For a go-to standby using canned tomatoes, get Ina Garten's easy, homemade Marinara Sauce recipe from Barefoot Contessa on Food Network.

Number Of Ingredients 8

1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.

3 tablespoons extra virgin olive oil
3 cloves garlic, sliced
1 (16 ounce) can crushed tomatoes
½ cup red wine
½ cup water
1 teaspoon salt
1 teaspoon white sugar
6 leaves fresh basil leaves, torn

Steps:

  • Heat oil in a large non-stick skillet over low heat and saute garlic for about 2 minutes; be careful not to burn. Just as the garlic begins to turn brown, remove pan from heat. Allow pan to cool, and add tomatoes, wine, water, salt and sugar. Cook over medium-high heat and bring to a boil. Reduce heat to low and simmer, covered, about 20 minutes. Remove from heat and stir in basil.

2 large garlic cloves, lightly smashed
1/4 cup olive oil
2 lbs very ripe plum tomatoes, peeled, seeded, and chopped or 1 (28 ounce) can italian peeled tomatoes, drained and chopped
salt
8 -10 fresh basil leaves, torn into pieces

Steps:

  • Heat olive oil over medium heat in large skillet and cook the garlic, pressing it occasionally with the back of a spoon, until golden, about 4 minutes.
  • Add the tomatoes and salt to taste. Simmer, stirring often, until the sauce thickens, about 15 to 20 minutes, depending on the tomatoes. Stir in the basil leaves.
  • Serve over hot cooked spaghetti or other favorite pasta.

2 (14.5 ounce) cans stewed tomatoes
1 (6 ounce) can tomato paste
4 tablespoons chopped fresh parsley
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
¼ teaspoon ground black pepper
6 tablespoons olive oil
⅓ cup finely diced onion
½ cup white wine

Steps:

  • In a food processor place Italian tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.
  • In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.
  • Simmer for 30 minutes, stirring occasionally.

We built this recipe from a lot of trial and error and a little experimentation with the wine selection. It has a sweet flavor with just a little zing to keep things interesting. Great for all types of italian dishes. We even used it for Italian sausage bombers.

1 Spanish onion, chopped
¼ green bell pepper, chopped
4 cloves garlic, finely chopped
2 tablespoons brown sugar
2 teaspoons Italian seasoning

½ teaspoon ground black pepper
¼ teaspoon red pepper flakes

Add brown sugar, Italian seasoning, salt, oregano, basil, black pepper, and red pepper flakes; cook and stir until brown sugar dissolves and seasoning is fragrant, 1 to 2 minutes.
