EASY OATMEAL BARS (4 INGREDIENTS!)
Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

Steps:
- Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
- Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
- Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

PERFECT MICROWAVE OATMEAL FOR ONE
I used to fix myself hot oatmeal every day, even when I was working. I guess I'm lazier now, and not willing to clean that pot day after day. SO, after much trial and error, I figured out how to do it right in the ce4ereal bowl, in the microwave. Pre-loading single servings -- everything but the water -- into snack-size zip bags make this an even quicker way to have my oatmeal any day I want it.

- Put everything into a microwave safe bowl. You need one deep enough to avoid boil-over messes.
- Microwave on HIGH for 2 minutes.
- Stir and eat with a little milk and a sliced half banana. Yum!
MICROWAVE OATMEAL JAM BARS
I've had this recipe for many years. We got our first microwave in 1983 and this recipe was in the book that came with it. (Sharp Carousel microwave cookbook) It's quick, easy and delicious. The recipe says it makes 32 small bars, but it's hard to cut them that small.

- 1. Lightly grease an 8-inch, heat-resistant, non-metallic baking dish.
- 2. In a medium-sized bowl, cream butter and sugar together until fluffy. Stir in flour, salt, baking soda and oats. Combine until well blended.
- 3. Press one-half of mixture into bottom of prepared baking dish.
- 4. Heat, uncovered, on FULL POWER 5 minutes.
- 5. Spread jam evenly over baked oat mixture.
- 6. Crumble remaining oat mixture over jam and press lightly.
- 7. Heat, uncovered, on FULL POWER 7 minutes. Test for done-ness with a toothpick.(It should come out clean).
- 8. Allow to cool and cut into bars.

STRAWBERRY OATMEAL BARS
This is a fast recipe using basic ingredients. The beauty of this recipe is how customizable it is. A favorite of mine is using peaches, pecans, white chocolate, and 1/4 teaspoon cinnamon.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 13x9-inch glass baking dish with cooking spray.
- Place butter in a large microwave-safe bowl and microwave for 1 minute. If butter has not melted, microwave 30 seconds longer. Pour 1/2 cup plus 2 tablespoons corn syrup, brown sugar, and vanilla extract into melted butter; stir until combined. Add oats and mix to combine; mixture may be a bit thick but do not add additional liquid.
- Stir in strawberries and white chocolate chips. Spoon batter into the prepared baking dish and lightly press mixture into the dish.
- Bake in the preheated oven until golden on top, about 25 minutes. Allow to cool before slicing into bars.

- Mix first five ingredients and put in a 9x13 inch glass pan.
