dish.
  • sprinkle with cheese, ham, green onion.
  • in medium mixing bowl, combine eggs, milk, salt and pepper. Pour egg mixture over potato mixture in dish. Freeze.
  • on serving day, thaw completely. Bake uncovered in a 350 degree oven for 40-45 min or until center appears to be set. Let stand 5 min before serving. If you prefer, extra cheese can be sprinkled on top the last 15 min of baking.

  • Begin by steaming your broccoli and cauliflower together in a deep pan (I used a Dutch Oven). Place all florets in about 1 inch of water and a pinch of salt. Cover and set to medium heat. Steam until all florets are just tender, which took 16-18 minutes for me. When the broccoli and cauliflower are nearly done, preheat the oven to 375F. Remove broccoli and cauliflower from heat and strain to remove all liquid from the pan. Set the veggies aside to cool.
  • Return the same pan to medium heat and add 1 tablespoon of olive oil. When the oil is hot, add onion and cook for 2 minutes. Add spinach and garlic. Continue cooking, stirring frequently, until spinach is wilted and onions are beginning to turn translucent. Remove from heat and let cool.
  • In a large mixing bowl, add eggs, greek yogurt, and milk. Stir until completely mixed. Add rotisserie chicken, 1 cup cheese (save the other 1/2 cup), red chili pepper flakes, basil, parsley, black pepper, and salt. Stir until almost completely mixed.
  • Finally, add all cooked vegetables and stir until everything is completely mixed. Add to 9×13 greased baking dish.
