Chocolate Cherry Fudge image

This chocolate cherry fudge is unique from others, and festive for the holidays. It's a recipe my husband really enjoys. I've made it for our Homemaker group's Christmas party. -June Lindquist, Hammond, Wisconsin

Number Of Ingredients 5

1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1/2 cup coarsely chopped almonds
1/2 cup chopped candied cherries
1 teaspoon almond extract

Steps:

  • In a microwavable bowl, combine milk and chocolate chips. Microwave on high until chips are melted and mixture is smooth when stirred, about 1 minute. Stir in almonds, cherries and extract. Spread evenly in a greased 8-in. square pan. Cover and chill until firm. Cut into squares. Store, covered, in the refrigerator.

These are just a little bit different from the recipe already posted here so I wanted to post it to compare the two. Prep time includes chill time.

3 cups flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
1 cup granulated sugar
1/2 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
60 miniature marshmallows
granulated sugar, for rolling cookies

Steps:

  • Preheat oven to 350°F.
  • In large bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside. In large mixer bowl, beat butter, the 1 cup granulated sugar, and brown sugar at medium speed until light and fluffy.
  • Beat in eggs one at a time; add vanilla.
  • Add flour mixture; beat at low speed until combined. Cover and chill at least 1 hour.
  • Shape one level tablespoon of dough around each marshmallow; seal edges. Roll in granulated sugar.
  • Place 2 inches apart on parchment-lined baking sheets. Bake until cookies crack, about 6 to 8 minutes.
  • Cool on baking sheet for 2 minutes; transfer to wire rack to cool completely.
  • Store in airtight container.

  • Line an 8-inch square baking pan with lightly greased parchment paper or non-stick foil. Set aside.
  • Drain the cherries, reserving 2 tablespoons of the syrup (optional). Rinse the cherries and cut any large cherries in half. Set aside.
  • In a microwave-safe bowl, place the chocolate chips and sweetened condensed milk. Microwave for 90 seconds at 70 percent power. Stir, using the residual heat to full melt the chocolate chips. If needed, microwave at additional 15 second intervals. Stir the mixture until it's smooth.
  • Stir in the cherries and salt into the mixture. For additional cherry flavor, stir in the 2 tablespoons of reserved syrup (optional).
