3 cups frozen broccoli florets, thawed
2 medium potatoes, peeled and cubed
3 medium carrots, sliced
1 medium onion, chopped
1 pound smoked kielbasa or Polish sausage, halved and cut into 1-inch pieces
1/2 pound lean ground beef
1 can (14-1/2 ounces) beef broth
Lemon-pepper seasoning to taste

Steps:

  • Preheat oven to 350°. Combine broccoli, potatoes, carrots and onion. Transfer to a greased 13x9-in. baking dish. Sprinkle with sausage. Shape beef into 1-in. balls; arrange over top. Pour broth over casserole; sprinkle with lemon-pepper seasoning. Bake, uncovered, until meatballs are no longer pink, about 40 minutes.

1 large egg, lightly beaten
1/2 cup crushed saltines (about 10 crackers)
1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1/2 pound ground beef
1/2 pound bulk pork sausage
1/4 cup plus 2 tablespoons all-purpose flour, divided
2-1/2 cups reduced-sodium beef broth, divided
Hot mashed potatoes
Minced fresh parsley, optional

Steps:

  • Mix first 4 ingredients. Add beef and sausage; mix lightly but thoroughly. Shape into 1-in. balls; toss with 1/4 cup flour, coating lightly., In a large skillet, brown meatballs over medium-high heat. Add 2 cups broth; bring to a boil. Reduce heat; simmer, covered, until meatballs are cooked through, 5-6 minutes., Remove meatballs with a slotted spoon. Mix the remaining flour and broth until smooth; add to pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Return meatballs to pan; heat through. Serve with mashed potatoes. If desired, sprinkle with parsley.

1/2 lb Italian sausage If bought in casing, remove meat from casing)
1/3 cup grated pecorino cheese
1 large egg, lightly beaten
2 cloves garlic, minced
1/4 tsp kosher salt
1/4 tsp ground pepper
1/2 cup milk
1 cup bread cubes from Italian bread, crust removed
1 tsp dried oregano
1/4 cup finely chopped Italian parsley

Steps:

  • Preheat oven to 350 Put beef and sausage in large bowl, add pecorino, beaten egg, garlic, salt and pepper. Combine milk and break in separate bowl, toss lightly with fork and add meat mixture. Put oregano in one hand and rub over mixture breaking up into smaller bits. Add chopped parsley and mix til all ingredients combined. Empty bowl onto work surface and gently pat into one large disc. Divide into four portions. Form 3 meatballs from each portion. Set meatballs on oiled, rimmed baking pan. Bake 25-30 minutes. Remove from oven and serve immediately, or cook in tomato sauce (HIGHLY RECOMMENDED!).

2 lbs ground beef
1 lb bulk sausage
2/3 cup fine dry breadcrumb
3 tablespoons minced garlic cloves
1 medium onion, finely chopped
1 teaspoon dried basil
2 large eggs
2 tablespoons water, as needed

Steps:

  • Line shallow baking dish with foil and oil.
  • Combine all ingredients and mix, using enough water to meld.
  • Shape into meatballs 1 1/2 to 2 inches in diameter.
  • Broil the meatballs 8 inches from broiler for 10 minutes. Turn over meatballs and broil for 10 more minutes.
  • I had 50 meatballs so you may have to broil in two batches. I used my Holland grill and cooked them on there which helped eliminate them sitting in the grease.

1 head broccoli florets or 2 bunches broccolini, trimmed and cut into 1-inch pieces (about 4 cups)
1/2 pound cremini mushrooms, trimmed and sliced (about 3 cups)
1/4 cup olive oil, plus more as needed
1 1/2 teaspoons dried oregano
1 teaspoon red-pepper flakes
Kosher salt
3/4 pound bulk spicy or sweet Italian sausage (or fresh sausages removed from casing)
1/4 cup plus 2 tablespoons grated Parmesan, plus more for serving
1 loaf soft Italian bread, split lengthwise
3 to 5 small garlic cloves, grated or minced

Steps:

  • Heat the oven to 400 degrees with one rack in the lower third and one in the upper. On one sheet pan, combine the tomatoes, broccoli and mushrooms with 1/4 cup oil. Season with 1 teaspoon oregano, 1/2 teaspoon red-pepper flakes and salt to taste. Toss to combine, then arrange the tomatoes so they are cut-side up. Roll the sausage into 1-inch balls. Grease another sheet pan with olive oil, then place the bread on the pan, cut-side up.
  • After 15 minutes, gently shake the pan to flip the meatballs. Sprinkle the entire pan with the remaining 1/4 cup Parmesan, concentrating your efforts on the tomatoes and the empty pan edges so that some Parmesan has room to crisp. Return the meatball sheet pan to the lowest rack and place the bread sheet pan on the higher rack. Roast until the bread is golden at the edges, the broccoli tips are crispy and the meatballs are cooked through, 7 to 10 minutes. (If the broccoli and meatballs need a little more time, remove the bread from the oven, cover loosely with foil and continue to roast the other sheet pan for 5 more minutes.)
  • Use a wooden spoon or spatula to scrape up any cheese that has stuck to the bottom of the pan. Serve everything with the garlic bread and more grated cheese.
