1 ½ cups whole milk
½ cup heavy cream
2 tablespoons powdered sugar, or to taste
½ teaspoon espresso powder
8 oz 72% dark chocolate
whipped cream, for serving

Steps:

  • In a 1.5-quart saucepan over medium heat, whisk together whole milk, heavy cream, powdered sugar, and espresso powder until hot.
  • Small bubbles will appear around the edges and the mixture may start to steam. Do not allow the mixture to boil.
  • Turn heat to low and stir in chopped chocolate until melted completely.
  • Serve warm, topped with whipped cream.
  • Enjoy!

This make-ahead cocktail, created by San Francisco bartender Gillian Fitzgerald, is lightly smoky and wonderful with dessert. The chocolate bitters make the drink-and they're available online. Adding water along with the ingredients, then freezing the batched drink, means you won't need to shake it over ice.

2 Tbsp. plus 1 ½ tsp. honey
1 1/2 cups mezcal
1/4 cup orange liqueur (preferably Pierre Ferrand Dry Curaçao)
2 1/2 tsp. chocolate bitters, such as Fee Brothers
8 orange twists

Steps:

  • Mix honey and 2 Tbsp. boiling water in a quart-size jar. Stir to dissolve honey; let cool. Stir in mezcal, orange liqueur, bitters, and 1/2 cup plus 1 Tbsp. water. Seal and freeze at least 2 hours and up to 2 weeks.
  • To serve, turn jar gently to mix. Place ice in a rocks glass and pour in cocktail. Squeeze oils from orange twist over, rub peel around rim of glass, then garnish glass with peel.

2 oz dark chocolate, 70%, chopped
1 tablespoon unsweetened cocoa powder
½ teaspoon kosher salt
⅓ cup heavy cream
2 tablespoons granulated sugar
1 tablespoon dark brown sugar
¾ cup milk, of choice
1 oz mezcal
1 oz Madeira wine
whipped cream, for serving
chocolate shaving, for serving
1 glass mug

Steps:

  • Make the hot fudge sauce: In a medium heat-proof bowl, mix together the dark chocolate, cocoa powder, and salt.
  • In a small, heavy-bottomed saucepan, combine the heavy cream, granulated sugar, and brown sugar. Cook over medium heat, stirring gently, until the mixture begins to boil, about 5 minutes. Remove the pan from the heat and pour over the chopped chocolate mixture. Let sit for 1 minute, then whisk until silky and smooth. Enjoy immediately or stored in an airtight container in the refrigerator for up to 2 weeks. If using as a drizzle, reheat the sauce in the microwave before using.
  • Make the cocktail: In a small saucepan over medium heat, whisk together the milk and ¼ cup of the hot fudge sauce. Bring to a gentle simmer, then add the mezcal and Madeira. Stir to combine, then pour into an 8-ounce glass mug.
  • Top the hot chocolate with freshly whipped cream and chocolate shavings. Serve immediately.
  • Enjoy!

  • Make a small slice in the centre of a wedge of lime and run it around the rim of a heatproof mug. Combine sugar and cinnamon in a small saucer or wide and shallow bowl. Dip rim of heatproof mug in the cinnamon sugar mix until rim is well-covered.
  • Add water a small saucepan over medium heat, bring to a boil. Add 6 tbsp of Mayan drinking chocolate. Reduce heat to a simmer and whisk until thick and smooth.
  • Add milk to liquid chocolate and whisk until milk and chocolate are combined and milk is heated through, about 3-5 minutes.
  • Add 1 oz of mezcal to prepared heatproof mug, pour in hot chocolate, garnish with cinnamon stick and marshmallows, as desired. Enjoy!
