EASY SEAFOOD PAELLA RECIPE



Easy Seafood Paella Recipe image

Easy saffron-infused seafood paella recipe with lobster and shrimp! No need for a special paella pan, a large sturdy skillet like cast iron will work well. Be sure to see the tips for best results. Watch the video and step-by-step tutorial above.

Number Of Ingredients 15

4 small lobster tails (6-12 oz each)
Water
3 tbsp Extra Virgin Olive Oil (I used Private Reserve)
1 large yellow onion, chopped
2 cups Spanish rice or medium-grain rice, soaked in water for 20 minutes and then drained
4 garlic cloves, chopped
2 large pinches of Spanish saffron threads soaked in 1/2 cup water
1 tsp Sweet Spanish paprika
1 tsp cayenne pepper
1/2 tsp chile pepper flakes (I used aleppo pepper)
Salt
2 large Roma tomatoes, finely chopped
6 oz French green beans, trimmed
1 lb prawns or large shrimp or your choice, peeled and deveined
1/4 cup chopped fresh parsley

Steps:

  • In a large pot, bring 3 cups of water to a rolling boil. Add the lobster tails and let boil very briefly (1-2 minutes) until pink. Turn the heat off. Remove the lobster tails with a pair of tongs. Do not discard the lobster cooking water. When the lobster is cool enough to handle, remove the shell and cut into large chunks.
  • In a large deep pan or cast iron skillet, heat 3 tbsp olive oil. Turn the heat to medium-high and add the chopped onions. Saute the onions for 2 minutes then add the rice, and cook for 3 more minutes, stirring regularly. Now add the chopped garlic and the lobster cooking water. Stir in the saffron and it's soaking liquid, paprika, cayenne pepper, aleppo pepper, and salt. Stir in the chopped tomatoes and green beans. Bring to a boil and let the liquid slightly reduce, then cover (with lid or tightly with foil) and cook on low heat for 20 minutes.
  • Uncover and spread the shrimp over the rice, pushing it into the rice slightly. Add a little water if needed. Cover and cook for another 10 minutes or until the shrimp turns pink. Finally, add the cooked lobster chunks. When the lobster is warmed through, turn heat off. Garnish with parsley.
  • Serve the paella hot with your favorite white wine.

Number Of Ingredients 15

3 tablespoons olive oil
1/4 lb sea scallops
1/4 lb shrimp, peeled and deveined
1/2 cup smoked salmon, sliced into 1/2 inch strips
1/2 cup white wine
1 cup heavy cream
1 shallot, peeled and sliced into rings
1/2 tablespoon garlic, minced
1 tablespoon basil, thinly sliced
3 roma tomatoes, seeded & diced
1 tablespoon parsley, chopped
1/3 cup parmesan cheese, shredded
4 cups linguine, already cooked
1/2 teaspoon sea salt
1/4 teaspoon white pepper

Steps:

  • In a large skillet add in your Olive Oil and bring it to a medium high heat, add in the shallots cook for 1-2 minutes,
  • then add in the shrimp and scallops lightly and lightly brown on both sides for about a minute on each side.
  • Add in garlic and stir it around to incorporate it into the pan.
  • Add the wine and reduce for 2-3 minutes. Then add heavy cream and salmon reduce for 1-2 minutes.
  • Season with Sea Salt and White Pepper to taste.
  • Then finish by adding Tomatoes, Basil, and pasta. Turn off heat and fold all ingredients together, let sit for 2-3 minutes.
  • Top with Parmesan and Parsley then serve.

1 medium onion, finely chopped
1 tablespoon olive oil
1-1/2 teaspoons minced garlic, divided
1/2 pound plum tomatoes, seeded and diced
1 teaspoon grated lemon zest
1/4 teaspoon crushed red pepper flakes
1 cup clam juice
1/3 cup white wine or additional clam juice
1 tablespoon tomato paste
1/2 teaspoon salt
1 pound orange roughy or red snapper fillets, cut into 1-inch cubes
1 pound uncooked large shrimp, peeled and deveined
1/2 pound sea scallops
1/3 cup minced fresh parsley
1/3 cup reduced-fat mayonnaise

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add 1/2 teaspoon garlic; cook 1 minute longer. Add the tomatoes, lemon zest and pepper flakes; cook and stir for 2 minutes. Add the clam juice, wine or additional clam juice, tomato paste and salt. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through., Add the fish, shrimp, scallops and parsley. Cover and cook for 8-10 minutes or until fish flakes easily with a fork, the shrimp turn pink and scallops are opaque. Combine mayonnaise and remaining garlic; dollop onto each serving.

