8 carrots, peeled
1 cauliflower
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon prepared mustard
1 cup chicken broth
1/2 cup whipping cream
1 1/2 cups swiss cheese, shredded
2 green onions, sliced

Steps:

  • Cut carrots 1/4 inch slanting slices (approx 4 cups) and break cauliflower into flowerlets. Cook in boiling salted water 10 mins til tender. Plunge into cold water.
  • Melt butter, mix in flour and mustard. Cook til bubbly. Remove from heat and add chicken broth and cream.
  • Cook, stirring til thickened.
  • Gradually add 1 cup of cheese, stirring til melted.
  • Combine veggies and sauce in 2 qt casserole. Sprinkle with remaining cheese. Bake 350 15 mins (35 mins if chilled before baking).

2 tablespoons margarine
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1 1/2 cups sliced carrots (1/4 inch slices, about 3 carrots)
1 1/2 cups of small cauliflower florets (about 1/2 inch)
snipped fresh parsley
grated parmesan cheese

Steps:

  • Put first 5 ingredients into small steamer bag.
  • Microwave on high for 4-5 minutes.
  • Let stand 5 minutes.
  • Sprinkle on parsley and Parmesan.

2 cups cauliflower florets
1 cup carrot, sliced diagonally
1 medium red onion, sliced and separated into rings
1 cup sliced fresh mushrooms
1 1/2 tablespoons margarine
1 tablespoon lemon juice
1/4 teaspoon dried basil, crushed
1/4 teaspoon dried marjoram, crushed

Steps:

  • Place the cauliflower, carrots and onion in steamer basket.
  • Cover and steam over boiling water for 10 minutes.
  • Add mushroom and steam 5 minutes more or until vegetables are just tender.
  • Meanwhile, melt margarine.
  • Add lemon juice, basil and marjoram.
  • To serve, place vegetables in serving bowl.
  • Pour lemon mixture over vegetables and toss to coat.
