MARINATED VEAL KEBABS



Marinated Veal Kebabs image

Simple tasty dish for your next barbecue. Preparation time does not include 2 hours marinating time.

Number Of Ingredients 6

200 g veal, diced into cubes
1/4 cup low sodium soy sauce
1 tablespoon garlic, crushed
2 tablespoons onions, finely diced
1/2 teaspoon ground black pepper
4 skewers, soaked in water

Steps:

  • Mix all ingredients in a bowl and allow to marinate covered in refrigerator for at least 2 hours, stirring occasionally.
  • Place 3 of 4 pieces of meat onto each skewer.
  • Cook on medium barbecue plate for around 10 minutes or until cooked to personal taste, turning every few minutes.

3 tablespoons vegetable oil
1 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/8 teaspoon ground red pepper
3 tablespoons fresh lime juice
2 tablespoons water
2 tablespoons chopped fresh cilantro
2 tablespoons tomato paste
1 1/2 teaspoons honey
2 cloves garlic, minced
Salt, to taste
2 red peppers cut into 1 1/2-inch pieces
2 green peppers cut into 1 1/2-inch pieces
2 yellow peppers cut into 1 1/2-inch pieces
4 yellow onions cut into 1 1/2-inch pieces
2 large yellow squash cut into 1 1/2-inch pieces
2 large zucchini cut into 1 1/2-inch pieces
1 medium eggplant cut into 1 1/2-inch pieces

Steps:

  • In a medium bowl, stir ingredients together until smooth.
  • Preheat grill or broiler.
  • Thread vegetables onto wooden or metal skewers. If you use wooden ones, soak them in water for 1 to 2 hours before using to keep them from burning. You can make single vegetable skewers or use an assortment on each skewer.
  • Lightly brush each skewer with marinade. Broil 4 to 6-inches from heat, 5 minutes per side or until browned or lightly charred and tender. If desired, serve with extra marinade for dipping.

1 cup plain 10% yogurt
2 green onions, chopped
1 tablespoon lime juice
salt and pepper
2 green onions, thinly sliced
1/4 cup fresh cilantro, tightly packed
2 garlic cloves, peeled
1 tablespoon fresh ginger, peeled and chopped
1 teaspoon paprika
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1 1/2 lbs lean ground veal
8 wooden skewers, soaked in water for 30 minutes or 8 metal skewers
8 pita bread
iceberg lettuce, thinly sliced, to taste

Steps:

  • Green Onion Yogurt: In a bowl, combine all the ingredients. Season with salt and pepper. Refrigerate.
  • Curry paste: In a small food processor, finely chop all the ingredients. Set aside.
  • Skewers: Preheat the grill, setting the burners to high. Oil the grate.
  • In a bowl, combine the meat with the curry paste. Season with salt and pepper.
  • For each skewer, shape 1/8 of the meat mixture into an 18-cm (7-inch) long sausage and thread onto a skewer, pressing the meat. Brush with olive oil.
  • Reduce the grill's heat to medium. Grill the skewers for about 3 minutes per side or until meat is thoroughly cooked.
  • For each serving, cover a pita bread with lettuce and top with a kebab. Garnish with green onion yogurt, and top with more lettuce.
  • Tips: You can garnish with diced tomatoes and onions.

This is a tasty, easy to make marinade that is great for any grilled meat. It makes enough for about two pounds of uncooked meat. Hunters - try this on your deer.

1 cup vegetable oil
¾ cup soy sauce
½ cup lemon juice
¼ cup Worcestershire sauce
¼ cup prepared mustard
1 ½ teaspoons coarsely cracked black pepper
2 cloves garlic, minced
1 teaspoon meat tenderizer

Steps:

  • In a large resealable plastic bag, combine the oil, soy sauce, lemon juice, Worcestershire sauce, mustard, ground black pepper, garlic, and meat tenderizer. Mix well, and add your favorite meat. Seal the bag, and marinate in the refrigerator for 4 to 24 hours.
