I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

3 chicken breasts, cut into cubes
2 cups water
2 cups instant white rice
1 (10.75 ounce) can cream of chicken soup
1 (10.75 ounce) can cream of celery soup
1 (10.75 ounce) can cream of mushroom soup
salt and ground black pepper to taste
½ cup butter, sliced into pats

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
  • Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.
  • Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.

1 cup sliced carrots
1 cup frozen green peas
½ cup sliced celery
⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon celery seed
1 ¾ cups chicken broth
⅔ cup milk
2 (9 inch) unbaked pie crusts

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.)
  • In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
  • In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  • Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
  • Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

2 whole chickens (cut in pieces)
6 egg yolks (only egg yolks here please)
1 cup buttermilk
2 teaspoons seasoning salt (divided in half)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon baking soda
3 cups flour
4 cups oil (for frying)

Steps:

  • Heat about 1 inch of oil in a large stock pot or dutch oven over medium high heat to 350 degrees.
  • In a medium size bowl whisk the egg yolks, add in the buttermilk, and one half of the seasoning salt. Whisk to combine.
  • In a large bowl sift in the flour and baking soda. Add in the garlic powder, onion powder, salt, paprika, black pepper and the other half of the seasoning salt. Stir to combine.
  • Rinse your chicken and pat the chicken pieces with paper towels until they are completely dry.
  • Coat each piece of chicken with the flour, then dip in the egg wash, then back in the flour making sure to pat the flour somewhat firmly into each piece.
  • Add each piece of chicken to the hot oil as you bread them. Breasts usually take around 11 minutes while wings, drumsticks and thighs take 6-7 minutes. Once the outer crust is dark golden brown (not dark brown) and the internal temperature is between 160-170 the chicken is done and ready to enjoy!
  • Note: Do not over crowd the pan. This will reduce the oil temperature and cause for oily chicken. Cook about 4 pieces at a time and as you remove a piece, bread another one and add it in the oil. Do not bread them all and leave them all to sit out on the counter -- bread then as you are ready to fry.

4 -5 boneless skinless chicken breasts
2 (14 ounce) cans mixed vegetables
2 (10 ounce) cans cream of chicken soup
1 cup broth, broth will come from cooking the chicken breasts
1 cup flour
1/2 cup butter
1 cup buttermilk

Steps:

  • Boil chicken for 20 minutes, tear into pieces and layer in the bottom of a casserole dish.
  • Mix vegetables, cream of chicken soup, and broth together, pour over chicken.
  • Mix flour, butter and buttermilk together and layer over the vegetable mixture.
  • Bake at 350 cegrees for about 35-45 minutes.

I have used a store bought rotisserie chicken or left over chicken/turkey and refrigerated pie crust or even puff pastry (single top crust). Mamaw did not EVER! (please don't tell on me) You...

2 whole chicken breast bone in or 2 c left over chicken or turkey
2 pie crust (your favorite) or refridgerated
2 c chicken broth
1/4 tsp salt
1/2 tsp pepper
2/3 c flour
1 qt heavy cream
1/3 c real butter
1 small onion finely diced
1 c frozen peas
1 c chopped carrots
1 c fresh broccoli tops chopped (you can use frozen)
1/8 tsp nutmeg
1 beaten egg

Steps:

  • 1. Add salt/pepper and chicken broth to a medium stock pot and boil chicken until cooked thru reserving the broth...set aside to cool and shred.
  • 2. Preheat oven to 350 degrees
  • 3. Skim any fat off the broth and bring back up to a boil
  • 4. add all veggies to broth and boil for 5 minutes then reduce to a simmer for 15 minutes.
  • 5. In a 2 quart round casserole dish add your preferred pie crust to the bottom of the dish and mold gently to the sides of the dish. Poke holes in the bottom with a fork and bake off for 10 minutes set aside
  • 6. When veggies are al dente add 1/3 cup cold water to flour and mix until smooth, add mixture quickly to simmering stock.add the shredded chicken. Simmer for 5 minutes. Turn off heat stir in butter, cream and nutmeg.
  • 7. Fill casserole with the filling and drape the top crust over the the entire top of the casserole dish, letting it hang over the sides.Vent the top crust with a sharp knife. Brush with the egg wash. (I claim the extra crust from the sides for myself, as I am the chef!)
  • 8. Bake off 35-45 minutes or until Golden Brown. Rim the edges with foil if they begin to brown too much. Allow pie to set up for 15-20 minutes to hold form when cut. ENJOY!!!! You may want to skip dessert....but trust me it is worth it!

1 1/2 cups boiled peeled and mashed sweet potatoes (about 3 medium-size)
3 large eggs, slightly beaten
1 cup evaporated milk
1/2 cup dark corn syrup
1/2 cup firmly packed dark brown sugar
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 cup chopped pecans
1 9" unbaked pie shell

Steps:

  • Preheat the oven to 400°F.
  • In a large mixing bowl, combine the mashed sweet potatoes, eggs, evaporated milk, corn syrup, brown sugar, butter, salt and spices.
  • Beat with a wooden spoon until smooth and frothy.
  • Stir in the pecans.
  • Pour the mixture into the unbaked pie shell and bake for 15 minutes at 400°F.
  • Reduce the oven temperature to 350°F and continue baking until cake tester inserted in the center comes out clean, about 45 minutes.

