3 boneless skinless chicken breast halves, cut in 3/4 inch pieces
2 garlic cloves, minced
2 tablespoons olive oil
4 roma tomatoes, chopped
1 (14 ounce) can artichoke hearts, drained and quartered
1 (2 1/4 ounce) can sliced pitted ripe olives, drained
1/2 teaspoon dried Italian seasoning, crushed
1/4 teaspoon fresh ground black pepper
2 cups romaine lettuce
1 cup crumbled feta cheese (4 oz.)
1/3 cup fresh basil leaf (torn into pieces)
4 slices crusty Italian bread or 4 slices French bread

Steps:

  • In a large skillet cook and stir chicken and garlic in hot oil over medium-high heat until chicken is browned.
  • Stir in tomatoes, artichokes, olives, seasoning, and pepper. Bring to boiling; reduce heat.
  • Simmer, covered for 10 minutes or until chicken is no longer pink.
  • Top with lettuce and cheese.
  • Cook covered for 1-2 minutes more until lettuce starts to wilt.
  • Sprinkle with basil and serve on bread.

Number Of Ingredients 12

1 tablespoon olive oil
8 ounces lean ground beef (90% lean)
1/4 cup finely chopped onion
2 garlic cloves, minced
1 can (8 ounces) tomato sauce
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
2 whole wheat pita breads (6 inches), cut in half horizontally
1 medium tomato, seeded and chopped
1/2 cup fresh baby spinach, thinly sliced
12 Greek pitted olives, thinly sliced
1/2 cup shredded part-skim mozzarella cheese
1/4 cup crumbled feta cheese

Steps:

  • Heat oil in a large nonstick skillet; cook the beef, onion and garlic over medium heat until meat is no longer pink, 5-6 minutes; drain. Stir in tomato sauce and rosemary; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 6-9 minutes., Place pita halves, cut side up, on a baking sheet. Top with meat mixture, tomato, spinach and olives. Sprinkle with cheeses. Bake at 400° until cheeses are melted, 4-6 minutes.
