This is my all time favorite recipe for meatloaf. You can substitute the ketchup for barbecue sauce.

Number Of Ingredients 6

1 pound ground beef
¾ cup cooked rice
1 tablespoon brown sugar
¾ cup chopped onion
1 tablespoon ketchup
½ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Spread remaining 1/2 cup ketchup over the top of the loaf. Bake for 15 more minutes.

Steps:

  • In a large bowl, mix all ingredients together until well blended. Pack into a 9x5 inch loaf pan, cover with foil, and bake at 350℉ (180℃). for 1½ hrs (removing foil after 30 mins). Even when cooked through, meat will still be slightly pink because of the ketchup. Drain off fat, and let the meat loaf rest for 5 minutes before slicing to serve.

2 large eggs, beaten
4 cups cooked wild rice
2 cups shredded cheddar cheese
1 cup dry bread crumbs
1 cup finely chopped onion
1/2 cup all-purpose flour
1-1/4 teaspoons salt
1 teaspoon rubbed sage
3/4 teaspoon pepper
1 pound uncooked lean ground beef

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. , Firmly press into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 70 minutes. Cover with foil during the last 15 minutes if the top is browning too quickly.

  • In a large bowl, combine the ground beef, uncooked rice, onion, bell pepper, garlic, salt, pepper, herbs, Worcestershire sauce, egg, ketchup, milk, and bread crumbs. Using your clean hands (removing rings), mix together all the ingredients. Mix thoroughly but lightly, being careful not to pack the meat too much. This meatloaf mixture will be moister than most recipes at this point. The extra liquid is needed for the rice to absorb while cooking.
  • Place in prepared loaf pan. Bake 30 to 40 minutes or until meatloaf reaches an internal temperature of 160 degrees F. (do not overcook or it will be dry). Remove from oven and let the meatloaf rest for 15 minutes before serving.
