My mom tried something similar to this in a restaurant and thoroughly raved about it, so I tried to re-create it for Mother's Day. She loved this version so much that she won't order Maple Curry Chicken in restaurants anymore! Serve over your favorite pasta.

2 tablespoons butter
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
½ cup yellow bell pepper, diced
1 teaspoon white sugar
¼ cup maple syrup
2 tablespoons curry paste
1 ¼ cups chicken broth
½ cup heavy cream
4 skinless, boneless chicken breast halves - cut into bite-size pieces
3 tablespoons cream cheese

Steps:

  • Place butter in a large skillet. Pour in olive oil and heat over medium-high heat. Add the onion, garlic, and yellow pepper to the skillet. Cook and stir until the onion and peppers are soft.
  • Sprinkle sugar over onion mixture and cook one minute. Pour in maple syrup and cook another minute. Add curry paste and cook another minute. Pour in chicken broth and cream. Bring to a slow boil, then simmer on medium-low heat for 15 minutes.
  • Meanwhile, in a separate pan, cook the chicken over medium heat until cooked through on all sides, about 10 minutes. Stir cooked chicken into the sauce. Simmer five minutes, then add cream cheese. Simmer another 5 minutes.

2 tablespoons olive oil
2 tablespoons butter
1 large onion, chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
2 cups cubed cooked chicken breast meat
3 cloves garlic
1 teaspoon sugar
¼ cup pure maple syrup
1 cup heavy cream
2 ½ tablespoons hot curry paste

Steps:

  • Heat butter and oil in a large skillet over medium heat. Add onion and peppers, and cook until onions are soft and translucent. Stir in cooked chicken and garlic, and sprinkle with sugar. Cook, stirring for about 3 minutes, then stir in maple syrup, and cook for about 5 more minutes, until caramelized.
  • Stir in curry paste and heavy cream, and reduce heat to low. Simmer uncovered for 10 to 15 minutes, or until the sauce reaches your desired thickness.

My sister made this for me one time and I have made it for others and the recipe has been passed on so many times. My sister ate this at a friend's house and tried to re-create it without the recipe. She tried so many times and discovered that making it great had to do with the cream! Serve with basmati rice with saffron.

2 tablespoons olive oil, or as needed, divided
3 skinless, boneless chicken breast halves, cut into chunks
1 onion, diced
1 red bell pepper, chopped
2 cloves garlic, minced
2 carrots, chopped
1 cup heavy whipping cream
2 tablespoons curry paste
¼ cup maple syrup

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir chicken until no longer pink in the center, about 10 minutes. Remove skillet from heat.
  • Heat 1 tablespoon olive oil in a separate skillet over medium heat; cook and stir onion, red bell pepper, and garlic until onion is translucent, 5 to 10 minutes. Add carrots and cook over low heat until carrots are slightly tender, about 5 minutes more.
  • Mix chicken, cream, and curry paste into onion mixture and simmer until heated through, about 5 minutes. Add maple syrup and simmer until thickened, about 5 minutes.

This is a wonderful gluten-free pasta sauce that we enjoy. It is full of flavor!

Number Of Ingredients 12

2 cups penne pasta, or to taste
2 tablespoons olive oil
2 tablespoons butter
½ cup chopped onion
½ cup sliced fresh mushrooms
½ cup chopped bell pepper
½ cup pure maple syrup
3 cloves garlic, minced
1 teaspoon white sugar
6 ounces cooked skinless, boneless chicken breast, cut into bite-size pieces
1 ½ cups heavy whipping cream
2 ½ tablespoons curry powder

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat oil and butter together in a deep skillet over medium-high heat. Saute onion, mushrooms, and bell pepper in the hot oil-butter mixture until softened, 5 to 10 minutes.
  • Mix maple syrup, garlic, and sugar into onion mixture, reduce heat to medium-low, and simmer until mixture is reduced and almost caramelized, about 5 minutes. Add chicken, cream, and curry powder to maple syrup mixture and cook until heated through and thickened, 7 to 10 minutes. Serve sauce over penne pasta.

  • Cook your pasta according to the directions on the package for al dente - make sure your pasta water is salted. Reserve 1 cup of pasta water before draining pasta. Set both aside.
  • Slice your chicken into very thin bite sized pieces. Set aside *For an idea of size, look at the image in the post, you want the chicken thin.
  • In a large pan, heat up the olive oil and butter over medium heat until melted and slightly frothy. Add in the onions and cook until translucent, about 5 minutes. Next, add in the mushrooms and garlic and saute until the mushrooms are wilted, another 3-5 minutes.
  • To the pan, add in the curry paste and mix well until it's slightly melted and incorporated with the vegetables. Once combined, add in the cream, maple syrup, 1/2 cup of reserved pasta water and thinly sliced chicken breasts.
