This 5-Ingredient Ham and Noodle Casserole is an easy one dish meal that takes advantage of your delicious leftovers!

Number Of Ingredients 6

1 (12 ounce) package broad egg noodles
1 tablespoon mustard ((yellow mustard, honey mustard, or Dijon mustard will all work well, so pick your favorite))
2-4 cups diced cooked ham ((or any leftover meat))
1 (10.5 ounce) can condensed cream of mushroom soup (not diluted)
1 cup grated cheddar cheese
Optional addition: 4 cups frozen French-style green beans or other veggies of your choice

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook egg noodles just until al dente, according to package instructions. Drain.
  • While the noodles are cooking, place mustard, ham, condensed soup, and optional frozen green beans in a large bowl.
  • Pour the drained, cooked, hot noodles over the rest of the ingredients in the bowl and stir to combine.
  • Transfer noodle mixture to prepared baking dish. Top with grated cheese.
  • Cover with foil and bake for 20 minutes.
  • Remove foil, return to the oven (uncovered) for 20-25 more minutes, or until cheese is melted and casserole is heated through.

This recipe of my mother's was one of her go-to meals for a weeknight supper and is one of the first things I learned to cook. The recipe itself is of Austrian origin. When I was growing up we called it by its Bohemian name: Sunkou Flicky. This is pronounced, as near as I remember: shoon'kuh fleeech'key. This is a good way to use up bits and pieces of leftover ham; use a well-flavored ham for best results. When I was a child we had to contend with ham to which water had been added, making a very bland flavored casserole. For additional flavor I remember making up an envelope of cream of leek soup according to package directions. I would substitute one cup of the soup for the milk called for in the recipe. The rest of the soup may be eaten another day. The casserole may be topped with grated Cheddar cheese, if desired. It does need a topping of some type--if not cheese perhaps buttered cracker crumbs--to protect the noodles on top from drying and becoming hard to the bite.

2 cups ground ham (more or less)
1 cup milk
3 eggs
salt

Steps:

  • Cook the noodles according to package directions; drain. Preheat the oven to 350 degrees F. Butter a 2-quart round casserole dish.
  • Grind up leftover ham using the medium or coarse blade of a hand grinder or your food processor.
  • Blend together the milk, eggs, and salt. Be cautious with the salt as the ham is salty.
  • Combine the cooked noodles, ham, and the egg-milk mixture. Place in prepared casserole. Bake in preheated oven for 30-40 minutes or until custard is set.

1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2-1/2 cups milk
3 to 4 teaspoons prepared horseradish
1 tablespoon prepared mustard
6 cups cooked wide egg noodles
2 cups cubed fully cooked ham
1 cup cubed cheddar cheese
1/2 cup soft bread crumbs, toasted

Steps:

  • Preheat oven to 350°. In a large saucepan over medium heat, melt butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil. Cook and stir 2 minutes or until thickened and bubbly. Add horseradish and mustard; mix well. Stir in noodles, ham and cheese. , Pour into a greased 2-1/2-qt. baking dish. Cover and bake 20 minutes. Uncover; sprinkle with bread crumbs. Bake 10-15 minutes longer or until bubbly and heated through.

This is one of my favorite ways to use leftover ham.

6 cups water
4 cups uncooked egg noodles
1 onion, chopped
½ cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups diced cooked ham
2 cups shredded Swiss cheese
salt and pepper to taste
¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
  • Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
  • Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
  • Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.
