1 cup uncooked instant rice
1/2 cup butter
3 cups frozen chopped broccoli, thawed
6 ounces process cheese (Velveeta), cubed
1/3 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green pepper
1/2 teaspoon garlic powder
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 cups cubed cooked chicken

Steps:

  • Microwave rice according to package directions; set aside. Place butter in a microwave-safe 2-1/2-qt. dish; cover and microwave on high for 2 minutes or until melted. Add the broccoli, cheese, onion, celery, green pepper and garlic powder., Cover and microwave on high for 2-4 minutes or until vegetables are crisp-tender. Stir in the soup, chicken and rice. Cover and microwave at 70% power for 2 minutes or until heated through.

A broccoli chicken recipe without the soup. To make it a one dish meal, simply line bottom of the casserole with either 2 cups of cooked pasta or cooked rice. To make it lighter, use Becel instead of butter and Low fat sour cream. You will see how easy it is to make a sauce in your microwave; don't forget to stir every minute or so.

2 tablespoons butter
1 shallot, minced
2 tablespoons easy-blend flour
3/4 cup chicken broth
1/3 cup milk
1/2 teaspoon curry powder
salt and pepper
1/4 cup sour cream
2 1/2 cups cooked chopped chicken
2 cups chopped cooked broccoli
1/2 cup shredded cheddar cheese
1/2 cup shredded provolone cheese

Steps:

  • Melt butter in microwave dish. Add shallot and microwave until tender, about 2 minutes.
  • Mix in flour and slowly stir in chicken broth.
  • Microwave 2 minutes.
  • Stir in the milk and microwave 4 minutes until sauce begins to thicken stopping after 2 minutes to stir.
  • Add curry, salt and pepper to taste.
  • Microwave 1 more minute. Stir in sour cream.
  • Place cooked chicken on bottom of casserole. Add broccoli over the chicken. Pour sauce evenly over the broccoli. Combine cheeses, and sprinkle half over the casserole.
  • Loosely cover casserole an microwave for 8 minutes.
  • Remove from microwave and sprinkle with remaining cheese.
  • Allow to set for 5 minutes, until cheese melts.
  • Tip: If you want a golden topping set under broiler for a few minutes.
  • If you add rice or pasta to this dish you should microwave an extra 4 minutes.

2 (10 ounce) packages frozen broccoli (or leftover cooked broccoli)
2 cups cooked chicken or 2 cups cooked turkey, diced, sliced, shredded
1 cup cheddar cheese or 1 cup American cheese
1 (12 ounce) can evaporated milk or 1 1/2 cups half-and-half
1 (10 3/4 ounce) can cream of mushroom soup
3 tablespoons lemon juice
1 1/4 teaspoons curry powder (or more to taste)
1/3 cup parmesan cheese
4 -5 dashes paprika

Steps:

  • Place the broccoli in a colander and run under cold water to thaw if needed.
  • Fill the bottom of a 2 quart glass casserole with the broccoli. Cover this layer with the chicken. (I use leftover chicken or turkey, or canned chicken, or even lunch meat.) Finally, cover the chicken with thinly sliced or grated cheese. (1 cup = about 8 slices of cheese.).
  • In a bowl, mix milk, soup, lemon juice, and curry powder with a whisk. Pour this over the cheese.
  • Microwave on High for about 8 minutes, turning the dish halfway through cooking time.
  • Sprinkle with the Parmesan and the paprika. Microwave on High for another minute or two if desired.
  • Note-You can also bake this at 350 degrees for 25 minutes, add the toppings, and bake 5 more minutes.

1 cup pearl barley
3 cups low sodium chicken broth
2 tablespoons olive oil
1 lb boneless skinless chicken breast, cut into 1 inch cubes
1 carrot, large, finely chopped
1 onion, small, finely chopped
2 teaspoons fresh thyme leaves, chopped
2 garlic cloves, finely chopped
8 ounces mushrooms, thinly sliced
1/4 cup water
6 cups broccoli florets
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400.
  • In large bowl, stir together barley and broth. Cover with vented plastic wrap, microwave on high 20-25 minutes or until most of the liquid is absorbed, stirring once.
  • Meanwhile, in large skillet, heat 1 Tbsp olive oil on med-high. Add chicken; sprinkle with 1/4 tsp each salt and pepper. Cook 4 minutes or until golden, stirring once. With slotted spoon, transfer chicken to bowl.
  • To skillet, add carrot, onion, and thyme. Cook 3 minutes, stirring.
  • Add garlic to skillet, cook 30 seconds, stirring, then add mushrooms and water, scraping up browned bits. Cook 2 minutes; remove from heat.
  • Stir in chicken and barley; transfer to shallow 3 qt baking dish.
  • Toss broccoli with 1/8 tsp salt and remaining oil; arrange on top of barley mixture.
  • Bake 20-25 minutes or until broccoli is tender.
