PERFECT MICROWAVE RICE
Steps:
- Place all ingredients in a large glass measuring or any microwave safe bowl. Note: the rice expands during cooking, so be sure to choose a container that is large enough. Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.
MICROWAVE MIXED RICE
Leftovers are the simplest thing to take to work for lunch. Sometimes you just end up with them. But if you are planning ahead you can cook a little more than you are going to eat at dinner so you have the makings of the next day's lunch. This combination of cooked rice, vegetables and meat can accompany virtually any sauce you can imagine putting on it: vinaigrette, sesame dipping sauce, tahini sauce, pico de gallo, onion chutney, pesto, hummus. Simply pop it in the office microwave for a couple of minutes and eat.

Steps:
- In a bowl, combine the rice, water, soy sauce, sesame oil, and bacon. Stir, then microwave, covered, for about 6-8 minutes until the rice is fully cooked.
- Mix the frozen peas and carrots into the rice.
- In a microwaveable mug, beat the eggs with the salt.
- Microwave the eggs and the rice again for about 1-2 minutes, until the eggs are fully cooked.
- Break up the egg into small bits, then mix it in with the rice.
- Garnish with scallions, then serve!

PERFECT EASY MICROWAVE RICE
I got this recipe with the cookbook that came with my first Microwave and I've been using it ever since! The rice comes out perfect every time. No muss, no fuss and can be served in the casserole dish you cooked it in. You can also use this method for brown rice but increase your cooking time a little.

Steps:
- Using a 2 quart casserole dish with lid, put rice, hot water, butter and salt in dish. Stir. (I put my casserole dish on a plate in the micro as sometimes the water boils over a little. Saves cleanup after).
- Cover, and microwave on high power 5 minutes. Stir with fork (careful watch the steam!)
- Cover and put back in microwave and cook on medium this time for 15 minutes.
- Remove lid (careful again!) and fluff with fork.
- Let stand 2-3 minutes.
- Serve.
