Easy Garlic Ginger Glazed Sticky Pork image

Tender strips of pork glazed with a sticky, sweet, spicy, garlicky, gingery sauce that is as easy as stirring a few things together in a pan, this fast, soul-satisfying meal is easy enough for rookie cooks, but delicious enough to keep sophisticated cooks and eaters happy.

1 1/2 pounds boneless (center cut pork loin cut into 1/4-inch thick slabs, then 1/4-inch thick strips, about 3 inches long)
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1 tablespoon canola or peanut oil (plus extra if necessary)
5 cloves garlic (peeled and minced or pressed through a garlic press)
2- inch knob of fresh ginger (grated)
1/2 cup mild honey
2 tablespoons to 1/4 cup sriracha or chili garlic sauce
1 tablespoon rice wine vinegar or white wine vinegar

Steps:

  • In a liquid measuring cup or a small mixing bowl, whisk together the mild honey, sriracha, and rice wine vinegar. Set aside.
  • Pour the oil into a heavy-bottomed skillet over medium high heat and swirl to coat. Let it heat until it is shimmering. While the oil heats, sprinkle the pork strips with kosher salt and black pepper then toss with your hands to distribute it evenly. Carefully add the pork to the pan, working in batches to avoid overcrowding the pan. Let the first side brown, flip the pieces with tongs or a spatula, and brown the second side. Transfer the pork to a plate.
  • Return the pan to the heat and add in the garlic and ginger. Stir until fragrant, about 30 seconds.
  • Raise the heat to high and pour in the sauce mixture and bring to a boil, stirring frequently. When the sauce is very bubbly and thickened like warm honey, toss the pork back in and toss constantly to coat everything and reduce the sauce to a thick, sticky glaze on the pork. This can be served immediately over rice, noodles, or as finger food, or can be allowed to cool and be eaten cold.

This was on a hand written recipe card inside a cookbook that I bought at the library booksale! I hope it's good since I haven't tried it yet. Plan ahead because of marination time!

4 pork chops, 1-1 1/2 " thick
1 teaspoon ginger
2 garlic cloves
3 tablespoons soy sauce
1/2 cup honey
2 tablespoons butter, melted

Steps:

  • Prick pork chops with fork and rub with the ginger and garlic.
  • Melt the butter and combine with the soy sauce and honey.
  • Pour mixture over the chops and marinate overnight.
  • When ready to grill, remove chops from marinade and discard the leftover marinade.
  • Bring chops to room temperature and then grill 8-10 minutes per side; turning several times.

I got this recipe out of Martha Stewart Living magazine, and have made it a number of times. The pork comes out so juicy and tender, no matter what kind of chops I use. To be truthful, I only use the marinade, and I cook the chops on the BBQ. I normally use boneless loin chops, about 1" thick, and marinate them for about an hour. I use only half the sugar because I don't like a sweet meat, and it helps keep the chops from burning on the grill. We love this served with rice.

1/4 cup low sodium soy sauce
2 tablespoons low sodium soy sauce
1/4 cup vegetable oil
3 tablespoons fresh ginger, grated
3 tablespoons light brown sugar
1 scallion, finely chopped
fresh ground pepper
4 pork chops (8 ounces each, 3/4 inch thick)

Steps:

  • Whisk together soy sauce, 3 tablespoons oil, ginger, sugar, chopped scallion, and 1/2 teaspoon pepper.
  • Arrange pork chops in 9X13 inch glass dish. Reserve 3 tablespoons marinade and pour rest over chops. Marinate, covered with plastic wrap, flipping chops halfway through, for 45 minutes.
  • Heat remaining tablespoons of oil in large sklillet over medium high heat. Remove pork chops from the marinade and sear for 3 1/2 to 4 minutes. Reduce heat to medium. Flip chops, and sear until just cooked through, 3-4 minutes more. Transfer chops to a board or platter and let rest for 5 minutes.
  • Add reserved marinade to skillet. Simmer over medium heat until thickened, about 30 seconds. Spoon over chops, and garnish with chopped scallions.
  • The preparation time includes the marinating time.

Seasoning pork chops with a paste of fresh ginger, chile, cumin and tamarind gives the brawny meat a deeply spicy, sour flavor that gets more intense the longer it marinates. Then the excess marinade is mixed into the drippings to make a heady sauce. If you can't find tamarind concentrate (also sometimes called tamarind extract), lime juice will supply the sour notes, though without the same fruity complexity.

1 tablespoon tamarind concentrate (or extract), or use lime juice
1 tablespoon sambal oelek or other chile paste
2 teaspoons grated fresh ginger
2 teaspoons kosher salt, more as needed

1 teaspoon fish sauce
1 teaspoon ground turmeric
2 bone-in pork chops, 1 1/2 inches thick (2 pounds total)
2 tablespoons coconut oil, grapeseed oil or safflower oil

Steps:

  • In a large bowl, combine garlic, tamarind, sambal oelek, ginger, salt, cumin, fish sauce and turmeric. Rub mixture evenly over pork, and let marinate for at least 1 hour and up to overnight.
  • Heat oven to 400 degrees. Heat oil in a cast-iron skillet over medium-high heat. Scrape the marinade off the pork, reserving it (there will be a tablespoon or two), then place chops in pan and sear on one side until well browned, 2 to 3 minutes. Use tongs to hold pork chops vertically to sear the fat on the edges, another 2 to 3 minutes.
  • Flip pork so browned side is on top and add reserved marinade to pan, stirring it into the drippings. Transfer pan to oven and cook to desired doneness, about 8 minutes for lightly pink on the inside (135 degrees). Transfer chops to a plate or cutting board and let rest for 5 minutes. Slice the meat off the bone and serve slices coated with pan drippings, scallions and lime wedges.

1 tablespoon ketchup
1/4 teaspoon onion powder
1/4 teaspoon cayenne
1/4 teaspoon cinnamon
Garnish: fresh flat-leafed parsley sprigs

Steps:

  • Pat pork dry and arrange in a shallow dish. In a bowl whisk together all remaining ingredients and pour marinade over pork. Turn pork to coat well. Chill pork, covered, turning it once or twice, at least 8 hours and up to 1 day.
  • Prepare grill.
  • Remove pork from marinade, reserving marinade, and arrange on a lightly oiled rack set 5 to 6 inches over glowing coals. Grill pork, basting with reserved marinade and turning it every 3 minutes, 10 minutes total. Discard marinade. Continue to cook pork, turning it every 3 minutes, until a thermometer diagonally inserted 2 inches into center of tenderloin registers 155°F., about 10 minutes more. Let pork stand 5 minutes before thinly slicing.
  • Serve pork garnished with parsley sprigs.
