CHEESY PUFF PASTRY ASPARAGUS TART

Cheesy asparagus tart made with puff pastry is a delicious, easy vegetarian recipe perfect for breakfast, brunch or a fuss-free lunch.

400 g/14oz puff pastry (thawed)
300 g/10oz fresh green asparagus (Washed and woody ends trimmed off)
250 g/approximately 1 cup plain cream cheese
2 egg yolks
50 g/approximately ½ cup Parmesan cheese (grated (add as much or as little as you prefer))
2 tsp fresh thyme leaves
zest of 1 lemon
salt and pepper (to taste)
1 egg (beaten)

Steps:

  • Pre-heat the oven to 220ºC/430ºF. Line a baking sheet with baking/parchment paper.
  • To make the cheese mixture, combine the cream cheese, egg yolks, Parmesan, thyme, lemon zest, salt and pepper and mix well.
  • Gently roll the puff pastry out into a large rectangle (to fit the baking sheet). Score a border around the edge (taking care not to cut all the way through the pastry).
  • Spread the cream cheese mixture onto the puff pastry, staying within the borders then top with the asparagus and season with salt and pepper.. Brush the edges of the pastry with beaten egg.
  • Place the tart into the oven and allow to bake for 15-20 minutes until the pastry is golden and cooked through.
  • Remove from the oven and allow to cool for 5-10 minutes before slicing and serving.

This is an easy main course that looks very pretty - adapted from a recipe found in a Delicious magazine . I made it for New Years dinner and it was very successful.

2 puff pastry sheets
30 g butter
1 onion, finely chopped
200 g ham, sliced
3 teaspoons Dijon mustard
250 g mascarpone cheese
2 bunches asparagus, trimmed, halved
1 egg, slightly beaten
1/2 cup parmesan cheese, shaved

Steps:

  • Preheat oven to 180 C, line 2 trays with baking paper.
  • Cut each pastry sheet into 4 squares, then lightly score a 2.5 cm border around each square.
  • Place squares on trays and chill.
  • Melt butter in frypan and cook onion for 3 - 4 minutes.
  • Finely chop ham in food processor.
  • Add onion, mustard and mascarpone and pulse to combine.
  • Season to taste.
  • Spread mixture within pastry border on each square.
  • Top with asparagus spears.
  • Brush pastry borders with beaten egg.
  • Bake 20 - 25 minutes till pastry is golden.
  • Serve topped with parmesan.

SPRING ASPARAGUS TART

1 tablespoon all-purpose flour, plus more for dusting
1 sheet frozen puff pastry, thawed (a 9 1/2- by 9-inch sheet from a 17.3-ounce package)
1 cup mascarpone
1 1/2 teaspoons kosher salt
1 large egg, beaten
1 lemon, zest finely grated (about 1 tablespoon)
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
1 pound pencil asparagus, woody bottoms trimmed off
1 tablespoon olive oil
Freshly ground black pepper
Lightly dressed greens, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Lightly flour the work surface and roll out the puff pastry to a 9- by 12-inch even rectangle. Transfer to the prepared baking sheet. Combine the mascarpone, 1 1/4 teaspoons of the salt, the flour, egg and lemon zest, and then fold in the chives and tarragon. Spread over the puff pastry, leaving a 3/4-inch border. Make small cuts around the border about 1 inch apart with the tip of a paring knife.
  • Toss the asparagus with the olive oil in a bowl. Lay half of the asparagus in a neat row across the surface of the tart so the tips meet the edge. Do the same in the opposite direction with the remaining asparagus. Season with the remaining 1/4 teaspoon salt and some pepper. Bake until the border of the tart is deep golden and puffed and the top is lightly spotted golden brown, about 25 minutes. Let cool for 5 to 10 minutes and serve.
  • Serve with lightly dressed greens.

SMOKED SALMON, FENNEL AND HERBED MASCARPONE TART



Smoked Salmon, Fennel and Herbed Mascarpone Tart image

This elegant puff pastry tart is flaky, savory and comes together in a snap once you've defrosted the dough. Using all-butter puff pastry gives you the richest flavor; it's worth seeking out. The smoked salmon makes a sophisticated and pretty topping here, but you can leave it off all or part of the tart if you've got vegetarians at the table. Just double up on the capers to compensate for the missing saltiness.

1 large fennel bulb (or 2 small ones)
1 to 2 lemons
2 teaspoons extra-virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoons freshly ground black pepper, more as needed
1 cup mascarpone
2 tablespoons chopped fresh chives, finely chopped
2 tablespoons chopped fresh dill, plus more sprigs for garnish
1 large egg, lightly beaten
All-purpose flour, for dusting the work surface
1 sheet puff pastry, thawed if frozen (about 14 ounces)
4 ounces thinly sliced smoked salmon
2 tablespoons capers, drained and chopped

Steps:

  • Trim the fennel. Halve the fennel top to bottom, then use a paring knife to cut out the thick core in the center. Remove the tough outer layer. Using a mandoline or sharp knife, slice the fennel horizontally as thinly as possible. You should have about 3 to 3 1/2 cups.
  • Grate 1 1/2 teaspoon zest from the lemon, then squeeze out 1 1/2 tablespoons lemon juice, keeping zest and juice separate.
  • In a mixing bowl, toss together fennel slices, lemon juice, olive oil, 1/4 teaspoon salt and a pinch of black pepper. Let sit for 20 minutes to soften fennel.
  • Meanwhile, heat oven to 425 degrees, and line a baking sheet with parchment paper.
  • In another medium mixing bowl, use a rubber spatula to mix together the mascarpone, herbs, egg, lemon zest, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper until well combined.
  • On a lightly floured surface, roll the puff pastry out to form a 13-by-11-inch rectangle, about 1/8-inch thick. Transfer the dough to the prepared baking sheet. With a sharp knife, lightly score a 1/2-inch border around the edges of the puff pastry.
  • Spread mascarpone mixture evenly inside the scored border. Drain the excess liquid from the fennel and arrange the slices in an even layer on top of the mascarpone.
  • Bake until the pastry is puffed and golden, 22 to 28 minutes. Let tart cool on its baking sheet on a rack for at least 15 minutes before serving (or up to 4 hours).
  • To serve, cut tart into pieces. Drape each with a slice of smoked salmon, sprinkle with a little lemon juice, and garnish with capers, dill and black pepper.

FARFALLE WITH MASCARPONE, ASPARAGUS, AND HAZELNUTS

2 pounds slender asparagus, trimmed, cut on diagonal into 2-inch lengths (about 6 cups)
3 tablespoons olive oil
1 pound farfalle (bow-tie pasta)
1 8-ounce container mascarpone cheese*
2/3 cup freshly grated Parmesan cheese
1/2 cup hazelnuts, toasted, husked, coarsely chopped
3 tablespoons chopped fresh chives
Parmesan cheese shavings

Steps:

  • Preheat oven to 450°F. Line rimmed baking sheet with aluminum foil. Place asparagus on prepared sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat; spread in single layer. Roast until asparagus is tender, about 10 minutes. (Can be prepared 2 hours ahead; let stand at room temperature.)
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking water. Return pasta to pot. Stir in mascarpone, grated Parmesan cheese, and asparagus. Toss over medium-low heat until pasta is coated with sauce and mixture is heated through, adding reserved pasta water by 1/4 cupfuls if dry, about 3 minutes.
  • Mound pasta in large shallow serving bowl. Sprinkle with hazelnuts, chives, and Parmesan cheese shavings.
