MAPLE OAT NUT BANANA BREAD
Maple Oat Nut Banana Bread might make plain old banana bread obsolete. This loaf cake has got tons of sweet, maple-y, cinnamon-y flavor and texture in every bite!

Steps:
- Preheat your oven to 350F Grease a 9x5 loaf pan and line with a sling of parchment paper with long ends. This will help you lift the bread out for neater slicing.
- Cream the butter and sugars together until light and fluffy, scraping down the sides of the bowl a few times. I do this in a stand mixer, but you can use electric beaters or a good old fashioned wooden spoon.
- Beat in the vanilla, maple syrup, and eggs, one at a time, scraping down the bowl as needed. Blend in the mashed bananas, oats, baking soda, and salt.
- Fold in the flour and then the walnuts. Turn the batter into your prepared pan and spread out evenly. Bake for 30 minutes, then turn down the oven to 325F and bake for another 30-35 minutes, or until a toothpick inserted near the center comes out without wet batter on it. You may need to tent the bread with foil for the last part of baking so it doesn't get too brown on top. Cool on a rack.
- To make the glaze, put the butter and maple syrup in a saucepan and bring to a boil. Boil for 2 minutes, then take off the stove and add the maple extract (if using) and sifted sugar. Stir or whisk well until there are no lumps. Let the glaze cool for about 15 minutes, stirring it occasionally to keep it smooth. Pour or spread over the cooled bread, and top with a sprinkle of oats and walnuts. Let the frosting harden before you slice the bread.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9 inch loaf pan.
- In a large bowl, mix the melted butter and maple syrup. Beat in the egg and bananas, leaving a few small chunks. Stir in the maple extract and milk. In a separate bowl, mix the flour, baking soda, and baking powder, and stir into the banana mixture just until moistened. Transfer to the prepared loaf pan. Mix the nuts and sugar, and sprinkle evenly over the batter.
- Bake 50 minutes in the preheated oven, or until a knife inserted in the center of the loaf comes out clean.

- In a medium bowl, combine flour, oatmeal and baking soda.
- In a separate bowl, cream together the butter and sugars until light and fluffy. Beat in the eggs, banana and maple syrup.
- Slowly mix in the flour mixture to the wet ingredients until fully incorporated.
- Pour the batter into a lightly sprayed loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean. Let cool on wire rack.

- Grease a tube pan and sprinkle oats on the bottom.
- Mix flour, 1 cup oats and baking soda.
- Cream shortening and sugar in a mixing bowl until light and fluffy.
- Add the80 bananas, eggs and walnuts and mix well.
- Add the flour mixture.
- Beat at low speed until mixed.
- Pour into prepared pan and bake at 350º for 80 minutes or until a toothpick inserted in center comes out clean ~ begin checking for doneness at 1 hour.
- Cool in pan for 5 minutes.
- Invert on wire rack to cool completely.
- Drizzle with maple glaze.
- Maple Glaze: Combine confectioner's sugar, lemon juice and maple extract in a medium bowl until well mixed. Add enough water to form a smooth glaze consistency, stirring constantly.
