Steps:
- Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
- Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
- Top with remaining cheese and sour cream, and serve.

- Wash the potatoes and cut into 1-inch chunks with a sharp knife and cutting board. Place in a microwave-safe bowl. Microwave on high for 12-15 minutes, tossing every 5 minutes or so, until the chunks can be pierced easily with a fork, but not falling apart.
- While the potatoes are in the microwave, preheat your broiler. Place an oven rack on the second position below the broiler - not the top position.
- Whisk together all the remaining ingredients (from the olive oil to the sea salt) in a separate small bowl to make the sauce. Set aside.
- In a large bowl, combine the tender potatoes and the sauce, and toss to coat.
- Place the potatoes on a rimmed baking sheet lined with aluminum foil, parchment paper, or a Silpat pan liner. I think aluminum is best for browning. Broil until brown and crispy, tossing often. Keep your eye on them as they cook so they don't burn! Serve warm.

FAST OVEN ROASTED POTATOES
Love to serve these potatoes, when we are tired of mashed or baked. They are crispy on the outside and white and meaty inside. The microwave really speeds up the cooking time. Red potatoes work the best, they turn out on the sweet side, but regular Idaho or russets are fine. Margarine works the best, as butter tends to burn.

- Peel and quarter potatoes.
- (If using reds that are blemish free, skins can be left on).
- Place in microwavable bowl, with water.
- Cover.
- Microwave on high for 6 minutes.
- Stir.
- Microwave 5 more minutes.
- (Potatoes may still be a little hard, that is okay) Drain.
- Place in 8 x 8 oven baking dish.
- Pour margarine over potatoes.
- Place directly under broiler.
- Broil until tops start to brown slightly all over.
- (Approx. 6 minutes) Turn potatoes and broil until lightly golden on other side.
- Remove and serve with salt and pepper.

- 1. Heat first six ingredients on HIGH POWER for one minute.
- 2. Mix and coat the potatoes in the drippings and seasonings that were heated. Cover with plastic wrap and cook 6 minutes on HIGH POWER.
- 3. Stir inwards (circular) or toss and microwave on HIGH POWER for 6 more minutes.
- 4. Rest for 5 minutes. Serve and enjoy.
- 5. I sometimes add an onion cut up and a clove of garlic finely chopped. I put the first 6 ingredients into a zip lock bag and heat and then add potatoes. Toss and place in pan.
