CHINESE CHICKEN WINGS

My late mother's recipe for chicken wings for potlucks. Now I am asked to bring this dish to parties.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.

Chicken wings may seem right up there with burgers and hot dogs for as American as it gets, but this Chinese recipe gives Buffalo wings a run for their money. A marinade of soy sauce and five-spice is the secret to deep, savory flavor in these deep-fried delights.

Number Of Ingredients 11

10 chicken wings
1 teaspoon five-spice powder
1/2 teaspoon MSG (optional)
1 teaspoon salt
1/2 teaspoon sugar
1 teaspoon rice wine
1 teaspoon soy sauce
1 egg white, slightly beaten
1/3 cup cornstarch
1 teaspoon baking powder
peanut oil for deep-frying

Steps:

  • Remove the wing tips and separate the wings into flappers and drummies. Combine the five-spice powder, MSG, salt, sugar, rice wine, and soy sauce in a shallow bowl. Add the wings and toss to coat in the marinade. Cover the bowl and place the wings in the refrigerator for 1 hour. Heat the oil in a deep fryer to 360 degrees F. Place the egg white in a shallow bowl. Combine the cornstarch and baking powder in another shallow bowl. Coat the wings in the egg white, letting any excess drip off. Then dredge the wings in the cornstarch mixture and shake off any excess. Add the wings to the oil and cook for 3 minutes. Remove the wings from the oil with a slotted spoon and let drain on a wire rack over foil or a baking pan to catch any oil drips. Let the wings cool. Return the oil to 360 degrees F. Fry the wings a second time until crisp. Remove from the deep fryer with a slotted spoon and let drain. Serve hot.

MARINATED ORIENTAL CHICKEN WINGS

To make this recipe gluten free use Tamari instead of Soy Sauce. These wings are very convenient to keep handy in the freezer. I freeze them in a single layer in the bag on a cookie sheet. They don't have to be defrosted before baking. I took these wings to a pot luck lunch last week and they were taken up very quickly.

3 pound(s) chicken wings
1 cup(s) soy or tamari sauce
1/2 cup(s) white sugar
1/4 teaspoon(s) garlic powder
1/2 teaspoon(s) salt
1/4 teaspoon(s) ground ginger
a few dash(es) hot pepper sauce (optional)

Steps:

  • Cut wing tips from wings and discard or save for stock. Divide wings at joint into 2 pieces. Trim any flaps of skin. Put in large zippered plastic bag.
  • Mix remaining ingredients together and pour over wings in the bag.
  • Put marinating wings in the fridge for a couple of hours or put in freezer in a single layer. Wings can be frozen for several weeks until you need them. When you are ready to bake them put them in a single layer on a baking pan. (I like to bake them on a rack in the baking pan)
  • Put marinade in a saucepan and boil until reduced to a thick sauce.
  • Bake wings uncovered at 325 degrees F. (180 C) for 1 1/2 to 2 hours depending on size of wings until tender. Turn chicken pieces after 3/4 hour. Baste wings with reduced marinade several times.
  • When wings are tender remove with tongs to serving plate. Makes 30 pieces.

SIMPLE MARINATED CHICKEN WINGS

These are my husband's favorite kind of wings. Easy to make and delicious. They taste even better if you double the sauce and marinate for 24 hours.

5 tablespoons soy sauce
¼ cup brown sugar
2 tablespoons dry sherry
1 teaspoon prepared yellow mustard
½ teaspoon garlic powder
24 chicken wings

Steps:

  • Whisk together the soy sauce, brown sugar, sherry, mustard, and garlic powder in a bowl. Arrange the chicken wings in a 9x13-inch baking dish, and pour marinade over the chicken. Cover the baking dish with plastic wrap, and marinate in the refrigerator for at least 2 hours.
  • Preheat an oven to 375 degrees F (190 degrees C). Remove the plastic wrap from the baking dish.
  • Bake in the preheated oven until the chicken wings are no longer pink in the center, about 1 hour, basting occasionally.

1 cup water
1 cup soy sauce
1 cup sugar
1/2 cup pineapple juice (I use 1 small can, about 3/4 c.)
1/4 cup vegetable oil
1 teaspoon garlic powder

3 -4 lbs cleaned/drained chicken wings

1 tablespoon salt
1 tablespoon freshly cracked black pepper
2 tablespoons soy sauce
1/4 cup honey
2 teaspoons lime zest
3 tablespoons lime juice, from 1 lime
1/4 cup orange juice, from 1/2 orange
1 tablespoon freshly grated ginger
1 teaspoon chili garlic paste
1/2 teaspoon sesame oil
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon granulated garlic
1 tablespoon oyster sauce

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Asian sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine.

Anyway, this sounds great and I don't want to lose it. It was submitted by the Honorable Ken Curry. This could be an appetizer or main course. 1 hour marination included in preparation time.

3 tablespoons white wine
1 tablespoon fresh gingerroot, grated
3 tablespoons hoisin sauce
3 tablespoons soy sauce

  • Cut the wings into 3 sections and discard tips.
  • In a bowl, combine all the ingredients, except the wings.
  • Add the wings and toss to coat.
  • Refrigerate for 1 hours, tossing every 15 minutes.

1/2 cup honey

3 tablespoons oyster sauce
3 drops sesame oil

Steps:

  • Cut tips off the chicken wings and discard.
  • Separate the drumette from the wingette and put aside.
  • If you prefer you can just leave wings as they are.
  • In a large bowl mix together all the other ingredients until smooth making sure all the honey is mixed in well.
  • Add wings to the marinade and place in the fridge for about 20 minutes before cooking.
  • Wings don't need to be marinated for very long.
  • Cook on a BBQ or place in a moderate oven, about 180 degrees celcius until caramalized and golden.
  • About 40 minutes.
