CAJUN CRUSTED AHI IN SAKE-TO-ME SHOYU SAUCE



Cajun Crusted Ahi in Sake-to-Me Shoyu Sauce image

4 tablespoons panko (Japanese bread crumbs)
1/4 teaspoon dried tarragon
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1/16 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon dried oregano
1/8 teaspoon dried rosemary
1/8 teaspoon dried thyme
2 tablespoons mayonnaise
7 ounces tuna steak, 1-inch thick
Butter, for pan
1 tablespoon shoyu (recommended: Kikkoman)
1 teaspoon sake
1/4 teaspoon sesame oil
1/2 teaspoon sugar
1/4 teaspoon lemon juice
1/8-inch lemon slice
1 avocado, peeled
1-ounce green onions, cut into 1/4-inch pieces
1 tomato, concasse* (see Cook's Note)
1 lemon, sliced

Steps:

  • In a mixing bowl, mix panko, 1/4 teaspoon tarragon, 1/4 teaspoon rosemary, and 1/4 teaspoon thyme. Set aside.
  • In a food processor, grind together paprika, cayenne pepper, celery salt, garlic powder, onion powder, oregano, 1/8 teaspoon rosemary and 1/8 teaspoon thyme. Add mayonnaise and pulse until well combined. Lightly coat the tuna steak with the mayonnaise mixture and then coat the tuna steak in the panko mixture.
  • Melt butter in a skillet over medium-heat. Add tuna to hot pan and sear on each side for approximately 2 1/2 minutes each or until golden brown.
  • Meanwhile, in a small skillet, combine all sauce ingredients and reduce over low heat until thickened to a sauce consistency.
  • Cut a thick wedge of avocado and then slice it to make a fan shape. Spread avocado fan across plate. Place the tuna steak in the center of the plate, pouring shoyu sauce around and on top of it. Garnish with the green onions, tomato concasse, and lemon slice.

Maui Onion Crusted Seared Ahi image

This recipe is by Tom Selman and David Paul Johnson, of David Paul's Lahaina Grill in Lahaina, Maui, Hawaii. It was the Grand Prize Winner of the 2001 Maui Onion Recipe Contest, Professional Division. Be sure to dehydrate the onions for 24 hours before starting this recipe. I've never made this recipe before, but I have ordered and eaten it at the restaurant before. It sounds like a bit of work, but based on taste, I think that it's well worth the effort.

16 ounces ahi fillets, premium grade
12 ounces maui onions, sliced thin, then dehydrated and crushed
16 ounces maui onions, caramelized
3 tablespoons olive oil
1 tablespoon salt and pepper
1 tablespoon shallot, finely chopped
1 tablespoon unsalted butter
1 cup jasmine rice
3 cups clam broth (or use 2 1/2 cups of the broth and 4 ounces white wine) or 3 cups fish stock (or use 2 1/2 cups of the broth and 4 ounces white wine)
1 vanilla bean, split
2 cups apple cider, filtered
2 cups apple cider vinegar
8 ounces soy margarine, chilled and cubed
2 ounces unsalted butter, chilled and cubed
1 ounce chives, finely chopped
black sesame seed (optional)

Steps:

  • Apple Cider-Soy Butter Vinaigrette:.
  • Mix the vinegar and cider in a sauce pan over medium heat.
  • Reduce to 1/2 cup.
  • Just before serving, add cold butter and margarine in small quantities while mixing over medium heat.
  • Place in a blender and pulse for just a second or two.
  • Caramelized Onion:.
  • Over medium high heat cook onion with 2 tablespoons olive oil in a heavy bottom braiser or sauce pan, constantly stirring until onions caramelize, then set aside.
  • Vanilla Bean Rice:.
  • Saute rice over medium heat with vanilla bean, shallots, butter, white wine (if using). Add clam broth.
  • Bring to a boil, reduce heat.
  • Cover and simmer until all liquid is absorbed, approximately 20 minutes. Remove from heat and fluff.
  • Seared Ahi:.
  • Heat 1 tablespoon olive oil in a large skillet.
  • Roll ahi filet in dehydrated crushed onion.
  • Sear on all sides until browned.
  • Slice against grain of fish for serving.
  • Plating:.
  • Serve on a large plate with rice in the center, top with fish and a tablespoon of caramelized onion.
  • Drizzle sauce over and around fish and garnish with chopped chives and sesame seeds.

CARAMELIZED MAUI ONION AND BARBEQUE DUCK QUESADILLAS

2 whole boneless skinless duck breasts
1 lime, juiced
1 cup sour cream
Salt and pepper
1/2 tablespoon canola oil
1 cup barbeque sauce
8 flour tortillas
1 Maui onion, sliced thin, sauteed to golden brown
1 ripe mango, peeled, seeded, and cut into thin strips
1 roasted poblano chili, peeled, seeded, and cut into thin strips
1 small red onion, cut into thin rings and grilled
1 cup grated jalapeno Jack cheese
1 tablespoons freshly chopped cilantro
4 sprigs fresh cilantro

Steps:

  • Prepare a smoker for cold smoke. Place duck breasts on a smoker rack and put in the smoker for 15 minutes. Remove from the smoker.
  • In a small bowl add fresh lime juice to sour cream and stir. Season with salt, to taste, and refrigerate until ready to serve.
  • Preheat oven to 350 degrees F. Place the duck breasts in an ovenproof saute pan and place in the oven. Roast duck for 10 minutes or until medium rare. Remove from the oven and allow to cool.
  • Using a sharp knife, dice the duck breast into 1/2-inch pieces. Place the canola oil in a large saute pan over medium-high heat. Add diced duck and season with salt and pepper. Stir in the barbeque sauce and bring to a boil and immediately remove from heat.
  • Place 4 flour tortillas on a clean cutting board. Divide the duck mixture onto the tortillas. Sprinkle the sauteed Maui onion, mango, poblano chili, red onion, cheese, and cilantro evenly over duck mixture. Top with the remaining 4 tortillas and brush each side with canola oil. Bring a large saute pan or griddle to medium heat. Place 1 tortilla stack in the pan or griddle and cook until golden brown or about 3 minutes. Using a spatula flip tortilla over to cook other side. Remove from pan and place on cutting board and cut into 6 wedges. Place on a warm plate and dab lime sour cream on each wedge and garnish with a cilantro sprig. Repeat with the remaining tortilla stacks.

