Bake this rich date and walnut loaf at the weekend to enjoy during the week. You can freeze it for another day to serve to last-minute guests, too

125g unsalted butter, cubed and softened, plus extra for the tin
200g soft dates, pitted and roughly chopped
½ tsp bicarbonate of soda
150g light muscovado sugar
2 eggs
1 tsp baking powder
225g self-raising flour
100g walnuts, roughly chopped
1 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 2lb loaf tin (ours was 22 x 10cm and 6cm deep) and line with baking parchment. Put the butter, dates and bicarbonate of soda (which helps break down the dates) in a large bowl and add 150ml boiling water. Give it a stir so the butter melts, and leave to stand for around 20 mins until the dates have softened.
  • Whisk in the sugar until smooth, then gradually whisk in the eggs until combined. Beat in the baking powder, flour and a pinch of sea salt until there are no lumps of flour left and it's smooth. Fold in three-quarters of the walnuts, then pour into the prepared tin. Sprinkle the remaining walnuts over the top.
  • Bake for 20 mins, then turn the oven down to 170C/150C fan/gas 3 and cook for another 45-50 mins until golden brown and a skewer inserted into the centre comes out clean. Leave the cake to cool in the tin for 15 mins, then transfer to a cooling rack to cool completely. Lightly dust with the icing sugar and serve in slices. Freeze whole or cut into slices, then place in an airtight container or divide between reusable freezer bags. Can be frozen for up to three months. Defrost thoroughly overnight.

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease a 900g/2lb loaf tin and line the base and ends with a strip of buttered baking paper.
  • Combine the butter, dates, boiling water and instant coffee granules in a large mixing bowl. Mix to combine and leave for 30 minutes for the butter to melt and the dates to soften.
  • Add the caster and dark muscovado sugar to the date mixture, stirring well to combine and to dissolve any lumpy brown sugar. Add the beaten eggs and mix again to combine.
  • Sift the flour, baking powder and a pinch of salt into the bowl and mix until smooth. Add all but 1 tablespoon of the chopped walnuts and mix again. Scoop the mixture into the prepared tin, spread level and scatter the remaining walnuts and demerara sugar over the top.
  • Bake on the middle shelf of the preheated oven for 30 minutes, then reduce the oven temperature to 170C/150C Fan/Gas 3 and cook for a further 25–30 minutes, or until a wooden skewer inserted into the middle of the cake comes out clean.

  • For the cake: Preheat the oven to 350 degrees. Use a a little butter and then flour to coat three 8-inch round cake pans. Line the bottom of each with parchment paper.
  • Mix the flour, baking powder and walnuts together in a bowl. Combine the butter and granulated sugar in the bowl of a stand mixer or handheld electric mixer; beat on medium speed until pale and fluffy.
  • Use a large spoon to fold in the flour mixture to form a smooth batter. Divide the batter equally among the 3 pans, smoothing the surface of the batter.
  • Bake (middle rack) for 25 to 30 minutes, or until golden brown and springy to the touch. Let cool in the pans for a few minutes, then turn them out onto a wire cooling rack.
  • For the caramelized walnuts: Combine the granulated sugar and water in a small saucepan over low heat. Once the sugar begins to melt, increase the heat to medium; cook, without stirring, to form a a dark golden caramel.
