MEXICAN MEATLOAF

2 tablespoons olive oil
1/2 cup finely chopped onion
1 medium carrot, finely chopped
1 rib finely chopped celery
1 garlic clove, minced
1 pound ground beef
6 ounces soft Mexican chorizo, removed from casing and crumbled
1 poblano chile, roasted, peeled, and diced
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
2 eggs, well beaten
1/4 cup ketchup
1/4 cup sour cream or Mexican sour cream
1/2 cup dried bread crumbs
2 medium tomatoes, cored
1/4 medium white onion
2 garlic cloves, unpeeled
1 to 3 serrano chiles
1/4 cup brown sugar
1 canned chipotle chile in adobo sauce, minced
1 tablespoon yellow mustard
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery, and garlic. Cook, stirring often until vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
  • In a large bowl combine the sauteed vegetables, ground beef, chorizo, and diced poblano chile.
  • In a medium bowl, combine the salt, pepper, cayenne, cumin, and eggs. Add the ketchup and sour cream. Mix well with a fork and pour it on top of the mixed meats. Sprinkle with bread crumbs and mix thoroughly with clean hands.
  • Put the mixture into a 9 by 13-inch loaf-pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, about 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
  • Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, garlic cloves, and serrano chiles. Cook, turning frequently, until lightly charred on all sides. Peel the garlic cloves. Add all the charred ingredients to a blender. Pulse until chunky, then pour into a small skillet. Stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes. Season with salt, to taste.
  • Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf and serve.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

1/4 c old fashioned or quick oats, uncooked
2 eggs, beaten
1 Tbsp worcestershire sauce
1 tsp pepper
8 oz cream cheese, softened
4 oz can green chiles, chopped, drained
3/4 c salsa

Steps:

  • 1. Combine meat, oats, eggs, worcestershire sauce and pepper; mix well.
  • 2. On wax paper, press meat mixture into 20x10 1/2-inch rectangle.
  • 3. Combine cream cheese and chiles; mix well.
  • 4. Spread cream cheese mixture over meat mixture to within 1 inch of outer edge.
  • 5. Roll, jelly roll fashion, starting at narrow end.
  • 6. Place in 12x8 inch baking dish.
  • 7. Bake at 350, 40 minutes.
  • 8. Top with salsa; continue baking for 10 minutes.
  • 9. Let stand 10 minutes before serving.

2 eggs
1 cup fresh breadcrumb
1 (4 ounce) can taco sauce, your desired heat level
1 medium onion, chopped
1 garlic clove, crushed
1 tablespoon chili powder
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 (16 ounce) can refried beans, heated
1 (4 ounce) can diced green chilies, drained
1/4 lb shredded cheddar cheese
1 cup tortilla chips, crushed

Steps:

  • Place ground chuck in a bowl.
  • Place remaining ingredients in blender and mix.
  • Pour and stir into ground chuck.
  • Roll out meat mixture into a rectangle.
  • Spread refried beans on meat, arrange peppers and sprinkle with cheese.
  • Roll up, jelly roll fashion, place seam side down in a 9 x 5 loaf pan.
  • Sprinkle tortilla chips on top.
  • You can add more cheese on top if desired.
  • Bake 60 minutes and let set 15 minutes before slicing.
  • Serve over a bed of shredded lettuce and top with sour cream if desired.

  • Turn pan with short end towards you. Using the wax paper, lift the filled meatloaf and gently start rolling it away from you to form a roll until you end up with the seam at the bottom. Pull the wax paper out and use your hands to finish forming the meatloaf and seal the ends. Place in the oven on the middle rack.
  • Prepare the glaze by mixing all of the ingredients listed, set aside. You will bake the meatloaf for 1 hour, rotating the pan halfway through the cooking time. Remove meatloaf from oven, coat generously with the glaze on top and sides. Bake for another 15 minutes. Last two minutes under the broiler. Remove from oven and let rest for a good 20 minutes before slicing.