Chicken in Red Sesame Seed Sauce: Pipian Rojo del Norte image

6 ancho chiles
3/4 cup toasted sesame seeds, plus more for garnish
5 black peppercorns
3 whole cloves
1 (1/2-inch) stick Mexican cinnamon (canela)
3 1/2 cups chicken broth, homemade or low-sodium canned
1 clove garlic, peeled
3 tablespoons lard or vegetable oil
Kosher salt and freshly ground black pepper
1 large fresh or dried avocado leaf, toasted and finely ground (optional)
2 whole skinless, boneless chicken breasts, halved
Vegetable oil, as needed
Mixed cilantro and mint leaves, for garnish

Steps:

  • Stem and seed the chiles, reserving 1 tablespoon of the seeds, or more to taste.
  • Toast the chiles in a large cast iron skillet over high heat. Transfer the chiles to a bowl, cover with hot tap water, and soak for 20 minutes. Drain.
  • Meanwhile, toast the chile seeds in the skillet. In a clean coffee or spice grinder, finely grind the chile seeds, sesame seeds, peppercorns, cloves, and cinnamon.
  • In a blender, combine the chiles, ground spices, 1/2 cup chicken broth, and garlic and blend.
  • Heat the lard in a saucepan over medium-high heat. Pour in the blended sauce and cook, stirring and scraping the bottom, until somewhat reduced, about 10 minutes. Add the remaining 3 cups chicken broth, bring to a boil, lower the heat and simmer until thickened, about 20 minutes more. Season with salt and pepper. (The sauce may be prepared up to 3 days ahead and stored in the refrigerator.)
  • Preheat a grill or grill pan. Lightly brush the chicken with oil and season with salt and pepper. Grill the chicken, turning to make cross-hatched marks, until just cooked through, about 12 minutes. Transfer the chicken to a platter and let rest for 5 minutes.
  • Slice the chicken and transfer to a platter.
  • Reheat the sauce and stir in the avocado leaf. Ladle the sauce over the chicken, sprinkle with sesame seeds, and garnish with herb leaves. Serve with corn tortillas.
  • Serving Suggestion: Warm corn tortillas.

TERIYAKI AHI



Teriyaki Ahi image

2 gallons Hawaiian shoyu, such as Aloha
2 pounds brown sugar
2 pounds white sugar
1/2 pound fresh ginger, sliced
1 quart cooking sherry
1 cup oil
Handful rough-chop green onion
3 garlic heads, cut in half horizontally
1 tablespoon ground white pepper
Six 1/2-pound portions ahi tuna
Oil, for seasoning tuna
Salt and pepper

Steps:

  • Place shoyu, brown and white sugars, ginger, sherry, oil, green onions, garlic, white pepper and 3/4 gallon water in a large pot and bring to a rolling boil. Let cool, then strain out the solids so you are left with just teriyaki sauce. Place the ahi in a large bowl and cover with the teriyaki marinade (save remaining marinade for another use). Let marinade, refrigerated, 4 to 6 hours.
  • Preheat a grill for cooking at medium-high heat. Oil tuna and sprinkle with salt and pepper, then grill to desired doneness, 2 1/2 minutes per side for medium-rare.

SESAME-CRUSTED AHI WITH PONZU VINAIGRETTE



Sesame-Crusted Ahi with Ponzu Vinaigrette image

2 tablespoons white sesame seeds
2 tablespoons black sesame seeds
1 pound sashimi-grade ahi tuna (steaks or loin)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 teaspoon grated fresh ginger (from about a 1/2-inch piece)
1/2 cup ponzu
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1/2 teaspoon toasted sesame oil
1/2 Fresno chile, thinly sliced
Canola oil, for cooking
2 shallots, thinly sliced
Kosher salt
Olive oil, for searing
1 scallion, finely sliced on the bias

Steps:

  • Combine the sesame seeds in a shallow bowl. Lightly rub the tuna in the olive oil, then sprinkle liberally with salt and pepper. Press the tuna into the sesame seeds, applying firm pressure so the seeds stick. Cover completely and chill in the refrigerator, uncovered, for 5 minutes, to allow the seeds to stick.
  • For the vinaigrette: In a medium bowl, whisk together the grated ginger, ponzu, soy, vinegar, sesame oil and Fresno. Pour into a serving bowl and set aside.
  • In a large nonstick pan, heat 1/2 inch canola oil to 320 degrees F.
  • Add the shallots to the oil in small batches and fry until golden brown, about 2 minutes. Remove to a paper towel-lined plate and drain. Season with salt.
  • Add 1/4 cup olive oil to another large, nonstick pan and turn the heat on high until hot. Add the sesame-crusted tuna and sear all over for 30 seconds on each side. Remove from the pan and slice 1/2-inch thick.
  • Shingle the tuna on a platter, then sprinkle over the fried shallots and sliced scallions. Serve with the vinaigrette alongside.
