MEXICAN CORNBREAD
Steps:
- Preheat the oven to 350f degrees and lightly grease a 9x9-inch baking dish or use a springform pan.
- In a large mixing bowl, mix together the cornmeal, flour, cheese, green onions, green bell pepper, and canned green chili peppers until well blended.
- Stir in the eggs, creamed corn, and milk. Spread the batter out into the prepared pan.
- Bake in the oven for 1 hour, or until a toothpick comes out clean. Enjoy!

MARTHA WHITE BASIC CORNBREAD
I got this recipe from a bag of Martha White cornmeal. I wanted to save it here. My daughter uses it for her cornbread dressing.

Steps:
- Heat oven to 450 degrees.
- Grease 9-inch ovenproof skillet or 9-inch square pan; place in oven to heat.
- In large bowl, combine all ingredients; mix well.
- Pour batter into greased pan.
- Bake at 450 degrees for 20 to 25 minutes, or until golden brown.
- Note: 1 1/3 cup milk can be substituted for buttermilk. Also, recipe can be baked in muffin cups or cornsticks pan. Grease 12 muffin cup or cornsticks pan. Fill muffin cups or cornsticks pan 2/3 full. Bake at 450 degrees for 15 to 20 minutes or until golden brown.
- Variation: Sausage Cornbread: Stir 1/2 lb. cooked sausage into prepared batter.

MEXICANA CORNBREAD
As a colon cancer survivor, I am not supposed to eat but 18 oz. of red meat a month so I cook a lot of chicken but save my "meat cheats" for favorite dishes! And this is a favorite dish at my house! Instead of the Velveeta Cheese, you can use sliced American with 6 slices on bottom half and 6 slices on top half! Or use both! Adjust the amount of jalapeno according to how much heat you like! I have grandchildren around a lot and use less heat in cooking because the HOT lovers can always add more to their plates! HAHA!

Steps:
- Brown ground chuck in skillet and drain. Set aside.
- Grease large dutch oven or ovenproof pot. Preheat oven to 350 degrees.
- Mix cornbread package as directed. Add undrained can of cream style corn.
- Pour half of cornbread mix into pot. Layer (in order) half of cheese, onions, ground chuck, green chiles, jalapeno, other half of cheese and pour the rest of the cornbread mix on top sealing to edges of pot.
- Bake for 1 hour and 20 minutes or until knife stuck in comes out clean. Enjoy