1 lb Hake or halibut
1/2 lb shrimp, cleaned, deveined
1/2 lb baby clams
1/2 cup asparagus, stems removed
2 cloves garlic
1 Tbs. fresh parsley, minced
1 Tbs extra virgin olive oil
1/2 cup white wine
flour
water
salt to taste

Steps:

  • 1. Wash clams, shrimp and fish. Cut filet into manageable chunks. 2. Heat oil in large fry pan over medium-high heat. Add sliced garlic and saute until brown. Remove. 3. Flour fish filet and put in fry pan. Cook 3 minutes and carefully turn over. 4. Add wine, and enough water to almost cover fish. Reduce heat to simmer. 5. After 5 minutes, add asparagus. 6. Let asparagus cook 5 minutes, then add shrimp, clams and salt. Cover and cook 10 minutes or until fish filet is cooked through and liquid reduces to about 50-75% of original amount. 7. Garnish with sauted sliced garlic and parsley.

5 cups water
2 tablespoons lemon juice
1/2 teaspoon salt
2 pounds orange roughy fillets
1 pound uncooked medium shrimp, peeled and deveined
1/2 pound bay scallops
2 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon chicken bouillon granules
1 teaspoon Dijon mustard
Dash pepper
1 cup heavy whipping cream
1 cup shredded Gruyere or Swiss cheese
Hot cooked pasta

Steps:

  • In a Dutch oven, bring the water, lemon juice and salt to a boil. Reduce heat; carefully add fillets and cook, uncovered, for 4 minutes. Add shrimp; cook for 3 minutes. Add scallops; cook 3-4 minutes longer or until fish flakes easily with a fork, shrimp turn pink and scallops are firm and opaque. Strain, reserving 1-1/2 cups cooking liquid., In a large saucepan, melt butter. Stir in the flour, bouillon, mustard and pepper until smooth. Gradually add cream and reserved liquid. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the cheese and seafood mixture; heat through. Serve with pasta.

1 cup white wine or chicken broth

1 teaspoon sugar
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano

9 ounces uncooked large shrimp, peeled and deveined
2 tablespoons minced fresh parsley

Steps:

  • In a large skillet, saute onion in butter and oil until tender.Add garlic; cook 1 minute longer. Add wine. Bring to a boil; cook until liquid is reduced to 1/2 cup. Add the tomatoes, rosemary, sugar, oregano, salt and pepper. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 15 minutes., Meanwhile, cook linguine according to package directions. Add scallops and shrimp to tomato mixture; cook for 4-5 minutes or until shrimp turn pink and scallops are opaque. Stir in parsley. , Drain linguine. Serve seafood mixture with linguine; garnish with cheese if desired.

  • Finely mince 3 cloves of garlic, finely dice 1/2 of an onion, season 12 raw jumbo shrimp (peeled and deveined) with sea salt and freshly cracked black pepper, season 3 cod fillets with sea salt and freshly cracked black pepper, cut 1 cleaned tube of squid into small squares and rinse about 16 fresh clams under cold running water
  • Heat a fry pan with a medium-high heat and add 2 tbsp of extra virgin olive oil, after 2 minutes add the cod fillets into the pan skin side up, after 3 minutes flip the cod (the thickness of my fillets where 1 1/2 inches), after 2 minutes remove the cod fillets from the pan, transfer to a dish and cover with foil paper
  • Using the same pan with the same heat add the squid and mix around with the oil, after 1 minute make a well in the middle and add the diced onions and minced garlic, mix around with the oil and cook for another minute, then season everything with sea salt and freshly cracked black pepper and mix it all together, then add 2 1/4 cups of fish broth, pinch in 1/2 a tsp of saffron threads and season again with sea salt, give it a quick mix, once it comes to a boil let it boil for an extra minute to let the saffron really infuse into the broth, then add 1 cup of round rice and mix around so everything is evenly distributed
  • About 8 minutes after adding the rice into the pan add the shrimp, add the cod fillets back into the pan and the fresh clams, you can give the pan a quick shake so everything is well combined, 4 minutes later lower the fire to a low-medium heat and let it simmer, after 5 minutes place a lid on the pan and turn off the heat
