My mother would never have fried catfish at our house without frying mealed new red potatoes. We love southern cooking and we love fried fish especially catfish at my house. So now since we have pretty much perfected her recipe (but you know it's still not as good as mama's)we too are having mealed potatoes with our fried catfish. My husband cooks too so he cooked them just the other night with fried catfish!

3-4 medium new red potatoes
1 1/2 cup(s) corn meal
pinch(es) flour, salt,pepper
1-2 cup(s) vegetable oil

Steps:

  • Peel and cut potatoes into french fries. Wash potatoes and make sure they are dry and not real wet. It is ok to have them a little wet but if too wet the cornmeal will not stay on them.
  • Mix cornmeal, flour, pepper, salt in a bowl. Then mix potatoes in it. Drop them in hot bubbly oil (we use a fry daddy). They should be covered in oil. Turn them as you see fit and when they brown take them up and drain on a paper towel. We like pepper so season them again with pepper and salt.
  • Just a note...it is only my husband and I at home so when our children are home we cut up more potatoes. My husband likes to fry them in the same oil that he has fried the fish in because he swears it cleans the grease! Not sure about that...my mother never did this and hers were perfectlly colored and so good. Another thing we use self-rising flour and corn meal because my mother did but it may not make a difference. So easy and so good!

5 pounds small Yukon gold potatoes, quartered
Kosher salt
1 tablespoon flaked sea salt
2 teaspoons freshly cracked black pepper
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
Vegetable oil, for frying
2 sprigs fresh rosemary
1/4 cup sliced garlic

Steps:

  • Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
  • In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
  • Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.

¼ teaspoon salt
1 tablespoon vegetable oil, or as needed

  • Mix mashed potatoes, egg, flour, and salt together in a bowl.
  • Heat a thin layer of vegetable oil in a frying pan. Drop large spoonfuls of the potato mixture into the frying pan. Flatten into a patties as you flip; cook until browned on both sides, 6 to 7 minutes per cake. Repeat with remaining potato mixture.

This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

4 gold potatoes, sliced 1/4 inch thick
4 tablespoons butter
salt
pepper

Steps:

  • Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
  • Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
  • Add salt and pepper sometime during frying time, to taste.

1 green bell pepper, seeded and chopped

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
  • In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.

3 tablespoons extra-virgin olive oil or a neutral tasting oil
2 teaspoons kosher salt

Steps:

  • Preheat the oven to 450 degrees F.
  • Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
  • Transfer potatoes to a serving dish and serve immediately.

  • Bring a large saucepan of water to a boil. Add salt and potatoes, and blanch for 5 minutes. Remove potatoes, and drain well. Dry potatoes in a clean kitchen towel; set aside.
  • Heat 1/2 inch oil in a large straight-sided skillet until very hot. Carefully add potatoes, and fry, stirring occasionally, until fork-tender and golden brown, about 5 minutes.
