BUTTERMILK MEATBALLS

Not sure exactly where I found this but I do know it was a personal blog online. I modified the original recipe just a little and think these are the BEST! They let just enough of the buttermilk flavor through and are super moist without falling apart. I use these for tomato sauce, sweet and sour, and Swedish meatballs.

2 slices crustless white bread, torn into small pieces
1/2 cup buttermilk
1 lb ground beef (I use 80/20 hamburger)
1/4 cup parmesan cheese
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley
1 egg
1 teaspoon minced garlic
3/4 teaspoon salt

Steps:

  • Combine bread pieces and buttermilk in a bowl. I use my Kitchenaide so just put it in the mixing bowl.
  • Let the bread and buttermilk sit for 10 minutes.
  • Then mash, or mix, to a smooth paste.
  • Add other ingredients and blend well, but be careful NOT to overwork the mixture.
  • I then place the mixture in the freezer for about 15 minutes. This just firms the mixture and makes it easier to handle.
  • Next I form 1 inch balls and deep fry them at 310 degrees for 3-5 minutes. Not sure how they would be baked but please let me know if anyone tries that.
  • Last I usually put them in the crock pot with my sauce for about an hour to insure the middle is done well and to let the flavors blend.
  • So far this recipe has never failed me.

1 egg, beaten
1/4 cup milk
1/4 cup fine dry breadcrumb
3/4 cup onion, finely chopped
1 1/2 teaspoons prepared mustard
1 1/4 teaspoons salt
1 dash pepper
1 1/2 lbs ground beef
1 tablespoon cooking oil
1 medium onion, sliced
1/4 cup all-purpose flour
2 cups buttermilk

Steps:

  • Combine egg and milk; stir in bread crumbs, chopped onion, mustard, salt, and pepper. Add meat; mix well. Shape into 30 1 1/2 inch meatballs (I make my meatballs smaller).
  • In large skillet cook meatballs in hot oil, turning often, 25 minutes or until done. Remove Meatballs,reserving 2 tbls dripping.
  • Add to drippings sliced onion; cook till tender. Stir together flour, 1/4 tsp salt, and buttermilk; add to skillet. Cook and stir till thickened and bubbly.
  • Reduce heat. Return meatballs to skillet. Cook 2 minutes.
  • Serve over hot cooked noodles or spaetzle.

3/4 cup buttermilk
1/3 cup chopped fresh parsley
5 cloves garlic, minced
2 large egg yolks
1/2 tablespoon cayenne pepper
1/2 tablespoon kosher salt
3/4 teaspoon crushed red chiles
1/2 teaspoon fresh ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon gelatin mixed with 1/2 tablespoon water
8 ounces lean ground beef
8 ounces ground pork
8 ounces ground veal
3 ounces finely minced prosciutto
3/4 cup grated Romano
3/4 cup olive oil
15 ounces extra-virgin olive oil
15 ounces fine diced yellow onions
3 cloves garlic, minced
3/4 gallon whole cooked plum tomatoes with juice
3/4 ounce sliced fresh sweet basil
1/2 tablespoon fresh ground black pepper
8 ounces shredded Parmesan
4 tablespoons chopped pistachios
2 tablespoons freshly grated lime zest

Steps:

  • For the meatballs: Cut the bread into small cubes and combine with the buttermilk, parsley, garlic, egg yolks, cayenne pepper, salt, crushed chiles, black pepper, white pepper and gelatin mixture. Mix well into a paste. Add the beef, pork, veal, prosciutto, Romano and olive oil. Mix thoroughly.
  • Preheat the oven to 350 degrees F. Grease a baking sheet.
  • Form the mixture into twelve 4 1/2-ounce meatballs and place on the prepared baking sheet. Cook until the internal temperature reaches 155 degrees F.
  • For the marinara sauce: Heat a large saucepan over medium-high heat. Add the oil, onions and garlic. Cook until softened. Remove from the heat and combine in large bowl with the tomatoes, basil and pepper. Crush the tomatoes by hand to the desired size.
  • For the meatballs and sauce: Place the meatballs in baking pan and submerge with the finished marinara. Cover the pan and bake for 20 minutes.
  • Remove the meatballs and place in a serving bowl. Top the meatballs with the marinara and garnish with the Parmesan, chopped pistachios and lime zest.

This recipe has been in our family for many years and I am uncertain of the origin. I can remember being served this flavorful dish many times as child and it remains a favorite today.

1 lb ground beef
1/2 c bread crumbs
1/4 c onion, chopped
1/2 c milk
1 tsp salt
1/8 tsp pepper
3 Tbsp butter
BUTTERMILK SAUCE
2 Tbsp butter
4 Tbsp flour
2 Tbsp sugar
1 1/2 tsp dry mustard
2 1/2 c buttermilk
1 egg, beaten

Steps:

  • 1. Preheat oven to 300 degrees
  • 2. Combine ground beef, bread crumbs, onion, mil, salt, and pepper. Shape into balls. Fry on all sides in butter until brown. (You can choose to bake the meatballs, if you wish, but you may need to add additional fat to the pan for the sauce.) Place in a 2 to 2 1/2 quart baking dish.
  • 3. To make Buttermilk Sauce: Add the 2 tablespoons butter to pan drippings. Mix flour, sugar, and dry mustard and whisk into the butter, making a light roux. Gradually add the buttermilk. Stir over low heat until the sauce is smooth. Add the beaten egg and cook 1 minute longer. Pour over meatballs in the casserole dish.
  • 4. Bake in pre-heated oven for 30 minutes. Serve over rice or egg noodles.

¾ cup water
2 cups sour cream

Steps:

  • Combine meatballs, mushroom soup, water, and sour cream. Cover and refrigerate overnight so that the meatballs can absorb the flavors.
  • Pour the mixture into a slow cooker and heat until the meatballs are heated through. Serve hot.

My husband would eat this for dinner every night if I would let him. It took his family 10 years of marriage to share this secret recipe with me (apparently, I wasn't family yet), so now I'm sharing it with the world. Hope you like it!

2 pounds ground beef
¾ cup rolled oats
6 tablespoons chopped sweet onion (such as a Walla Walla)
1 cup milk
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 ½ cups ketchup
3 tablespoons Worcestershire sauce
3 tablespoons white sugar
4 ½ tablespoons chopped sweet onion (such as a Walla Walla)
4 ½ tablespoons apple cider vinegar
¾ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix together the ground beef, rolled oats, 6 tablespoons of sweet onion, milk, salt, and black pepper until thoroughly combined. Roll the mixture into 2-inch meatballs, and place meatballs into the prepared baking dish.
  • In a bowl, mix the ketchup, Worcestershire sauce, sugar, 4 1/2 tablespoons of sweet onion, apple cider vinegar, and water until the sugar has dissolved, and pour the sauce evenly over the meatballs.
  • Bake the meatballs and sauce in the preheated oven until the sauce is bubbling and thickened and the meatballs are no longer pink inside, about 1 1/2 hours. An instant-read thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C).
