MARMORKUCHEN (GERMAN MARBLE CAKE)
Marble cake has withstood the test of time--is it still one of the most popular birthday cakes in Germany both for children and adults. The combination of vanilla and chocolate is hard to resist. It is often served with whipped cream.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a large Kugelhopf or Bundt® cake pan with butter.
- Beat butter with an electric mixer in a large bowl until light and creamy. Slowly add sugar and vanilla sugar while beating constantly. Add eggs, 1 at a time, beating well after each addition. Beat for 5 minutes until batter is light and fluffy.
- Sift flour and baking powder together in a separate bowl. Gradually mix flour mixture into the cake batter, alternating with the milk. Add rum and lemon zest. Pour 2/3 of the batter into the prepared pan.
- Stir cocoa powder into the remaining batter until fully incorporated. Pour chocolate batter over the vanilla batter in the pan. Gently move a knife up and down through the batter in circular movements to create a marbled effect.
- Bake cake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes. Let cool slightly in the pan. Remove and place on a cooling rack to cool completely.

- Beat the egg whites in a clean bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak. Beat the egg yolks in a separate bowl until smooth; mix in the milk, sugar, salt, flour, and raisins until just moistened. Fold in the egg whites.
- Melt the butter in a large skillet over medium heat. Pour the batter into the skillet and cook until golden brown; flip and cook until set on the other side, about 1 minute. Tear the kaiserschmarren into pieces using two forks and continue cooking until golden brown, about 2 minutes. Sprinkle with confectioners' sugar to garnish and serve with applesauce.

MARMORKUCHEN (KAISER)
Steps:
- Butter, Zucker und Eier schaumig rühren. 2 Päckchen Vanillinzucker und Salz zufügen. Mehl, Speisestärke und Backpulver mischen, über die Masse sieben und verrühren. Die gefettete Gugelhupfform auf das Rost stellen und mit etwa 2/3 des Teiges befüllen. Dem restlichen Teig Kakao, Kaffeepulver und Zimt zufügen. Steps:
- Preheat oven to 350 degrees and grease a bundt cake pan.
- Beat butter and sugar together, then add vanilla, eggs and salt.
- Combine flour and baking powder and stir into butter-sugar-egg mixture, alternating with the milk. Only add enough milk for the batter to drop heavily and ripping apart from a spoon.
- Fill 2/3 of the batter into the greased cake pan.
- Mix the remaining batter with cocoa, sugar and 2 or 3 tablespoons milk, until batter again drops heavily and ripping apart from a spoon.
- Pour cocoa batter on top of the light one and move a fork spiralling through the two layers, so that you get a marbled pattern.
- Bake for about 75 minutes.

- Preheat the oven to 350 degrees. Grease a 8x4 glass loaf pan with butter wrapper or cooking spray. Mix together sugar, vanilla sugar and salt in a small bowl. Whisk together flour and baking powder in separate bowl. Coarsely chop chocolate, melt and set aside to cool down.
- Cream butter with electric mixer on high until soft. Gradually add sugar mixture until smooth. Next, add eggs, one at a time, mixing each egg for 30 seconds on medium setting. Alternate adding the flour mixture with the wet ingredients on medium until batter is smooth.
- Put 1/3 of the batter in the glass loaf pan. Set aside another 1/3 of the batter. Fold melted chocolate, milk and sugar into the remaining batter in the mixing bowl. Pour chocolate batter on top of vanilla batter in pan. Add the remaining vanilla batter on top. Lastly, swirl fork or knife through the batter to create marbling pattern.
- Bake for 45 - 50 minutes or until inserted toothpick comes out clean. Let it cool on a wire rack for 10 minutes before removing it from the pan.
