MARGARITA JELLO SHOTS
Steps:
- Gather the ingredients.
- In a small bowl, mix the tequila, triple sec, lime juice, and cold water. Chill in the refrigerator for about 10 minutes.
- In a separate bowl, stir the boiling water and lime gelatin together until the gelatin is completely dissolved.
- If using, whisk the unflavored gelatin into the chilled tequila mix. Let sit for 1 minute.
- Combine the warm lime gelatin mix and the tequila mix, and stir well.
- Pour the liquid into shot glasses, molds, or a shallow baking pan for a sheet of gelatin to cut up once set.
- Refrigerate for at least 2 hours (overnight is best), until the liquid sets completely. Serve cold and enjoy.

I have altered it to suit my tastes and used many other shots from his site, having since been named the "Jello Shot Master" by my friends.

Steps:
- Mix boiling water and Jello. Stir for a minute until dissolved. Add rest of ingredients, stir.
- Pour into small paper dixie cups, cool on one or two cookies sheets stacked in the refrigerator.
- Unless you use ice and water for the cold water, allow 5 or more hours for Jello to cool and set.
- For every party I throw, I'll make this recipe and one more from Hazel's site to satisfy the partygoers.
MARGARITA JELLY SHOTS

- Combine the sugar, lime juice and 2/3 cup regular water in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the sugar is dissolved, about 2 minutes. Add the seltzer water to the syrup mixture, sprinkle the gelatin on top and leave it to bloom for 5 minutes.
- Microwave the bloomed gelatin mixture until dissolved, about 30 seconds. Sir in the tequila and orange liqueur. Divide the mixture among twelve 2-ounce glasses. Refrigerate until set, at least 3 hours.
- Before serving, garnish each shot with a small pinch of flaky sea salt and a lime wedge.

For grown-ups only. This recipe is my closest attempt at duplicating the awesome flavor of a cold margarita. It's sweet, tart, salty, and packs a punch. Garnish each serving with a lime wedge. You seriously only need one of these.

MARGARITA MIX JELLY
This is a tangy, slightly salty, not-too-sweet jelly that pairs perfectly with pretzel rolls (this is an amazing recipe - http://www.food.com/recipe/bavarian-pretzel-rolls-427399) Getting this to set properly without a lot of sugar was a pain but I finally got the amounts right. Low-sugar pectin worked in place of the powdered and liquid pectin and gelatin but the taste and texture was...odd. Processing cut down on the chunkiness of it but the jelly still tasted off to me so I'm going with this one. Works great, tastes great, perfect for gifts! Makes a small batch. I get about 5 half cup jars (with a little extra to eat right away!)

- Pour margarita mix into medium saucepan and sprinkle with gelatin. Let sit until gelatin dissolves.
- Add powdered pectin and heat to boiling, stirring constantly.
- Stir in sugar and bring to a rolling boil for two minutes.
- Remove from heat and stir in liquid pectin, lime juice and sea salt.
- Pour into hot, sterilized jars and process in a boiling water bath for 15 minutes.

JELL-O LAYERED MARGARITA BITES
Margarita Jell-O is not an easy find, so we improvised by using two boxes of lime Jell-o and 1 cup of boiling margarita mix in place of 1/2 the boiling water called for in the recipe. We loved the way it turned out - the perfect light bite for your next adult party. Be sure to garnish with salt... It really makes the dish!

- 1. STIR boiling water into dry gelatin mixes with wire whisk in a large bowl at least 2 mins. Stir in tequila and 2 tbs of lime juice. Add whipped topping and 1 tsp of the lime peel; stir until whipped topping is completely melted and well blended.
- 2. Pour into an 8 inch square pan.
- 3. Refrigerate 3 hours or until firm. Cut into 36 pieces to serve. Garnish with additional lime peel and coarse salt, if desired. For non-alcoholic substitute cold water for tequila.

- Dissolve the gelatin in the boiling water, stirring to make sure all is dissolved.
- Combine the thawed strawberries (with juice) and margarita mix in a blender with 1/2 cup tequila or water. Blend until smooth.
- Stir strawberry mixture into the gelatin mixture. The recipe suggests pouring 3/4 cup mixture into margarita glasses to set, but you can also use a 8 x 12-inch pan. Refrigerate 4 hours or overnight, until set. The 8 x 12-inch pan needs to set overnight.
- To serve: garnish with whipped cream, a fresh strawberry and/or grated lime zest.
