I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

These meatballs are a favorite for any occasion. I made 14 pounds of meatballs for my sister's graduation party and I only had 1 medium container left over. My mother made sloppy joes and needless to say they had a lot left over because everyone loved these meatballs. Guaranteed favorite!

1 (13.25 ounce) can pineapple chunks in juice
1 green bell pepper, sliced
½ cup brown sugar
2 tablespoons cornstarch
2 tablespoons soy sauce
2 tablespoons lemon juice
1 (3 pound) bag frozen cooked meatballs, thawed

Steps:

  • Pour pineapple chunks with juice into a saucepan. Stir green bell pepper, brown sugar, cornstarch, soy sauce, and lemon juice through the pineapple chunks until sugar and cornstarch dissolve.
  • Bring the mixture to a boil; cook and stir until thickened, about 10 minutes.
  • Place meatballs into slow cooker crock; pour pineapple mixture over meatballs.
  • Cook on Medium for 2 hours, stirring every 30 minutes.

1 lb lean (at least 80%) ground beef
1/2 cup Progresso™ Italian-style bread crumbs
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1 small onion, finely chopped (1/4 cup)
1 egg

Steps:

  • Heat oven to 400°F. Line 13x9-inch pan with foil; spray with cooking spray.
  • In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.
  • Bake uncovered 18 to 22 minutes or until temperature reaches 160°F and no longer pink in center.

1 can(s) (10.2 oz) pillsbury grands refrigerated buttermilk biscuits
1/3 c shredded monterey jack or cheddar cheese
10 refrigerated or frozen meatballs, thawed
1/4 c butter, melted
2/3 c finely crushed seasoned croutons
10 large appetizer picks or lollipop sticks, if desired
1 1/2 c tomato pasta sauce, heated

Steps:

  • 1. Heat oven to 375-degrees. Line cookie sheet with parchment paper, or spray with a non-stick cooking spray.
  • 2. Separate dough into 5 biscuits. Split each biscuit to make 10 rounds. Press each biscuit half to form a 3-inch round.
  • 3. Sprinkle each biscuit round with cheese to 1/2-inch of edge. Top each with meatball. Bring up sides of dough over meatball, pinch edges to sealo.
  • 4. Brush rounded tops and sides of dough with butter. Coat with croutons. Place seam side down on cookie sheet.
  • 5. Bake 10 - 15 minutes or until golden brown
  • 6. Place appetizer pick in each biscuit-wrapped meatball to form meatball pop.
  • 7. Serve with warm pasta sauce
