PEPPERMINT FUDGE
Each bite of Peppermint fudge melts in your mouth and tastes heavenly. The entire recipe only calls for 4 simple ingredients.

Steps:
- Place the white chocolate chips in a microwave safe dish.
- Microwave the chips in 30 second intervals, stirring between each interval until they are melted.
- Stir in the condensed milk, the peppermint extract and 1/2 cup of the crushed candy canes (save the remaining for the top)
- Line an 8X8 baking dish with foil or parchment paper.
- Pour the mixture into the pan and top with the remaining crushed candy canes.
- Allow to cool at room temperature and then place in the refrigerator to set (for approximately 1 hour).
- Cut and serve. Enjoy!
- *Notes: If you have problems with the white chocolate being creamy when melted, add a small amount of vegetable oil to the melted chocolate.

QUICK AND EASY PEPPERMINT FUDGE

- Line an 8-by-8-inch square baking pan with aluminum foil. Spray the foil with cooking spray.
- In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk and stir until melted and smooth. Pour into the prepared baking pan and spread to even out the surface. Sprinkle on the crushed candies. Refrigerate for 2 hours.
- Lift the foil out of the pan and peel off the fudge. Cut into small squares.
MEGAN'S PEPPERMINT FUDGE
This is just yummy, and super easy. This recipe was given to me by a friend, and I altered it by adding the peppermint extract and using the Brachs peppermints, as there is no substitute for the wonderful peppermint flavor.

- Melt peppermint kisses and white chocolate chips in microwave, stir to melt. Add frosting, mix well. Add remaining ingredients, mix well. Put into 11x7 or pie plate between pieces of waxed paper, chill overnight.
- To make a double batch, use 3 pie plates. Single batch is better in the 11x7 because it is thinner and then cuts better when it sets up.
- I use Betty Crocker frosting. For some reason you must use the CREAMY variety, but any flavor will do. My friend made some with chocolate frosting, and while it tasted amazing, the appearance left quite a lot to be desired. Okay, let's admit, it looked absolutely horrible.
GRANDDAD'S PEPPERMINT FUDGE
A peppermint take on a classic family fudge.

- Put chocolate chips and marshmallow creme in a large mixing bowl with margarine.
- Combine sugar and evaporated milk in a large pot over medium-low heat. Stir constantly and bring to a rolling boil. Reduce heat to low. Continue to stir gently, making sure you do not scrape the edge of the pot. Use a candy thermometer to keep an eye on the temperature, and heat mixture to 240 degrees F (115 degrees C), 7 to 10 minutes. A small amount of syrup dropped into cold water should form a soft ball that flattens when removed from the water and placed on a flat surface.
- Pour hot sugar mixture over the ingredients in the mixing bowl; stir until combined. Stir in vanilla and peppermint extract until well combined.
- Line a 9x13-inch rimmed baking sheet with waxed paper. Pour in fudge mixture and cool in the refrigerator until completely set, about 2 hours.
- Remove fudge from the refrigerator. Run a sharp knife under hot water and cut fudge into 1-inch squares.

PEPPERMINT FUDGE

- Lightly coat a 9-inch square baking pan with nonstick spray. Line pan with two pieces parchment paper in both directions, leaving 2 inches of overhang on all sides; spray parchment. Place chocolate in a bowl. In a food processor, pulse candies until finely chopped. In a medium saucepan, combine candies, cream, marshmallows, butter, sugar, and salt over medium-high. Whisk until smooth, 5 minutes.
- Pour mixture through a strainer into bowl with chocolate; let stand 1 minute, then stir until smooth. Pour into baking pan and refrigerate until set, 3 hours. Cut fudge into 1 1/2-inch squares. With a sharp knife, cut 18 candies in half; press a candy half into each square before serving or packing.

- Line a 9-in. square pan with foil. Grease the foil with 1-1/2 teaspoons butter; set aside. , In a large heavy saucepan, combine the sugar, sour cream and remaining butter. Cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil; cook and stir until a candy thermometer reads 234° (soft-ball stage), about 5 minutes., Remove from the heat; stir in white chocolate and marshmallow creme until melted. Fold in peppermint candy and extract. Pour into prepared pan. Chill until firm. , Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in the refrigerator.
