CHICKEN IN MUSHROOM SAUCE FOR FOUR
You won't have to heat up the kitchen to prepare this saucy microwave entree. I've made this recipe for covered dish dinners, and it always goes over wonderfully. -Betty Claycomb, Alverton, Pennsylvania.

Steps:
- In a 2-qt. microwave-safe dish, combine the mushrooms and onions. Cover and microwave on high for 2-4 minutes or until mushrooms are tender; drain and set aside. , In the same dish, melt the butter. Stir in flour until smooth; add the yogurt, water, broth, bouillon and pepper. Stir in mushroom mixture. , Arrange chicken in another 2-qt. microwave-safe dish; top with mushroom sauce. Cover and microwave at 50% power for 15-20 minutes or until a thermometer reads 170°, stirring sauce twice.

Steps:
- Place butter in 1 quart casserole.
- Microwave at High 30 to 45 seconds, or until melted.
- Add mushrooms and onion.
- Microwave at High 1 1/2 to 2 1/2 minutes, or until vegetables are tender, stirring after half the time to coat with butter.
- Stir hot water, vermouth, Worcestershire sauce, flour, bouillon granules, oregano, basil, salt and pepper into mushrooms and onion.
- Microwave at high 2 1/2 to 3 1/2 minutes, or until thickened, stirring once.
- Stir in chicken livers.
- Cover with wax paper.
- Reduce power to 50%.
- Microwave 8 to 10 minutes, or until meat is no longer pink, stirring after half the time (centers will be slightly pink).
- Let stand 5 minutes.

Steps:
- Preheat the oven to 350 degrees F.
- Spread the bread cubes out on a baking sheet and toast in the oven until golden and crisp, about 5 minutes. Set aside to cool.
- Trim the dry part from the bottom of the cremini stem and quarter.
- Stem and quarter the shiitakes.
- Melt 2 tablespoons of the butter with the olive oil in a large skillet over medium heat.
- Add the mushrooms, shallots, garlic, and rosemary and cook, stirring occasionally, until the vegetables soften and brown, about 25 minutes.
- Add an additional tablespoon of butter, if needed, to prevent sticking. Carefully add the Cognac (if working over gas, pull the skillet from the heat), and simmer until the liquid is slightly syrupy.
- Stir in the chicken broth and salt and bring to a simmer.
- Whisk the cream, eggs, and pepper, to taste, in a large bowl.
- Add the bread, mushroom mixture, and parsley and toss until the bread is moistened. Transfer the dressing to a buttered 1 1/2-quart baking dish. Bake, uncovered, until the dressing sets and the top browns, about 1 hour. Let dressing sit for 15 minutes before serving.

Steps:
- Place 2 tablespoons butter in small custard cup.
- Microwave at 10% 20 to 40 seconds or until soft.
- Stir in chives, garlic powder and white pepper.
- Shape the butter mixture into 2 rectangles on small square of wax paper.
- Freeze 10 minutes, or until firm.
- Pound chicken breasts with flat side of meat mallet to 1/8 inch thickness; set aside.
- Place remaining 3 teaspoons butter in small bowl.
- Increase power to High; microwave 30 to 45 seconds, or until melted.
- Set aside.
- Combine corn flake crumbs, Parmesan cheese, parsley flakes and paprika in shallow dish or on sheet of wax paper; set aside.
- Place frozen butter rectangle at end of pounded chicken breast.
- Fold end over butter.
- Fold in sides, then continue rolling.
- Secure seam with wooden picks.
- Roll in melted butter, then in crumbs.
- Place seam side down in 14-ounce square individual casseroles.
- Microwave at High 2 1/2 to 4 minutes, rotating and rearranging chicken after half the time, or until no longer pink and uices run clear.
