PORK CHOPS WITH CARAMELIZED ONIONS AND FRIED APPLES



Pork Chops with Caramelized Onions and Fried Apples image

Make this hearty meal with a German twist.

Number Of Ingredients 7

3 Pork chops, thick-cut bone-in
Salt
Pepper
6 tbsp Butter, divided
3 Onions, yellow or white, sliced into thin strips
3 Apples, preferably firm, cut into bite-sized chunks
2 cups Apple cider or apple juice

Steps:

  • Melt 3 tablespoons of butter in a wide saucepan or Dutch oven on medium heat.
  • Generously salt and pepper one side of the pork chops.
  • Once the butter has melted and is sizzling in the pan, place the seasoned side down of the pork chops into the pan.
  • Salt and pepper the top side of the pork chops.
  • Sear the pork chops on each side for approximately 3 minutes until they develop a golden-brown crust.
  • Remove the pork chops to a platter and set them aside.
  • Add onions to the pan and caramelize. This process takes approximately 10 minutes.
  • Add the pork chops back into the pan by placing them on top of the onions.
  • Pour the apple cider into the pan.
  • Bring the mixture to a boil, cover, and allow to simmer for one hour on medium low heat.
  • After one hour, remove the pork chops and onions from the pan to a clean platter and tent with foil to keep warm.
  • Add the remaining 3 tablespoons of butter to the pan and allow it to dissolve in the apple cider. Add the apples and toss well. (See video.)
  • Bring the mixture up to a medium simmer, cover, and allow the entire contents to simmer for 10 minutes.
  • After 10 minutes, remove the lid, turn the heat to high, and allow the liquid to begin to thicken. This may take only about 1 minute. Watch closely and stir well to make sure the apples do not stick to the bottom of the pan. Once they are coated with the thickened apple cider, they are done.
  • Plate a pork chop and top with the onions and apples. Enjoy!

Delicious pork chops the entire family will love. You can use corn flake crumbs instead of bread crumbs, and season the crumbs to your personal taste. I sometimes add a teaspoon of garlic powder. The longer cooking time ensures moist chops.

6 (1 inch thick) pork chops
2 eggs, lightly beaten
1 ½ cups bread crumbs
2 tablespoons vegetable oil
3 cups tomato juice
1 cup unpacked brown sugar
2 tablespoons vinegar
¼ teaspoon ground cloves, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dip pork chops into eggs then into the bread crumbs, coating evenly. Heat oil in a large skillet over medium-high heat. Place coated pork chops in the skillet in a single layer, and cook until golden brown on each side, 3 to 4 minutes per side. Cook them in batches if skillet isn't large enough. Place the pork chops in a large baking dish in a single layer.
  • In a saucepan, bring to a boil the tomato juice, brown sugar, vinegar, cloves, salt, and pepper. Reduce heat to medium-low and simmer uncovered for 5 minutes. Pour mixture evenly over the pork chops.
  • Bake in preheated oven uncovered for one hour.

I grew up enjoying this recipe at my Grandma's house. Now I make it for my family! You will love the sauce poured over boiled potatoes...yummm For this recipe you can use either spare ribs or pork chops, But I prefer the ribs!

1 -4 lb spareribs
2 cups water
1/2 cup vinegar
1 teaspoon chili powder
1 cup ketchup
1/2 cup brown sugar

Steps:

  • Cut meat up, and place in a large roasting pan. You can use as much meat as you want to cover the bottom of the roaster.
  • Cook for 45 minutes at 375 degrees. Drain off fat. Salt and pepper the meat.
  • Combine water, ketchup, vinegar, brown sugar and chili powder; pour over the meat and bake for 1 1/2 hours.
  • When cooked thicken with 2 tbsp of cornstarch.(I mix the cornstarch with a little water and then pour it in the sweet and sour mixture, its a little easier).

This is a one-pot dish that my mother-in-law has made for years. It's very simple and extremely tasty. You could substitute chicken for the pork, or use orzo pasta instead of rice. It can also be made ahead and frozen for the days when you don't want to cook.

1 tablespoon olive oil
6 pork chops
salt and pepper to taste
¼ cup pancake syrup
2 ½ cups canned tomato sauce
1 pinch dried tarragon
2 cups instant rice

Steps:

  • Heat the oil in a large iron skillet or Dutch oven over medium-high heat. Season pork chops with a little salt and pepper, then brown them in the hot oil on both sides. Remove the chops to a plate, and add the syrup, tomato sauce, and tarragon. Reduce heat to medium-low, and when the sauce mixture is warm, return the pork chops to the sauce, and simmer for 15 minutes, or until the chops are cooked through.
  • Remove the chops from the sauce, and set aside, keeping warm. Add the rice to the sauce, cover, and cook until rice is tender, about 10 minutes. Serve rice and sauce with pork chops over the top.

Another one of my favorite recipes of my mom's. This is a great one dish meal that is inexpensive and easy to prepare. Most of my mom's cooking is done by taste and not by measurement, so adjustments should be made according to your own preferences. Enjoy!

Number Of Ingredients 8

4 -6 pork chops (we generally use bone-in chops)
1/2-1 cup rice (depending on number of chops & people)
1/4 cup chopped green pepper
1/2 cup chopped onion
1 (16 ounce) can chopped tomatoes (which ever you use I would puree in the food processor) or 1 (16 ounce) can Rotel Tomatoes (which ever you use I would puree in the food processor)
salt (to taste)
pepper (to taste)
water

Steps:

  • Add water to tomatoes to equal approximately double than the amount of rice that you are making.
  • Combine rice, green pepper, onion, tomatoes and water in 13X9 pan.
  • Lay pork chops on top.
  • Salt and pepper to taste.
  • Cover with foil and bake at 350 for about 45 minutes then uncover for 10 to 15 minutes until chops are browned and rice is soft.