2 chicken breasts, diced (rotisserie chicken, leftover turkey,or pork/beef roast shredded)
2 ribs celery, chopped
3-4 carrots, sliced thin
1/2 medium onion, minced
1 clove garlic, minced
4 red potatoes, diced
1 small pinch sage or thyme (i use sage for poultry, thyme for beef or pork)
2 c chicken stock (change stock according to which meat you're using)
2 Tbsp cornstarch
salt & pepper, as needed, to taste
1-2 Tbsp olive oil
1 double crust pie pastry

Steps:

  • 1. Preheat oven to 375*.
  • 2. In a medium size pot, heat olive oil over medium heat. Add onion, garlic, carrots, celery, and potatoes. Cook for 5-8 minutes, until onions begin to turn translucent.
  • 3. While your vegetables are cooking, prepare 2-crust pie dough. (see first comment below for a link to my crust recipe) Roll out half, and place in a deep dish pie plate.
  • 4. Add chicken to vegetables. Season with sage or thyme and pepper (don't add salt yet). Cook until chicken is no longer pink. (If using pre-cooked meat, cooking the meat again is not necessary)
  • 5. Add chicken stock to vegetable/chicken mixture and bring to a boil. Mix cornstarch with 4-6 tablespoons of cold water and mix into boiling mixture. Return to boil and thicken to desired gravy consistency. Taste and add salt as needed.
  • 6. Pour hot mixture into crust-lined pie plate.
  • 7. Roll out top crust and place over mixture. Trim crusts, roll under, and crimp edges. Make 4-6 slits in top, place in oven and bake, 35-45 minutes, until crust is golden brown.

MAW-MAW'S CHICKEN AND DUMPLINGS

This has always been my favorite meal of all time. It is my ultimate comfort food. It is always my request as a birthday dinner. It reminds me of so many wonderful dinners as a child. It may seem odd, but we eat this over rice, we are Cajuns, so we eat rice with everything.

1 stewing hen
1 large onion
4 celery stalks
1/2 c all purpose flour
1/2 c vegetable oil
4 c chicken broth
4 tsp parsley, chopped
water
salt/pepper to taste
pioneer baking mix (follow drop biscuit recipe)

Steps:

  • 1. Cut hen into pieces: 2 legs, 2 thighs, 2 wings, 2 breasts. Keep other parts to let them stew in the broth.
  • 2. Chop onion, celery, and parsley. These will be added later.
  • 3. In a medium-high dutch oven put in oil and then flour, stir to combine. This step is very important to NEVER walk away from the pot. Using a wooden spoon, continually stir flour and oil mixture in a figure 8 motion. You are making a roux and you need to get it to the color of peanut butter. Stir continually until you get that color.
  • 4. Once roux is the perfect color, then add celery and onions and a teaspoon of salt. Stir to combine and let it sweat for a minute or so.
  • 5. Add chicken broth and pieces of hen to pot. Use water if necessary to cover the hen. Add slat and pepper to taste.
  • 6. Let this stew on medium-low heat for approximately an hour, until hen is tender. A hen takes time to cook and become tender.
  • 7. Once hen is done, I usually remove the meat from the bones. Discard the bones and keep meat warm.
  • 8. Mix pioneer baking mix to drop biscuit recipe for dumplings. Bring broth to a boil. Drop about 4-5 tablespoons of drop biscuit mix in broth, put on cover. Wait about 3 minutes before removing cover. Dumplings should be big and fluffy.
  • 9. Remove dumplings that are done, keep in a corning ware with cover. Repeat step 8 until dough is used. You may need to add more water to broth, as the dumplings will soak it up as they cook.
  • 10. Finally, after all dumplings are done, add chopped parsley to broth, you may want to return the hen meat to warm through again. Serve over rice with dumplings on the side.

2 (9 inch) deep dish pastry pie crusts
1/4 cup butter (salted)
1 (7 ounce) package flaked coconut
1 cup pecans (rough chopped, the texture makes this pie what it is)
1 (8 ounce) package cream cheese, softened (you can use full fat or 1/3 fat, but I wouldn't do fat free})
1 (14 ounce) can sweetened condensed milk
2 (8 ounce) containers whipped topping, thawed
1 (14 ounce) jar caramel ice cream topping (this salted caramel one is fantastic, just use unsalted butter, instead)

Steps:

  • Bake your pie shells according to package directions and let them cool completely.
  • While your pie shells are baking, melt the butter in a skillet over medium and add the pecans and coconut. Toast your coconut and pecans in the butter until they become golden brown (roughly 10 minutes). Keep stirring constantly -- these can scorch easily. Set them aside to let them cool.
  • In a large mixing bowl, beat the cream cheese and sweetened condensed milk together until creamy. Fold in your whipped topping by hand -- be careful not to "break it down" too much, but still get it incorporated nicely (it's such a fine line, isn't it?).
  • Have your baked and cooled pie shells ready to fill -- it's time to start layering!
  • Start by using 1/2 of your cream cheese mixture and divide that evenly between the two pie shells (so, technically, each pie will get 1/4 of the mixture).
  • Drizzle 1/4 of your caramel sauce over the cream cheese mixture on each pie, use 1/4 per pie and 1/2 the jar total for this layer.
  • Sprinkle 1/4 of the pecan/coconut mixture over the caramel on each pie. Again, use 1/2 of the mixture total.
  • Repeat the layers, using the remaining ingredients. Place pies in the freezer overnight.
  • You'll pull them out about about 20-30 minutes before serving to let them thaw a bit. You can store them in your freezer for about a month. I double wrap mine in Press-N-Seal and then add an additional layer of foil on top of that, to prevent any freezer burn.
