Mashed Sweet Potatoes And Plantains Recipes

MASHED PLANTAINS

Steps:

• Preheat oven to 375 degrees. Sprinkle plantains with salt and cayenne; drizzle with oil to coat. Arrange, cut sides down, on a rimmed baking sheet. Roast until cut sides of plantains begin to caramelize, about 20 minutes. Turn plantains; roast 10 minutes more.
• Mash hot plantains on baking sheet with a potato masher until somewhat smooth (some large chunks should remain). Transfer to a serving bowl, and drizzle with lime juice.

WHITE 'N' SWEET MASHED POTATOES

Steps:

• Place russet potatoes and sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain., In a large bowl, mash the potatoes with the milk, butter, salt, cinnamon and nutmeg until potatoes reach desired consistency.

MASHED SWEET POTATOES AND PLANTAINS

Steps:

• Peel and dice the potatoes into 1 inch cubes. Place into a pot of cold water (the water should completely cover potatoes) and bring to a boil. Boil until potatoes are fork tender. Strain.
• While the potatoes are cooking, slice the plantains into 1 inch thick slices. Place some butter in a pan and pan fry the plantains until golden brown.
• Mash the potatoes and plantains together, then add milk, 2 tbsp butter, salt, and brown sugar.

MASHED SWEET POTATOES

Steps:

• Place the sweet potato in a medium-size pot. Cover with water and bring to a boil. Boil for 10 minutes. Peel the plantain and cut into pieces. Add to the boiling water and cook for 5 minutes. Remove from the heat and drain. Return the potato and plantain to the pot and mash well with a potato masher. Incorporate brown sugar, cinnamon, and butter. Add nutmeg and salt, to taste. Blend well.

MASHED SWEET POTATOES

Steps:

• Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
• With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.
