Enjoy the incredible flavor of this iconic Italian roasted pork without spending a ton of prep time or breaking your budget! Serve as part of a main course meal or make delicious porchetta sandwiches!

3 pound quality boneless pork roast or pork belly (pork bellies are usually at least 5 pounds, in which case double the seasoning quantities)
1 tablespoon salt
4 cloves garlic (, finely minced)
1 1/2 tablespoons finely chopped fresh rosemary
1 tablespoon finely chopped fresh sage
1 teaspoon finely grated lemon zest
1 tablespoon fennel seeds ((roasted in a dry skillet until fragrant, then cooled and crushed))
2 teaspoons black peppercorns ((roasted in a dry skillet until fragrant, then cooled and crushed))
1 teaspoon crushed red pepper flakes ((optional, for some heat))

Steps:

  • *See step-by-step pictures in blog post for visual reference.If using a pork belly: Lay it skin side down and rub the top side down with the seasonings. Then roll up the belly and tie it with twine to secure it. If using a roast: Lay the roast down and make several cuts into it lengthwise leaving the meat attached at the one side. Each slice should be roughly 1/2 inch or so thick. (Think of the pork roast looking like a book with "pages" of sliced meat that are attached at the binding.) Rub down the exterior of the roast with the salt as well as inside each layer.Note: With a well-marbled roast you won't be able to get precise slices and that's okay, just do your best and rub the spices/herbs in the crevices.
  • Fold open the first slice/layer and generously sprinkle with the fennel, pepper, herbs, lemon zest and garlic. Continue to fold over the slices and sprinkle the spices/herbs between each slice. Rub down the exterior of the roast with some of the crushed fennel and pepper.Use kitchen twine to tie the roast.At this point you can cover and chill the roast until you're ready to cook it. It's a great make-ahead dish and can be prepared a day ahead.
  • Preheat the oven to 350 degrees F.Place a tablespoon or two of oil in a large heavy skillet (I prefer cast iron for this) and heat the skillet on the stove. When it's good and hot place the roast in the skillet. It should sizzle and sputter.Use hot pads to carefully lift the hot skillet and place it on the middle rack of the oven. Roast for 1 hour and then, moving quickly to avoid too much heat escaping, turn the roast over and continue to cook for another hour. If the roast seems dry and the pan juices have evaporated add 1/4cup or so of broth or water to the bottom of the skillet.Turn the roast over a final time and cook for another 15-20 minutes or until the internal temperature registers 185 F if using pork belly or 145-150 F if using a pork roast.The roast should be beautifully browned and caramelized.Remove the porchetta from the skillet, place on a platter and tent with foil for a few minutes.Note: If you like you can make a delicious pan sauce from the drippings in the skillet. Place the skillet on the stovetop over medium high heat, pour in a little white wine and whisk to scrape the bits off the bottom of the skillet. Add a little broth or water and simmer for a few minutes.
  • Enjoy the porchetta sliced and served with the pan sauce spooned over it along with mashed potatoes or polenta and vegetables.Or slice the porchetta and serve it on crispy Italian bread for sandwiches. This makes great leftovers!To reheat leftovers: Place the sliced porchetta in a covered microwave-safe dish to retain the moisture and microwave until heated through.

6 garlic cloves
1/4 cup fresh oregano leaves
1/4 cup fresh parsley leaves, more for garnish
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh sage leaves
2 to 4 jarred anchovies
1/2 cup mild giardiniera, drained
1 tablespoon kosher salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
Zest and juice of 1 lemon
1/4 cup extra virgin olive oil
1 (4 to 5 pound) boneless pork shoulder, fat cap intact
Lemon wedges, for garnish

Steps:

  • Preheat the oven to 275 degrees F.
  • To make the rub, put the garlic in the food processor and pulse to get it started. Add the oregano, parsley, thyme, sage, anchovies, and giardiniera, salt and pepper, lemon zest and juice. Pulse together. Add the oil and pulse some more until it forms a paste.
  • To butterfly your pork, place the meat fat cap side down on your cutting board. Using a super sharp knife, slice the pork lengthwise parallel to the counter, starting about an inch above the fat cap. Slice along the meat so that it unrolls as you cut along. Try to cut it so that the meat touching the counter as it unrolls is uniformly thick. Make smaller slashes in any thicker spots.
  • Season the pork with salt and pepper. Rub the herb-anchovy mixture all over the inside of the pork. Roll it up and, using butcher's twine, tie it very tightly about every two inches. Score any visible fat in a crosshatch pattern and season the outside with salt and pepper. Place the pork onto a roasting rack in a roasting pan, fat cap side facing up. Pour 1 cup of water in the bottom of the pan to keep the drippings from burning.
  • Roast until super fork tender and "pullable" and the internal temp registers 200 degrees F, about 4 1/2 to 5 hours. Take out and let rest for at least 20 minutes.
  • Pour the liquid and renderings from the roasting pan into a small saucepan and simmer over medium heat until slightly reduced. Season to taste.
  • Either pull or carve the roast-your preference. I like to carve it so you can see the stuffed interior. Place on a platter, garnish with plenty of parsley, and serve with the pan sauce and fresh lemon wedges.

1 Yellow onion thinly sliced
1 fennel bulb, cored and thinly sliced. 2 Tbsp fronds chopped and reserve
2 lbs. Sweet italian sausage, casing discarded
2Tbsp Fennel seeds
2Tbsp chopped rosemary
6 garlic cloves, thinly sliced
1 Tbsp pepper plus more for seasoning
Kosher salt
Cayenne
2 eggs, beaten
4 medium red onions, or more, peeled and halved
5 LB. Boneless pork shoulder, butterflied. 1 inch thick (roughly a 10 by 14'' rectangle

Steps:

  • 1. In a large skillet, heat 2 tablespoon of oil until simmering. Add yellow onion and sliced fennel and cook over moderate heat, stirring occasionally, until softened (10 minutes). Add the sausage, fennel seeds, rosemary, garlic, and the 1 Tbsp of pepper and cook breaking the meat until the sausage is browned. About 5 minutes or more. Season the mixture with salt and cayenne to taste. Transfer the mixture to a bowl and let cool. Stir in the eggs and fennel fronds. 2. Preheat the oven to 350F place the red onions in a large roasting pan. Arrange the pork on a work surface and season with salt and pepper. spread the sausage mixture over the pork, leaving a 1-inch interval all around. Starting at a long side, roll up the pork and tie it firmly with a rod at 1-inch border all around. Rub with remaining 2 tbsp of oil and place on top of the red onions. Roast the pork for about 2h1/2 bating occasionally with any pan juice until an instant-read thermometer inserted in the center of the meat registers 160F. Transfer to a cutting board and left for 15 minutes. 3. cut 1 inch thick. and serve with onions wines: Italy region's Trentino. try 2011 Foradori Teroldegio or the 2011 Alois Lageder Lagrein.
